This easy cookie recipe was first made by mom decades ago. It was also one of the first recipes we ever shared here on Lil’ Luna. Although we haven’t changed the recipe, we have shared more tips and tricks to make sure it’s always soft, chewy, NO-FAIL and turns out perfect EVERY TIME.

Snickerdoodle Ingredients and Substitutions
Cookie
- 2 ¾ cups all-purpose flour – How to Measure Flour
- 2 teaspoons cream of tartar – creates the signature tangy flavor
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup unsalted butter – just softened!
- This is KEY! When you press in finger into the butter, you want it to barely indent. Too hard, and the dough won’t be just right – too soft and your cookies will be flat.
- 1½ cups granulated sugar
- 2 whole eggs – room temperature eggs incorporate the best
- 1 teaspoon vanilla extract
Cinnamon Sugar Coating
- ⅓ cup sugar
- 2 tablespoons cinnamon
Pro Tip: Cream of Tartar Substitution
Replace the 2 teaspoons cream of tartar AND the 1 teaspoon baking soda with 2 teaspoons of baking powder and ½ teaspoon lemon juice or white vinegar.




How to Make Snickerdoodles
- BATTER. In a medium bowl, stir the 2¾ cup flour, 2 teaspoons cream of tartar, 1 teaspoon baking soda, and ½ teaspoon salt. Set aside.
- In the bowl of a stand mixer (or use a hand mixer) cream together 1 cup butter (barely softened) and 1½ cups sugar until light and fluffy (at least 2 minutes) Add 2 eggs and 1 teaspoon vanilla and mix until it is well blended.
- SHAPE. Add the dry ingredients to the wet ingredients, mix well, and then shape the dough into 1-inch balls (no need to chill).
- COAT. In a small bowl, combine ⅓ cup sugar and 2 tablespoons cinnamon. Roll the dough balls into the cinnamon and sugar mixture – TWICE.
- BAKE. Place on an un-greased pan or baking sheets, and bake at 350°F for 8-10 minutes. Let sit on the cookie sheet for a few additional minutes before removing to a wire rack to cool.

Kristyn’s Recipe Tips
- BUTTER IS KEY. Make sure you are using real butter for this recipe (no margarine), and make sure it is JUST SOFTENED.
- DON’T SKIP THE CREAM OF TARTAR. It gives the cookie that famous tangy flavor!
- DOUBLE ROLL – Don’t skip rolling the cookie dough balls in the cinnamon-sugar mixture twice – it ensures that sweet goodness is in every bite.
- DON’T OVER-BAKE – Snickerdoodles might look a little underdone when you pull them out of the oven, but trust me—take them out! They’ll continue cooking on the pan and stay soft and chewy inside.

To Chill or Not to Chill?
This is the main question we get asked about this snickerdoodle recipe so we decided to test it for you to show the differences. The results speak for themselves!
- NOT CHILLED – our preferred method – you can see that the cookie is not too flat, has all the cracks on top and is PERFECT.
- CHILLED – the cookie is more poofy, doesn’t have as many cracks on top and does not expand as much.
- CHILLED + FLATTENED – this cookie expanded the most, but became almost too flat


Snickerdoodle Recipe
Ingredients
Snickerdoodle Dough
- 2¾ cups all-purpose flour
- 2 teaspoon cream of tartar
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup unsalted butter, just softened
- 1½ cups sugar
- 2 eggs
- 1 teaspoon vanilla extract
Cinnamon Sugar Coating
- ⅓ cup sugar
- 2 tablespoons cinnamon
Instructions
- Preheat oven to 350°F.
- In a large bowl, mix flour, cream of tartar, baking soda, and salt. Set aside.
- In a stand mixer, cream together butter (barely softened) and sugar. Add eggs and vanilla and blend well.
- Add dry ingredients to wet ingredients and mix well.
- In a small bowl, combine ⅓ cup sugar and 2 tablespoons cinnamon.
- Use a small cookie scoop to scoop out dough and roll it into a ball. Roll each ball in the cinnamon sugar mixture – twice.
- Place 2 inches apart on an ungreased cookie sheet.
- Bake for 8-10 minutes. Let sit on the cookie sheet for a few additional minutes before removing to a wire rack to cool.

Recipe FAQ
– Your butter was. too soft or melted – it needs to be just softened.
– Your baking soda or cream of tartar is expires – These two ingredients work together to give snickerdoodles their signature soft, puffy texture. If they’re old, they won’t do their job, and your cookies will spread. Check those expiration dates!
– Over-mixing the dough – Once you add the dry ingredients, mix until just combined. Over-mixing can cause thinner cookies.
– Oven temperature is too low – If your oven runs cool, the butter will melt before the cookies have time to set. Use an oven thermometer to make sure it’s at 350 degrees.

Yum! But the raw dough isn’t as yummy as other raw doughs
I tried this recipe because it said no fail. These cookies taste good but they look like hell. Completely flat and the butter was not the issue. Not sure if it was mixed too much? Would not make these again.
I’m glad you like the flavor, but flat cookies are always a disappointing result! It’s hard to troubleshoot for others, but here are a few ideas:
Overmixing can result in a flatter cookie. Expired leavening agents (like baking soda or cream of tartar), or accidentally leaving them out of the recipe. Using an overly greased cookie sheet. Inaccurate oven temperature. Perhaps the dough became too warm after mixing, even if the butter was initially just softened.
It was very hard to mess up and turned out perfectly. It did take a little longer than expected granted I am 11 and it was still worth it anyway

I see you say not flattened, but then I see a picture of a glass being used to flatten. I’m confused.
Great question, and apologies for the confusion! In the post, you’ll see a photo demonstrating three ways you could bake the cookies: chilled, chilled and flattened (the photo you’re referring to is just an example should you wish to bake them this way), and lastly, not chilled and not flattened. The latter is my preferred choice and how the steps are written on the recipe card.

I’m glad you liked the flavor, but I’m sorry to hear the cookies turned out flat. Hopefully, you’ll give them another try! My suggestion would be to make sure the butter is just barely softened, and for extra caution, you can chill the dough before rolling in sugar and baking.
Can I make them larger? Will they become to flat?
You should be able to make them larger. To help ensure they stay puffy, you may want to chill the dough balls before rolling them in the sugar mixture and baking them for an extra 2-3 minutes.
These snickerdoodle cookies are the BEST and unbelievably delicious!!! They are so easy to make and my husband absolutely loved the cookies. I bake the cookies for 8 minutes at 350 degrees and they come out nice and soft (my husband doesn’t like it crunchy). I put 12 cookies on a baking sheet as they do spread – the recipe makes about 48-52 cookies. Thank you for this wonderful recipe Kristyn.

these cookies are amazing!!! i’ve made this recipes two times these past months.. but was fighting back the urge to make them every weeek😅 these cookies are amazing. very homey taste. i’ve tried this with two ovens and both times ive had to keep them in for longer so that’s just a heads up. i ended up putting them in for a few minutes more than the recipe said depending on sizes of the cookie.

