Roasted cauliflower is the perfect healthy side dish for so many dinner meals. It’s simple to throw into the oven and comes out golden brown with a little crunch. YUM!

This is another tasty way to enjoy cauliflower as a side! Who knew it could be so versatile?! Mashed Cauliflower, Cauliflower Rice, and even Buffalo Cauliflower are some of the other ways we enjoy it.

Easy, Healthy + Tasty

One of my favorite vegetable side dishes is roasted broccoli – it’s so good!

Since broccoli and cauliflower are so similar, I thought I’d try roasting cauliflower. We pretty much adapted our broccoli recipe for cauliflower and we were SO happy with how it turned out. The crispy crunch and the golden brown color that they get from the oven is so good. Not only is it delicious, but it’s healthy too!

Cauliflower is very high in fiber which is great for overall gut health. It’s also very low in calories. One serving of cauliflower is only 25 calories. It’s also great for reducing inflammation because it has lots of antioxidants in it.

Cauliflower is often used to replace many other carbs in things like cauliflower rice, cauliflower pizza crust, and mashed cauliflower!

How to Roast Cauliflower

PREP. To start this recipe for oven roasted cauliflower, thoroughly wash and dry your cauliflower. Then cut it into medium florets. Set them aside while your preheat the oven to 425ยฐF. Grab a baking sheet and line it with parchment paper, foil, or spray with a little bit of cooking spray.

OIL MIXTURE. Combine the olive oil and garlic in a small bowl and put it into the microwave for 30 seconds. Take it out and whisk in the lemon juice. Then add the salt and pepper and mix.

COAT. Toss the cauliflower florets with the oil mixture and make sure it’s evenly coated. Spread the cauliflower onto the prepared baking sheet. Sprinkle the Parmesan cheese on top before putting it into the oven.

BAKE. Bake the cauliflower for 18 – 22 minutes. Make sure to toss the cauliflower once during baking time. Take out of the oven and ENJOY warm!

cauliflower Tips + Variations

I love the added taste and crunchiness that the Parmesan cheese created in this recipe, but you can easily change up the seasonings to your liking. Some delicious ingredients you could play around with include: sea salt, cracked pepper, lemon pepper, or add heat with paprika, cayenne pepper or red chili flakes.

You can roast cauliflower at a different temperature if you need toโ€”just adjust the cooking time. This recipe calls for 18-22 minutes at 425 degrees.

  • 350 degrees = 35-45 minutes
  • 375 degrees = 25-35 minutes
  • 400 degrees = 20-30 minutes
  • 450 degrees = 10-15 minutes

Roasted cauliflower is great for making ahead and pulling out for a quick healthy snack or lunch side dish! Store cooked roasted cauliflower in airtight containers in the fridge. It should last for up to 5 days. Just reheat for a little bit in the microwave or broil them to get a bit of a crunch.

Ingredients 

  • 1/4 cup olive oil
  • 2 tsp minced garlic
  • 1 tbsp lemon juice
  • 1 tsp garlic salt (with parsley flakes)
  • 3/4 tsp pepper
  • 1 head cauliflower cut into medium florets
  • 1/2 cup Parmesan Cheese grated

Instructions 

  • Preheat the oven to 425ยฐF
  • Line Baking sheet with foil or grease baking sheet.
  • Combine olive oil and garlic in a small bowl and microwave for 30 seconds
  • Whisk in lemon juice, salt and pepper.
  • Toss cauliflower with oil mixture and spread onto baking sheet. Sprinkle with cheese.
  • Bake for 18 – 22 minutes tossing caulifloer once during baking time. ENJOY warm!
