Creamy, savory hamburger stroganoff is a perfect weeknight dinner. It is full of flavor and comes together quickly.

This delish dish can even be made ahead of time in a crockpot for a stress-free meal time that is both hearty and nutritious. Try pairing this dish with a Caesar Salad or Roasted Green Beans to round it out. Of course you don’t want to forget dessert! How about the BEST Homemade Blondies?!

Stroganoff Made with Ground Beef

Stroganoff, to me, is my childhood. I remember many a night when the smell of browning beef would waft through the house. We had that tasty gravy on pasta or rice—either way it was delicious.

While my mom typically used cans of cream of mushroom, I took it up a notch with a homemade gravy. Using broth and sour cream I achieved this “from scratch” sauce that is the perfect cream to my pasta.

You will love how easy this hamburger stroganoff is to whip up, and how comforting! It’s definitely a go-to dinner recipe the whole family loves!

How to Make Hamburger Stroganoff

You can either make hamburger stroganoff on the stovetop, or in the slow cooker. To make it on the stovetop…

NOODLES. Using a medium pot cook egg noodles according to package directions. Drain.

BEEF. While noodles are cooking add the ground beef to a large skillet. Break up and cook it until it is no longer pink. Once the meat has browned, sprinkle the flour over the meat, stir and cook for 1 minute. Add the garlic salt and beef broth. Mix and cook until hot.

SAUCE. Add the sour cream to the skillet stir until smooth. Cook the mixture for 2-3 minutes or until hot throughout. Season with garlic salt and pepper.

COMBINE. Put the cooked egg noodles in a serving bowl and pour the beef mixture over the top. Enjoy!

Slow Cooker

BROWN, COMBINE, & COOK. Brown the meat until no longer pink. Place the meat, flour, garlic salt and beef broth into the crock pot. Cook on LOW for 4 hours. Stirring occasionally. Toward the end of the 4 hours, stir in the sour cream until smooth.

NOODLES. Cook the egg noodles on the stove according to package directions. Pour the stroganoff over the noodles and serve.

Variations and Troubleshooting

Variations: Hamburger stroganoff is a simple dish to make. It’s also easy to make changes to. Here are a few easy variations you might like to use:

  • You can use ground pork sausage, ground chicken or ground turkey
  • We also love using beef and love our beef stroganoff recipe
  • Add veggies such as peas, broccoli florets, carrots, sauteed mushrooms
  • Greek yogurt can be used instead of sour cream
  • We like to serve over egg noodles, but other noodles such as penne, bow tie, fettuccine, fusilli, rotini
  • Mashed potatoes and rice are also great to serve as a base for this dish
  • Add bit of heat with hot sauce or red chili flakes

Consistency: If you’re not happy with the consistency, you can easily adjust it.

  • Too thick: simply add water or broth
  • Too thin: scoop 1 cup of gravy into a seperate bowl. Add 1 tbsp of four and stir until smooth. Add it back into the main bowl of gravy and stir. Repeat if necessary.

A Great Make Ahead Meal!

You can make the gravy ahead of time and put it in the freezer to use on a busy day. I would even suggest doubling the recipe so you’ve got two meals on hand. Complete steps 2-4. Do not add the sour cream. Place the gravy in a freezer safe container, label and freeze for up to 3 months.

When you’re ready to use, just thaw it overnight in the fridge. While your noodles are being cooked, heat the gravy in a separate pan over medium-low heat, or in a crock pot, stirring until smooth and warm. Add the sour cream and stir.

STORE any leftover hamburger stroganoff in an airtight container in the fridge. It should be able to last for 3-4 days. You will notice that the noodles may continue to absorb some of the gravy, but it will still taste delicious. Reheat in the microwave or in a saucepan on the stove.

Ingredients 

  • 8 oz egg noodles
  • 1 lb ground beef
  • 2 tbsp all-purpose flour
  • 1 tsp garlic powder
  • 2 c beef broth
  • 1 c sour cream
  • garlic salt and pepper to taste to taste

Instructions 

Stove Top:

    Is it garlic powder or garlic salt? In the ingredients it’s powder in the instructions it’s salt?

    Thanks so much for this recipe, Kristyn! I love a good cream-of-something soup as much as the next person, but the first slow cooker recipe I found wanted 4 (!) cans. This one was basic, tasted great and had a wonderful consistency

    Not sure where I went wrong, but it didn’t thicken up until quite a bit later… almost seemed like after it had completely cooled. I did add flour to it, but then I ended up with clumps of flour throughout. It was quite tasty, but I panicked about the runny consistency. I didn’t have egg noodles at the time, so I used fusilli instead and it was a good substitute.