This is an excellent recipe! We love it. So many rave reviews. I needed to adjust for my high altitude. I usually double the recipe. Here is what we do for high altitude (and doubled):
5 ¾ cups all-purpose flour
3 teaspoons cream of tartar
1 ½ teaspoon baking soda
1 teaspoon salt
2 cup unsalted butter, just softened
2 ⅔ cups sugar
4 eggs
2 teaspoon vanilla extract

Great flavour but too cakey. I think I’ll sub 1/3 of the granulated sugar with light brown sugar. I also think subbing the cream of tartar & baking soda with lemon juice & baking powder may create less “chew” and more “cake”. But still…flavour is really good.

The taste is amazing, sometimes you do need to add more cinnamon or sugar for the coating though. I would highly recommend using a knife to put an X or a + on the cookies so they look prettier.
These cookies were AMAZING. A super simple, easy and delicious recipe. They did flatten out a little after cooking, however, if you don’t flatten them before cooking they will not flatten as much. Just leave them round. Overall, this is a recipe I will definitely be making again.
These went totally flat on me like other commenters said. I was ultra careful on every step making sure butter and eggs were right temps, etc. Any clue what’s causing this to work for some people and not others?

The cookies my relative made following this recipe were absolutely delicious! However, I have tried this recipe three times. The first two times, the cookies were very cakey and thick. The previous time, the cookies were way too flat and salty although I followed the recipe carefully. The flavor is great, but as others have shared, the cookies turned out flat and thin. While not a professional baker, I do have an Applied Sciences Degree in Culinary and have had formal training in baking theory and application. I even converted the cups of flour to grams, followed all directions to a “T”, formed the dough balls and coated them with the sugar/cinnamon mixture and chilled for about 20 -minutes prior to baking. Cookies had some rise to them coming out of the oven, then fell flat after cooling. IMO, the recipe needs to be re-worked. Not a big deal or disappointment, just no lift or fullness to the cookie.

WOW! These were tender and amazing, even tho I didn’t have cream of tartar and had to use the listed sub of lemon juice and baking powder. Turned out perfectly. For the second round, I mixed a little extra cinnamon-sugar mix INTO the ball as I formed, then of course rolled in it too. Even more amazing!
Me again. Made recipe second time with cream of tartar as directed—just as good! I followed all directions as far as room temp butter and eggs. Both times I’ve made this recipe, the cookies come out as shown for when she bakes immediately. ALSO tried chill and bake with a little flattening (with fingers and just slightly) and they are just like the pic. SO GOOD and everyone loves them!!

I followed this recipe to the letter and tried baking one batch after chilling for a couple of hours….turned out flat! I then chilled overnight and had the same issue. I’m not a novice baker, so I’m not sure what the issue is. I increased the temperature to 375 degrees convection and it helped, but I’ll be searching for another recipe.
Well I followed the recipe didn’t chill. My cookies. Came out very flat. Didn’t look at all like the picture.So what went wrong. I used brand new cream of tartar.

These came out very good. The flavor is 10/10. I think the only thing I will do differently next time is chill the dough for a little bit before baking. These cookies came out flatter than I typically like visually, but they taste fantastic.

Amazing recipe – so good
I just made these. I didn’t read the comment about the butter. Also I shouldn’t have read the comments because I was scared of over mixing and ended up under mixing. That my dough looked crumbly. But each batch I did is slightly different times, chilled/chilled,knead dough a bit more. But the end results this was my first time trying a snickerdoodle it’s a ok cookie. It just reminds me of a sugar cookie with cinnamon. In my opinion I like the name better than the actual cookie lol but I will see in the morning what the family thinks.

Been making this recipe for about 6 years now and every year they turn out perfect! Make sure you follow the instructions and only cook the 8-10 minutes – they still look like they should cook longer when you take them out, but they don’t need to! Trust the process, haha! Cook any longer and they become hard and dried out, not soft and chewy. Honestly such an easy and foolproof recipe! I doubled the batch yesterday and it made 85 cookies!

I made these cookies over the weekend, and they didn’t turn out how I wanted. They taste great, but are super flat, and spread out in the pan like one big cookie. The dough was very sticky, couldn’t roll it into balls. I refrigerated it for a couple hours and that helped, but by the end of rolling, it had become so mushy again, it was sticking to my hands. They are a little crunchy on the outside and the inside is very soft. I was worried they were underdone but after letting them set, they were fine. Disappointed visually, but at least they taste good.

These cookies taste great but they spread way too much. I tried not pre-flattening them at all and they still ended up thin and crispy than slightly puffy.
Followed the recipe exactly, and they came out raw in the middle. Also, for the coating, 2 tablespoons of cinnamon was WAY too much. Instead I did 1 tsp cinnamon & 1/4 cup sugar. I was very nervous to use this recipe after reading the reviews, and unfortunately I was right to be nervous. Had to completely remake these using a different recipe.

Mine came out flat and greasy. I think it would be better to refrigerate the dough balls for 30-45” before baking so they can hold their shape. Flavor was good but not fluffy

Is there an easy way to modify this to include pumpkin to make a flavored variety? Im hoping to make one big batch then split and add pumpkin to 1/2 and keep the other half regular. Made these twice as I thought I had just over mixed the first time. Taste is good but super flat for a snickerdoodle. At temp and time in recipe middle is not done even when cooled. Next pan I tried a couple minutes longer and outside gets super crispy and hard. Followed recipe exactly both times second time only mixed until combined.

hi! I’m not sure where I went wrong or if I simply did not mix it enough, but as of now, my dough is very crumbly
Hi, I was just wondering where I went wrong on this recipe. I halved it because I didn’t want too many cookies, and used the substitution you wrote for cream of tartar. Everything seemed normal until when I tried a cooled off cookie. It tasted, not sweet, bitter and had a burnt taste, even though I didn’t burn it. Maybe I did my math incorrectly with halving it? But I did check my measurements. Or maybe it was the subsitution? Any help would be appreciated.
These were very nice – I think exactly like the old recipe I lost? The first batch spread out a bit (and I always cut back the sugar by about a 1/4 cup) so I chilled each pan as I was rolling and filling the next pan. My kitchen was a bit warm and I think that is why they did that. Thank you for sharing.

There could be a few reasons for flat cookies. You can try chilling the dough, which often helps create a thicker cookie. You could add a little bit more flour to the batter as well, but be careful to not add too much more or you will have dry, dense cookies. Using cold butter can help as well.

I liked the way these cookies came out ! I did chill them for a hour and they were more uniform . I also added some mini chocolate chips. Oh my gosh they were delicious 😋 . Phenomenal cookies and good tips. Have yet to meet someone who didn’t like these cookies. 2 minor suggestions: give a relatable size or measurement to make the scoops on the cookie sheet (took me a few batches to get the size right) and give adjustments to recipe if making a double batch. Have been using this recipe for a couple years now, and it’s truly fantastic!
Not sure, tastes good, but mine baked up VERY thin, even after chilling the dough after the first batch baked up too thin…. Making them for coworkers and do not have time to make another recipe. Sorry to say I will not be making these again.

