Every Friday we have Movie Night and we are always looking for snacks and treats to make for the night. We often have popcorn, but love to jazz it up a bit with candy or chocolate (like White Chocolate M&M Popcorn or this Caramel Marshmallow Popcorn).

Since it’s that time of year when fall candies are in abundance, we decided to try a Halloween Pumpkin Snack Mix with popcorn, cereal, nuts, and candy! We were all extremely happy with how delicious it turned out.

With the combination of all the cereals, candy and nuts you’ll definitely want to try this recipe—it’s just the right amount of sweet and salty!

Making Pumpkin Snack Mix

PREP. Line large pan with parchment paper.

POPCORN. In a bowl mixed popped popcorn, cereal and peanuts. Spread out evenly onto parchment-lined pan.

SAUCE. In a sauce pan, combine brown sugar, syrup and butter. Bring to boil and let boil for 2 minutes. Remove from heat and add vanilla and baking soda. Stir until mixed well. Pour over popcorn mixture and toss with a spoon until evenly coated.

BAKE. Bake at 250 for 15 minutes. Take out and stir. Bake for another 10 minutes. Let cool.

CANDY. Add in ½ cup candy corn and ½ cup candy pumpkins and mix well.

How much to make?

For this recipe all you need is 4 cups of popped popcorn. A mini sized bag yields about 4 ½  cups. Which is perfect for this recipe. If you are making a double or triple batch, a regular sized bag of popcorn yields 12-13 cups of popped corn. If you want to air pop your own popcorn you will need a heaping ⅛ cup of kernels. 

This recipe can easily serve about 6 people and each person should be able to have about 1 ½ cups of the mix. If you’re serving a large crowd I would suggest doubling or tripling the recipe. 

Tips, Variations + Storing Info

You can do roasted and salted peanuts, or honey roasted peanuts, depending on if you want more of a salty taste or more of a sweet thing.

Season your corn syrup with pumpkin pie spice seasoning along with vanilla extract. Then it will really taste like a pumpkin spice snack mix.

Variations: This recipe is pretty easy to customize based on season. 

  • Fall: more fall colored candy like M&Ms, Reeses Pieces 
  • Spring: pastel colored M&M’s, robins eggs, mini peeps, pastel candy corn
  • Christmas: use red and green M&M’s, reindeer candy corn, mini marshmallows
  • Add pretzels or roasted almonds/walnuts for some extra saltiness 

STORE in an airtight container for 2-3 days at room temperature. If it is uncovered, the popcorn will dry out.

Ingredients 

  • 4 cups popped popcorn (we used Kettle Corn)
  • 1 1/2 cup cherrios (we used Honey Nut)
  • 1 1/2 cup Rice CHEX
  • 1/2 cup peanuts
  • 1/3 cup brown sugar
  • 1/4 cup light corn syrup
  • 2 tbsp butter
  • 1 tsp vanilla extract
  • 1/4 tsp baking soda
  • 1/2 cup candy corn
  • 1/2 cup candy pumpkins

    Kristyn – I love this and will be making it this weekend. I have a question for you on some advice — you know that I love to make all your treats for our missionaries, and they love everything I make. If I make this, how do you think I should wrap it for them?? Big baggies?? I’m just not sure but I want to give it to them! Any ideas?? I usually buy cheap dishes at Target for cookies and such, but always lost on snack mixes. Thanks for all you do to help me keep a generous heart and pass things on!!

        Yes! And they really looked good. I filled them with the snack mix, and then put a couple of Halloween Oreo cookies on the top. They were very well received. I told them they could munch on them whenever they want of course, but this weekend would be a good one while they watch Conference!! They were so thrilled. Thank you for all your good treats – and your regular ‘mom’ chocolate chip cookies are still the best!! I made them with Halloween chocolate chips (Target too!)