I had to add way more flour because the dough came out like a batter and was impossible to roll due to getting stuck to my hands in globs. I was using my standard gluten free vegan substitutions which work great for chocolate chip cookies, but somehow here the dough felt like banana bread batter with more sugar. After the change though (sadly I didn’t measure how much flour I needed) they came out excellent!

I suppose you could. I always use butter for these because we love the flavor and texture that the butter gives. I haven’t tried with the others. You’ll have to let us know how they turn out if you use either one.

There’s lots of reasons why your cookies could be spreading, but this could help.. You can use a silicone baking mat or parchment paper rather than greasing a cookie sheet, add a little more flour to the dough, or you can try chilling the dough too. Hopefully this helps!
I’ve made these cookies many times, they are my husband’s favorite. I always get compliments when I take them to a gathering.
These Snickerdoodles came out perfectly puffy. I refrigerated the dough about 1/2 hour before rolling into balls. I’m in Mexico without cream of tartar so I appreciated the note about the substitution. I just made a second batch in 2 weeks! Everyone loved them.

All I can think is the flour. I poured instead of scooping 🤔. Do you happen to have it in grams?
It would be about 344 grams. I’m sorry to hear they flattened. You may need to add a Tbsp or so more of flour if they are flattening out too much for you.
This was a quick and easy recipe! I do like chewier cookies so I subbed 1/2 cup of white sugar for brown sugar. I’m also not into the traditional amount of tang so I only used 1 teaspoon of cream of tartar as well as a little less baking soda. Turned out great, thanks for sharing your recipe!

My great granddaughter and I made the Snickerdoodle cookies tonight. They were delicious!!! So easy to make and the ingredients are ones most people have on hand. The cookies were moist and chewy. The only problem I had with them was keeping everyone out of them. This cookie is a winner for sure!

I made these cookies using my own gluten free flour blend (its similar I believe to Bob’s Red mill mix) and they came out GREAT! I’ve noticed that when using my blend (or any GF flour) things tend to need a little more time to bake to be fully done, so I baked them for 12 minutes, then let them sit on the cookie sheet for a couple minutes before transferring to a cooling rack. I was very happy with the results!
It’s been an adventure trying to live with gluten intolerance–I was an avid baker before this happened–so have had my share of disappointments, but also some great successes. I make my own bread since the gluten free bread that one finds at the store is pretty awful. My GF bread is delicious, and my family that can eat wheaty stuff thinks so, too.

I made the Snickerdoodles to your exact recipe. They came out perfect. My wife said they looked like they came from a professional bakery and were delicious. I did not flaten them and only parked the dough in the fridge while the first batch was baking. I used a 1.5 tbs scoop and baked for a total of 10 minutes, rotateing the pan half way. My cookies came out with random cracks and measured 2.5 inches in diameter X about a half inch thick. They look just like your picture of them. Thanks for the recipe, and I’ll probably try your Chocolate Chip recipe next.

I made these cookies as well. While in the oven, they looked very puffy. Once I took them out, they fell flat. Not sure why, I wish someone could answer that comment. They tasted good, but they were not puffy like I wanted or expected.
This happened to mine as well, and I followed the directions exactly. I wanted to take them to my grandson’s birthday party, but they don’t look very good, so I probably will not take and share them. I am so disappointed!!!!!

Definitely have to chill this as the dough was way too soft and couldn’t even roll into a ball.
Mine came out completely flat, too. Was planning to bring them to an open house, but now I’m reconsidering that.
I may make them into sandwich cookies of some sort.

I made this recipe two different ways. First I did not chill the batter but made a dozen cookies, and they came out flat, but good. I chilled the rest of the batter over night and finished baking the cookies the next morning. They still came out flat. They were never puffy like yours. I was disappointed that they still came out flat after I chilled the dough. But they tasted good.

You can add a little more flour if you feel like your cookies were too flat. While we don’t call for chilling for this recipe, you can also try that.

Came out extremely flat and raw after 10min of baking and 2 min on the pan. The oven temp was correct & the recipe was correct with new ingredients. I’ll be finding a better recipe next time.
Sorry to hear the cookies didn’t turn out. I would recommend adding a just little bit more flour if the dough seemed too sticky or they seemed too flat or raw. You can also adjust the baking time slightly. Elevation and ovens can affect baking. Thanks for giving the recipe a try.

Do you weigh your flour or measure with a measureing cup? Some recipes say a cup of flour is 120 gms and others say 150 gms. Any idea how much your flour weighs per cup?
I typically measure the flour with a measuring cup. But a cup of all purpose flour is typically about 120 grams, if you did want to measure it out by weight.
This just didn’t work. I’ve been baking quite some time and had all ingredients at the correct temp, no overmixing and new cream of tartar and baking soda. These came out almost raw despite the 10 minute cooking time. The oven is the correct temp. Tried turning up the temp to “set” the cookies. Tried chilling dough. Still ended up with greasy, flat, underbaked cookies.
i had that same issue, but i just threw it in the oven for a few more minutes and eyeballed them (about 15ish mins total) and they were perfect! soft on the inside but still had crispy edges

Absolutely delicious! I have made snickerdoodles in the past, but first time using this recipe. Made them for Christmas and everyone loved them. I was actually craving them, after we ate them all. Several have asked for the recipe. Mine came out a little flat. I will have to make them again, practice makes perfect. This is going to be my go to recipe .
These are AMAZING! Little bit of crisp with near gooey inside. Reminds me of Great American Cookies. I used salted butter & substitution for cream of tartar. I wish I could post a picture of them!
I used sugar replacement in these, and it was kind of funny because they got super poofy. i think i might have used too much flour? a gram weight for things that can be weighed like flour would probably be helpful.

Not to my personal taste. Too much cinnamon to sugar ratio on the coating. They tasted strongly of flour and vanilla with no hint of butter, which I think is the essence of the cookie part of a snickerdoodle. Also, was too crunchy and too doughy all at the same time.

Best Snickerdoodle recipe I’ve ever made! (This coming from my entire family as well!) So soft on the inside and slightly crispy on the exterior. The cookies are a bit puffed once they come out of the oven but once cooled resemble the classic Snickerdoodle. These were so buttery and delicious! I baked mine for 9 minutes – this is now my go to recipe!

Let me just say this: If you read the recipe, and use barely/slightly softened butter, you will be successful and have no problems whatsoever with this recipe. However, if you do soften your butter too much, and the dough is not firm, just put it in the refrigerator for an hour or so, and you should be fine. I understand that some folks might be novice bakers. Experience goes a lot way when it comes to baking. Do not shoot the messenger though!! 🙂
These are easy to make and delicious! I did not have any issues with the dough (like some others). These turned out a little crisp on the outside, soft on the inside, and full of butter/sugar/cinnamon flavors!

Really nice recipe. Easy to make and easy to clean up. I did refrigerate my cookies first, did not flatten them. I haven’t made these before and I have a new foster teen that has warm holiday memories of Snickerdoodles. I made them for him and he had a moment eating the first one. I made these today, and they turned out perfectly. The dough was nice and thick without having to chill it beforehand. I tried two recipes, and this one was far better. I’m not sure why others are ending up with sticky or runny dough. Maybe they are melting the butter instead of using it at room temperature.
I cant tell if there is some magic touch that needs applied to this recipe or if I’m just an idiot but no matter how many times I’ve followed this recipe, the result is always the same. The dough cannot be rolled into a ball right away due to the consistency. I’ve had to chill the dough every single time in order for it to be at a consistency where you can work with the cookie dough. But your time is limited before the dough heats up again and becomes unmanageable. Work quick and chill the dough…. Or tweak the recipe? Idk. But I will say this…. There is a reason I go back to this specific snickerdoodle recipe… They turn out delicious. A pain in the bum to put together? Yes! The most delicious snickerdoodle you’ll ever eat… Also YES!

I have been making this recipe for 2 years and every time they are perfection unless I don’t follow the recipe exactly. Usually my problem is that my butter was too soft which will make the cookie flat and misshapen. If you follow the recipe you will have the BEST snickerdoodles guaranteed. Okay this recipe has finally convinced me that Snickerdoodles are not evil. I’ve strongly disliked them from about the age of 5. I made these cookies for an office holiday cookie contest. The recipe was easy to follow. No exotic or crazy ingredients were involved. I did use red and green sugar with white sugar to make the cookies Christmas-y. Personally, I like my cookies a bit more “done” so the second batch I left in the oven for 13 minutes., the cookies were too doughy for my taste at 10 mins.
I made these cookies last year (2022) and they were excellent. This year they fell after they came out of the oven. Due to the high cost of butter, I used Parkay margarine instead. So, I am blaming the margarine. I also had to back them to 13 minutes.

It made about 36 when I made them Thanksgiving. I also added 1/4 teaspoon of ginger to my cinnamon sugar mix and they were a huge hit! I rolled them into balls, tossed them in the sugar, chilled, flattened them some with a cup and sprinkled with cinnamon sugar again before baking. So good!

Thanks for giving the recipe a try! You could try adding a tich more flour if they seem to be spreading. Every oven bakes a little differently and temperature/altitude can affect it too, so you may or may not need to add a little more baking time like you were experimenting with.

Recipe is great. What you cook it on matters a lot. Non-stick causes small sunken cookies that are unevenly cooked. A slight flour adjustment (2 tbsp) for nonstick may help. Aluminum ones or commercial grade cookie sheets without nonstick will give that pretty crackled surface and cook more evenly.
After reading some of the reviews I wasn’t sure what to expect, but after following the directions (barely soft butter) these cookies turned out great. I even tested the chill verses no chill and the results were as posted in the notes section of the recipe. I did note that the cinnamon mixture didn’t stick to the chilled dough if I rolled all first then sugared. I had to re-roll so the sugar would stick. Otherwise, a great snickerdoodle. I don’t get the hateful messages…Just facts folks.

I just want to say I followed your directions, but I chilled mine 2 times. 1 after each coating, I flatten them a lil and they came out looking like the 3rd pic

Easy and very delicious recipe. I did however, chill the dough in the freezer for 20 mins. To make it easier to roll the dough in the snickerdoodle.
Dough was very wet and the cookies taste good but are flat as pancakes. Would probably not make again

Never had such a gooey snickerdoodle dough, followed recipe as provided and had a hard time to roll the dough into a ball as the dough was too uncohesive and just spread in my hand instead of forming a ball

The cookies were still liquid after the ten minutes and i put them in for an additional 5 and they got too crunchy. I figured it was user error and made another batch but they turned out the same way! I tried another recipe and they turned out perfectly fine. not sure what is up with this recipe but something ain’t right.
First time making them and I made half the recipe with only baking soda and a full tsp of vanilla. I messed up in that I made mine too big. 65gm balls flattened out to a 5” cookie 🤪. I will definately try this again but as 30gm cookie dough balls. Cookie was very tasty and moist. Hit the spot.

These are the best snickerdoodles I’ve made. I was in a cabin farm from a store with the basic baking ingredients of which there was no cream of tartar. I googled a substitute and was able to switch out 3 tsp baking powder for 2 tsp cream of tartar. You would never ever know the difference. It worked perfectly if you find yourself in the middle of nowhere. This recipe is being printed and added to my recipe box of favorites.

Well it did mention you can add flour until it’s not sticky anymore. Maybe you missed that?

What are your thoughts on using plant butter sticks in lieu of regular butter? They usually work well for me in baking, but was curious if you have tried it in the recipe.
I haven’t tried using plant butter, but you could try it! You’ll have to let us know how it turns out if you do.
These were a hit! The edges had a slight crunch but the inside was still soft and chewy. I ended up getting close to 50 cookies with a tablespoon of dough per cookie.

Delicious cookies! Concerning the flat cookie question posed in the comments…I have learned to add more flour if I want cookies to stay domed. I add flour until the dough is no longer sticky to the touch. For this recipe, I added about 3/4 cup more. They were still a bit flatter than I wanted, so I could have added even more flour. It is also possible that my baking soda was not fresh.

I personally haven’t tried, but, yes, I would omit the salt. You can taste the batter before scooping them onto the cookie sheet & see if it needs more or not.
I always use salted butter and never omit the salt from the actual recipe. There isn’t enough salt in the butter to change the recipe that much.
They normally turn out so good but sometimes they get super flat and I’m wondering if anyone knows why? I triple checked i put in all the right ingredients. 😢

Sometimes it is the flour that you use. When I have made chocolate chip cookies I noticed some come out flat with a certain flour and some stay puffy or domed shaped when using a different flour.

Hello, I’m 14 years old and come from California. Everybody in my family are all foodies, and this recipe right here is outstanding, we all loved it. We haven’t ever had anything like it. Right out of the oven they’re light, buttery, not too sweet, soft, a little chewy, crispy edges. Everything that a cookie should be. If you’re somewhere around my age and you’re looking for and easy recipe to bake, I highly recommend this one.

My cookies stayed puffy and didn’t flatten out. What could I have done wrong? I did substitute the cream of tartar and baking soda with the baking powder. I shifted all the dry ingredients. They did taste good but just a little dry.
My guess is they were more puffy/dry because of the baking soda/powder switch.

I did these today for my teenage sons birthday and they came out perfect. Snickerdoodles are his favorite cookie. I’ve tried other recipes from Allrecipes over the years but yours is the best. I let the butter sit on my counter for 2 hours until it was soft, but not too soft. I cooked them for 9 minutes exactly. Another trick I did was put some cinnamon in the dry mixture to add more flavor. I used Penzeys cinnamon because good spices make all the difference.

Has great flavor I measured everything to a tee, mixed wets and drys separately and once combined it was a cake batter I added so much flower just to get it to a loose dough I finally gave up and put it in a pie tin to make a brookiedoodle🤞 it turns out.

I notice you mentioned I can sub in lemon juice or vinegar in place of the cream of tartar, Id just like to know if I’d incorporate that along side the wet ingredients? Or after everything wet and dry ingredients are already mixed?

My husband has always said his favorite cookie is the Snickerdoodle, but that NOBODY could ever have a recipe that would compare to his Grandma’s recipe. Well – I figured, CHALLENGE ACCEPTED! I looked online for a recipe that was similar to the one I grew up with, but that was less “cake like.” I came across your recipe and felt it was the one I needed to go with. I wanted to surprise him with a batch of freshly baked doodles for his birthday on Monday. 🙂 The only thing I changed was using a vanilla paste rather than a vanilla extract – I just feel that I get better flavor with it. I also added just a titch more than the recipe calls for. Well, needless to say, my double batch disappeared in just a day!! He told me that the cookies were better than his mom’s, but that they were “literally a very close 2nd to his Grandma’s!” Ya know what? I’LL TAKE THAT! Because there is NOTHING that beats your grandma’s cookies… So this new wife will be keeping this recipe on hand (he informed me that I better, because we need these more than just his birthday!) and smiling with every dough ball I roll. Thank you for such a perfect recipe!!!!

These taste delicious, and I’m already sated from the batter alone, but they were very sticky to deal with. Was the butter too soft? The cookies also spread out a lot on the pan while baking.
You could try using a bit colder butter. Or adding a bit more flour. There are lots of factors that can alter baking results, so you could try that next time and see if it helps with the texture of your cookies.
My husband recently tasted his first snickerdoodle cookie at a gathering – it was store bought, but he liked it. I explained how homemade cookies are the best and made your recipe. Just AWESOME!!! I made a double batch-family visiting from Massachusetts and was a HUGE hit! No problem with what other posters mentioned about sticky batter, rolled into balls with no problem. We had enough to freeze however, they didn’t last long in the freezer either! Making more 2day as I need these cookies in the freezer for late night snacks!! Thank u so much, didn’t disappoint!
Made these with gluten-free flour so they had to be chilled in order to avoid being grainy. Mine still flattened and were fine. Plus I used Chinese 5 Spice to roll them in because I’m serving Asian sliders tomorrow. I only rolled them once because I didn’t want them to be overpowering, but I can still get that pleasant hit of pepper and cloves after enjoying them. This is a keeper.

Great recipe! Doubled it and made 7 dozen cookies. I mix sugar & cinnamon in a small square container with a lid, then after placing 3 dollops of dough, I shake the container. Thus covering the cookies without getting my hands all sticky! I bake at 365F for about 14 minutes (2 pans, switching top to bottom halfway through). Cool in pan about 3 minutes; reuse cookies sheets, but lightly spray for second batch!😋💕

Am trying them in your white chocolate chip version replacing the white chocolate chip with the cinnamon chips…can I still flatten a little or will they on their own??
You can if you like them especially flat. They will flatten out a bit though since they are made with all butter. The cinnamon chips sound like a delicious addition!

However, it would be helpful if a measurement for the dough balls was given as I, and I’m sure some others as well, do not have a cookie scoop. This cookie recipe..followed 100%, was perfect!
We mixed, used a small cookie scoop, this dough was soft, I put a sprinkle of sugar Cinn mix in my palm, added scoop cookie, sprinkled some mix on top, lightly roll, then put back in the sugar mix then on cookie sheet. Cooked 8 – 9 minutes..they were perfect! Little puffy in middle, crispy outside. DO NOT slam your cookie sheet in counter..that will cause your cookies to fall flat. Be gentle when taking out cookies and sitting them down to cool. They will be prefect

Like many other commenters said, the dough is too soft, almost like a batter. I had to add extra flour, sugar, and cream of tartar.
These tasted great but mine flattened out big time. They looked like one big cookie on the sheet pan! I live at a higher altitude and I’m sure that’s why. But I usually like to bake a recipe exactly as it’s written the first time. I really wish more recipes added high altitude instructions. Even if it’s just a note at the bottom. They tasted good enough I’m up for another try – with some adjustments this time.

I made a double recipe … made about 65 cookies! Temperature at 365, for 12.5 minutes. My husband likes the flat, crisp cookies. So, I made the last 5 flatter and in the oven longer (15 minutes). Thanks😋

Yep! You could always leave it out and then add more salt to taste, as needed.
So yummy! The dough was a little wetter than expected, but once i got the sugar on there they balled right up! Also used a 1tsp white vinegar per 1/2tsp cream of tartar, turned out great!
I tried your recipe, followed the directions explicitly….. did not overmix, the dough was so soft that I was unable to roll into balls. I refrigerated them overnight. I rolled the refrigerated dough into balls then cinnamon sugar. One batch I pressed flat the second I left in a ball. Both came out completely flat. They did not resemble your picture at all.
What could have I done different?

I agree the dough was too soft, broadline batter. To that I added 1 cup flour, 1/2 cup sugar 1/2 tsp tartar, and 1 tsp baking powder. I probably could have only done with 3/4 cups of extra flour. I did not flatten them, but the cookies sloped into a nice dome shape after a min or two. I sprinkled some extra sugar/cinnamon mixture on the top. I do not have a cookie scoop so I use two spoons. My balls were about 1.5 inches, I got 38 cookies.
The cookies came out like picture 3, but maybe just the slightest more fluffy. They tasted wonderful!
I love snicker doodle cookies, they are my favorite cookie and I remember I was around 7 when I had my first snicker cookie. I have tried and hated every recipe, and brand’s of the snicker doodle cookies you can buy at a store and bakery. I made these and accidentally combined the sugar that was supposed to be with the butter into the bowl with all the flour. I had my doubts when I made these cookies, I let them cool for 10 minutes, and it brought me back to the day that I discovered snicker doodle cookies. This recipe is stunning, I loved these cookies so much. I made a total of 25 cookies and gave half to my grandpoppy since snicker doodles are his favorite as well. And he ended up eating almost all of them on the way home.

These cookies turned out perfectly, I froze 2/3 of the dough. I’m not sure what the cream of tartar does but the baking powder made them stay fluffy even after cooling. I also don’t have a cooling rack but they were room temp in 3 minutes and I put them straight on a plate to eat. THANK YOU SO MUCH, these are my new potluck dish.
The recipe was pretty good! It tastes really good and is mostly ease to follow. I don’t really understand how to soften butter just barely so it would have been nice to been told a bit more specifics, but that’s more from a beginners view (aka me). Ended up softening too much and had to put more flour to fix it. Otherwise lovely recipe thank you!

Great tasting cookie. By accident I found a hack. Washed my hands before rolling the second batch into balls, my hands were still a little wet and the cinnamon sugar mixture coated the balls perfectly!!
10 minutes is not nearly long enough
Made these cookies with 1:1 gluten free flour. They did come out a little flat, but the taste was great. I did bake them for a little longer as another baker commented 12-15 minutes because they did look uncooked in the center.

I make a lot of cookies and snickerdoodles are one of my favorite. This recipe has become my favorite snickerdoodle recipe by far. Thank you! The only changes I make is 1 1/2 tsp vanilla and 3/4 tsp salt. I do use a sifter and I use a scale to measure the dough balls. I make mine 25g and bake for 9 1/2 minutes. Perfect. Also, I just buy the McCorm*ck Culinary brand Cinnamon Sugar. It stays more consistent.

Did not like this recipe. Cookies were flat, soggy. Didn’t hold shape. Followed the recipe to a T. Sorry, this really was disappointing.
Hey Amy! I found that baking the cookies a few minutes longer and making them slightly larger made them the perfect texture!! I had to play around a bit to get the right bake but they turned out perfect in the end! When I followed the directions exactly they weren’t nearly done baking by 8-10 minutes but closer to 12-15 minutes depending on cookie size & they were no longer gooey & underbaked in the middle! Just keep an eye on them as they’ll be crispier if you leave them in too long!

I am not the best baker, but really enjoyed giving this recipe a try! When I saw the batter initially I thought I had messed up (and I did, put wayyy too much sugar), and thought I had made sugar cookies instead. I realized I ran out of regular sugar as well so I used about half of what the recipe called for in sugar with powdered sugar and added the right amount of cinnamon, rolled my dough balls into it, and they turned out beautifully! My oven did require a longer baking time, but honestly, I love my cookies to be a teensy bit raw in the middle. Thanks for sharing!

Great Snickerdoodle taste. Unfortunately it’s too late in the year to bake without AC in my kitchen. I’ll try next Feburary. The cookies spread and ended up as flat as a tortilla. I baked the for 11 minutes and they were crispy around the edge and chewy in the middle and they seemed to still eat fine. I’m going to try the recipe again and chill the dough.

Amazing! Made them just like the recipe says except I accidentally spilled half an egg yolk that didn’t make it into the cookies. They turned out very soft and thin, yet didn’t fall apart or crumble at all. I didn’t feel the need to do the second cinnamon sugar dip because they already had enough flavor from the first one. My family loved them.

These turned out so good! I actually tossed in half a banana that I wanted to use up, right at the end. And it was just enough banana flavor without changing the texture much or overpowering the cookie.

I was definitely skeptical when I made the batter, you was too soft & creamy. I was going to add more flour but I decided to go with my gut and keep it like the recipe. I definitely loved how there was no chill involved. I flatten the cookies a little bit before putting it into the oven. I was not expecting for them to expand!!! They came out as big snickerdoodle cookies. I left it in longer to harden up and I’m really surprised!! They came out so goood, I added extra cinnamon sugar on top and I feeeel in loveeeee 🥰

Very beautiful, but they turned out very cake-like and low on flavor. They didn’t taste like cookies. I don’t know if I did something wrong or not, but I have never had a cookie (beside meringue cookies) ask for tar tar. I’m wonder if that was what was wrong. Also, I have never had such sticky cookie dough.

Tried these this weekend and they are DELICIOUS! Soft in the center as advertised – not just right out of the oven, but still today. They were a big hit with the kids as well. I have found my new snickerdoodle recipe.
I did have to chill the dough about 15 minutes to be able to make the balls – am thinking even though I tried the cutting into pats to quicken the softening process, my butter may have been a little too chilled, causing me to have to mix longer, thereby generating more heat. Will try to be more patient the next time, but seriously, other than less cracking on top, the taste was still top notch.
For my oven, 9 minutes was perfect.

such a disappointment. these cookies came out SO FLAT. i make a lot of cookies and i’ve made snickerdoodles probably 25 times in my life and i’ve never had cookies come out so flat??? this recipe came up first on google when i typed in “snickerdoodle recipe” so i figured i’d give it a try and wow what a let down. i didn’t chill or flatten the dough as per instructed and they spread sooooo much – i tried the “spoon trick” and it honestly made them look worse. so i popped the remaining dough in the fridge to chill and tried with chilled dough – nope, still massive spread. i thought maybe it was because i was using my silpat so i tried on an unlined pan and, yep, you guessed it, still spread. these cookies are as thin as a credit card. i am embarrassed to bring these to my potluck tomorrow 🙁
I don’t know how to delete reviews so I’m replying to my own — y’all it was 100% user error. I never review recipes but I was so grumpy they came out so flat that I left a midnight review, only to wake up and realize I somehow messed up the flour measurements (I think I did 2 and 1/4c rather than 2 and 3/4c). Even more embarrassed to bring these to my potluck today I decided to give the recipe another try – using the correct amount of flour – and they came out perfectly. I’ve never immediately remade a recipe that didn’t turn out right and I’m so glad I did. Re-reviewing this with 5 stars, because even the flat cookies tasted good.

I even tested my cream if tartar for freshness afterward, but when I poured hot water over a mix of cream of tarter and baking soda, it foamed up quickly as expected. Wish I still had my grandma’s old recipe. 🙁

Give it closer to 12 min or at 375. Not tolerant of undercooking.
Dough was way too creamy to work with. After watching the video I am skeptical the 1 cup of butter is right. It looks like maybe a stick of butter in the video. Can you confirm the correct butter amount?
The 1 cup is the correct butter amount. If the dough seemed too creamy, you can chill the dough. Typically, we don’t for this recipe, but you can if you feel like the dough is too soft to work with.

These cookies are so stinkin good. I can’t bake all of them at the same time due to me using a round pampered chef stoneware and they won’t all fit. Only difference is after the first batch goes in the oven, I put the remaining dough in the fridge and just get them out after the first batch is done. Also I keep my sugar/cinnamon mixture and sprinkle a little on the cookies right when they come out of the oven. These are always a hit. Great recipe and thanks for sharing.

I had to add an extra egg as the wet & dry ingredients didn’t blend well enough… Seemed to dry and flour would not incorporate.

I used a recipe scaler to scale this one down a bit, since I couldn’t see myself eating so many. My dough came out a little sticky, the fridge helped a bit but I also ended up having to add some more flour. Still ended up amazing for my first try. Next time I’ll try not to scale the recipe and just do it as is. The first batch I did at 176 Celsius to try and be as accurate as possible but they flopped. The rest turned out amazing at 180 Celsius

I really like this recipe. The cookies came out perfect AND I noticed that this recipe is perfect for sugar cookies. I have never been able to make a decent sugar cookie but this recipe is excellent!!!!
When I rolled mine in the cinnamon and sugar mixture they seemed to only pick up the cinnamon from the mixture. I ended up having to sprinkle the sugar on top of the cookies before baking. First time making snickerdoodles – did I do something wrong? All else seemed to go ok.
I typically roll mine in the mixture twice to help get all the sugar to stick too. The cinnamon will definitely look to stick the most, but that double roll really seems to help!

These cookies are amazing…my husband said it’s the best snickerdoodle he’s ever had! Mine didn’t raise as high as the picture shows. All my ingredients were new. I had to leave them in a couple minutes longer as the middle in my first batch was gooey. Any suggestions?
I had this issue too – based on my research, it looks like I used butter that was too soft, or slightly too little flour. I also learned that a hot pan could contribute, but this wasn’t my issue.
Dough was really sticky. Cookies came out flat. Not the best. Probably won’t use this recipe again.
Not sure what I did wrong, but the dough was so soft and sticky there was no way to roll it into a ball. I just sprinkled the cinnamon sugar mixture on the top and baked it. I had to bake for 13 minutes in order for it to not be doughy in the middle.
This was the first time I’ve tried making snickerdoodles, even though they’ve been my favorite flavor for years…… and it was an AMAZING success. I wont ever try another recipe. I followed the instructions exactly and they came out great. We did add chocolate chips to some of them too, and they were also purely mind blowing. I dont usually like hot cookies… I usually prefer them cooled. But these? I couldnt stop eating them fresh from the oven. That was a first for me. I thought we might have to make another batch to take to Christmas. It took me a while to find the willpower to stop. When I packed them up to take to Grandma’s house the next day, my kids were a little disappointed and said “did you keep ANY at home for us???” lol Everyone was impressed. Thank you!!
My college-age son requested Snickerdoodles for the Christmas dessert table. These turned out beautifully, and he said, “OMG… you’re going to have to hold me back on these.” LOL! I used a 1 Tablespoon cookie scoop which yielded about 32 cookies that needed a 13-14 minute baking time. Thank you so much for this keeper!
8 minutes of bake time is not enough. My cookies were raw. U think my usual recipe is 11 minutes.
Even with chilling for TWO HOURS, they flattered completely within eight minutes in the oven. Started losing shape at five minutes

They taste good, but mine came out really flat, not sure why.
Baking requires exact measurements, and proper mixing,… and depending on where you are sea level can slightly change your recipe. So if you’re at sea level, you maybe fine with measurements, but mixed unevenly, and if you’re in some mountains, or above sea level, you may need to adjust you’re baking powder/ soda a little bit. Of course idk if this recipe is made by someone high on sea level or low, so that info too would probably be helpful to know
Just finished making these. My only critique is I think the cinnamon to sugar ratio is a little high, so I will cut it back a little next time. Otherwise this is a great recipe and mine came out delicious! Thank you!

Yes, we talk about the best ways to store the cookies in the post. You can keep in an airtight container once baked. You can also freeze either the cookie dough or the cookies once they are baked.

These came out SO flat! I ended up adding more flour and that helped! I don’t think the flour/butter ratio is correct.
These were ok. It didn’t matter whether they were chilled or not they came out flat. Never had a snickerdoodle do that. I made twice to see if I’d somehow made a mistake and checked that all ingredients were fresh. Still they came out flat. They taste good but I don’t know that I’d make again. Somewhat disappointed.

My cookies are thinner then any snickerdoodle I have made in the past, however, crisp outside and tender, chewey center. I think my grandchildren will approve. The batter is perfect, no changes necessary, take it from a cookie perfectionist. As stated in the directions, if you want a more traditional looking one, as pictured, simply chill the dough. I believe for storing purposes, as I make many for trays, the thinner are better. Different strokes for different fokes!

Little frustrating…should’ve read the reviews before making these. Definitely on the tart side, I would probably do 1.5 tsp instead. Also, this is an all butter recipe. Should’ve gone with a half butter half shortening recipe. These came out way too flat. Finally, the bake time. My oven heats pretty accurately and 10min wasn’t enough time. Hard to tell because of the sugar and cinnamon covering (which, btw you can cut the ingredients in half. I had so much extra). Very disappointing. Wasted everything.
These did not turn out very well….I think the dough definitely needs to be chilled.

Very tasty cookie! I did however have to cook much longer than the recipe stated. They were raw at 10 min even after letting them sit on the pan. I cooked for maybe 5-6 more minutes. I have a 2 year old gas oven. I also found that the sugar in the cinnamon &sugar mixture did not stick well to the dough so I had to sprinkle some on top after baking. Only the cinnamon was sticking. Great flavor cookie! Just cook a bit longer depending on your oven.

Other recipes use 1/2 the amount of butter but also include the same amount of shortening. This recipe uses all butter, which should make the cookies more flavorful (depending on the type of butter used ( I suggest K*gold ) but the butter may flatten the cookie during baking more than if shortening is used.

These cookies taste great, but are totally FLAT! They aren’t at all puffy like in the picture! I read up on why my cookies didn’t puff up and all the other recipes I looked at called for chilling the dough before making them! And NOT chilling the dough was the main reason given for their NOT being puffy! I’m very disappoined ! For that reason I can’t give this recipe any more than 3 stars!
We have a whole section in the post that talks about chilling and not chilling. We prefer not to chill, but if your cookies are super flat, it’s probably because your butter is too soft. We use just softened butter. If you use that in this recipe, then the cookies do not turn out flat. If you like your cookies to be more puffy, then you can chill the dough for a bit. Again, you can look at the section above that goes into more detail about chilling.

I love the recipe, especially because it’s an all butter one. I am new to snickerdoodle baking and in spite of having tried a few times, I’ve had a couple of problems. Not the taste, nor the texture. My cookies do not flatten out, they’re still round after baking. Also the bottom of them is very dark, looks burned, not something you could serve to guests. Does not taste burned but it they are black at the bottom. Any suggestions? If so, many, many thanks.

They’re currently in the oven- and I’m slightly disappointed with the way they’re shaping. I might have used too much butter, but I know for sure I made the cookie balls too big. They’re currently WAY too doughy and are really flat. I’m a little disappointed, but I’m gonna try to reshape them with a cup and see how that turns out. Hoping it’ll taste better than it looks 🤞🏽
They’re so good!!! I added a bit of cinnamon sugar on top, and they came out more delicious than I expected them to! I had to bake them for half an hour, but they’re really tasty!

They freeze great!! When ready to eat, just set them out to thaw for a couple of hours and they taste fresh as can be.

So I only used 1/2 cup (1 stick) of butter and my cookies came out incredible. But I’m seeing the recipe calls for 1 cup meaning 2 whole sticks! I’m thankful I misread it. Perhaps some of the negative comments I’m seeing could be about that? Because looking at the recipe a second time, I’m shocked it calls for that much butter.

That’s a pretty good basic recipe to start with. I add a few ingredients to make it my own, but it’s light and fluffy when I pull them out. I add some powdered ginger, nutmeg, and cinnamon to the dough, and a little more nutmeg to the coating. It makes it nice with Chai tea. Wonderful recipe! Thank you!
I’ve used this recipe several times, and it makes a really good cookie! My only critique is this…I always have to add about a 1/4 cop of flour to the dough, otherwise it is too sticky to work with.
This is my go to snickerdoodle recipe. I have made them so many times for all different occasions and they are a hit each and every time. I prefer a softer, thicker cookie so I usually chill the dough for 1-2 hours before rolling in cinnamon sugar and baking (add a few minutes). Also, I often make a double batch and keep the extra dough in the freezer for essentially fresh warm cookies on demand 🙂

Easy as pie, but there is an important step missing in the directions. I added the flour mixture to the wet mixture all at once. In the directions, it was omitted. There are two lines for the sugar/cinnamon coating.

I’m so frustrated. I tried an amazing chocolate chip recipe yesterday that turned out perfect. I should’ve just went with that one and changed it slightly for snickerdoodles. This recipe misses a whole step (luckily I bake often and just did my usual). But with this bake time these cookies just don’t cook. They’re still batter on the inside. I’ve never had this happen before.
step #4 says to add dry ingredients to wet ingredients.

This is a great recipe. Just remember you mixed dry ingredients then set aside, so remember to add them to your butter-sugar-egg-vanilla mixture before scooping dough out 😵😵😵😄😄😄😄I’ve enjoyed Little Luna recipes many times so knew what to do

I’m making these as I review this recipe. I made my balls large because I like a bigger cookie so I bake them longer l4-15 mins, first batch came out very flat but soft and tasty, I raised temp to 360 and 2nd batch came out perfect puffy with crispy outer and chewy soft inside. I did put dough in frig only for only 10-15 mins and keep in there while baking.
This was a great recipe. I’ve been making snickerdoodles since my college days back in the ‘70s. This is one of the better recipes I’ve come across.

There is no step in your instructions to add the dry ingredients to the butter/sugar mixture. I mean, it’s obvious you have to do this but for someone who isn’t really a baker it might confuse them. Also, step 4 & 5 are the same instructions in different words. Same with steps 6 & 7. Just thought you might want to update your instructions. My cookies are in the oven, my house smells like HEAVEN 🙂

Baking at a higher temp, 400 degrees, will yield a puffier cookie. I just tried it after my first batch in the oven at 350 came out very thin. The 400 temp cookies came out much thicker!

Love these cookies!! They are so soft & yummy. Even friends who aren’t big fans of snickerdoodles loved them!
I love the taste of butter in recipes, but my husband is dairy intolerant. Can your Snickerdoodle cookie recipe be made with margarine? And how will that affect flavor and appearance?
Let me start by saying snickerdoodles are my husband’s favorite cookie. He gets them a couple of times a year. Every time I make them I google something like “best snickerdoodle recipe”. I will never google this again; this one is it. Reading the reviews, I was worried about some people getting a consistency of cake batter, so I did use the 13.5 ounces of flour, which worked perfectly. I also decreased the vanilla to half a teaspoon (just my preference).
I did some experimenting with baking them. The first batch, I rolled the cookie dough as instructed and baked. They were flat, but tender and delicious. For the second batch, I refrigerated the dough in the bowl for about 20 minutes before rolling the cookies. These were a little taller, but again, tender and delicious. And on the third try, I rolled the cookies, tossed them in the cinnamon- sugar, and then refrigerated them. This produce cookies that looked exactly the same as the previous method. With all three of these methods, my cookies came out with an even dusting of the cinnamon-sugar. For my final try, I rolled the cookies and refrigerated them. When I removed them from from the refrigerator, I rolled them in the cinnamon-sugar then baked them. This gave me the crinkle finish in the cinnamon-sugar that I was looking for.
My favorite (looks wise) is the last method, but no matter how I baked them they had great flavor and texture. MAKE THESE COOKIES.
I followed the recipe to the letter. They are too flat but taste good. I wanted them to look like your photo but that’s not the case😢
I have always had bad luck with snickerdoodles for some reason. So I made a test batch (12 cookies) and they were perfect. So then I made 50 of these!!! And they were gone in 3 days, everyone loved them. So soft and buttery, but still crunchy and chewy.
I just made these and they are so flat, like snickerdoodle chips. I wish I could show a picture. What could I add to keep cookie shape and not spread and flatten?
Made two batches and my husband took some to work and so did I. Everyone loved them. Came out perfect!

I made these with my homemade cinnamon vanilla extract. These are awesome! No cake batter here!! Love this recipe!! I weigh my flour, 2 3/4 cups in grams is 344 grams. My dough was perfect!

I just made this recipe and I saw that someone else had the same problem as me, with the batter coming out like cake batter. I know you wrote something about the altitude and I live in a valley. I tried adding more flour and it still didn’t work. But the taste is great.
I’m planning to make this recipe tonight, if I use your substitue for cream of tartar: 1 teaspoon baking soda with 2 teaspoons baking powder, am I still adding the additional 1 teaspoon baking soda. So a total of 2 teaspoons baking soda?

I used half stevia and half coconut sugar. YUM. I kept my dough room temp and did not smash them they had such an airy texture. I am normally not a fan of snickerdoodles!

Tried this recipe 2 x back to back. The dough turned out like cake batter both times (had to add flour which changed the texture & look of the cookies). I make cookies. Lots of cookies. This one stumped me.

I made these cookies recently and they are insanely good! I made them into mini skillet cookies with caramel and vanilla ice cream and I’m now having to make a double batch almost every week 😂

Can you use softened brown butter?
I have never tried using that, but I’m sure it would taste delicious! Not sure how the texture would be. You’ll definitely have to let us know how it turns out if you do try the cookies with brown butter.
There is a typo in the instructions #5. It says to mix together cinnamon and cinnamon. 🤨 It think you meant to say “sugar” and cinnamon.

Hi! I adore this recipe, but for the sake of beginner bakers, you may want to correct the small typo in your instructions that say to combine 1/3 c. cinnamon with 2 tablespoons of cinnamon.
I believe there is a miss print.
1/3 cup of sugar to mix with cinnamon

You’re right, they are the best! I won over my gluten-free friend by substituting the flour 1:1 with almond flour. Understandably, they flatten something serious, but are delicious no less. I’ll sometimes add more almond flour to “bulk it up” a bit, but do you, as a more knowledgeable baker than myself, have any suggestions? I’m considering adding ~1/4 coconut flour to balance moisture, or maybe adding another egg?
I followed your recipe to the letter and the cookies did not hold their shape, collapsed and spread all over the baking sheets. Must be the altitude? We are at 6900 feet

Yes, you can!
You bet! I like using unsalted butter because then I can control the amount of salt in the cookie, but you can certainly use salted and then either omit or reduce the amount of salt the recipe calls for. Hope you enjoy the cookies!
these are amazing i used a light baking sheet which made thinner cookies and a dark baking sheet lined with tinfoil which made them thicker and they were all perfectly cooked after 8 minutes

Followed this recipe exactly as written. Rolled out big dough balls and double dipped in cinny-sugar and then chilled in fridge for about 30 minutes while the oven heated up. Baked for 8 minutes on conv bake. They are AMAZING!! Perfect thick and round cookies, chewy on the inside, crisp on the outside. Thank you for another yummy recipe!

I’m wondering what I did wrong because the inside of the cookies had hollow pockets even though I used a thermometer to make sure the oven was ok and followed the recipe? Thank you for your help, they still tasted great though lol.

Most recipes include the total amount of an ingredient, indicating how it’s divided on the same line. Didn’t notice that you have sugar listed in your ingredients twice. As a result, I used way less sugar than I should have, and they did not turn out well.

it’s listed twice separately because it’s not needed all together. And it’s also not like the second part is hidden, it’s labeled under the “sugar cinnamon mixture”. Putting all the sugar together wouldn’t make much sense since not all of it goes into the dough.

Oh noooo, After just leaving a 2 star review, I realize I forgot to add the baking powder. Please disregard my previous review! Duh! No wonder the cookies spread out all over the pan and the texture was poor! So sorry!

I love to try out new versions of recipes I thought I would give this one a go. The differences between my old family recipe and this are butter for shortening and oven temperatures. I mixed up a batch and baked the first sheet with disappointed results. The cookies tasted very good but the overall shape of the cookie spread all over the cookie sheet and needed much more time in the oven. (I was careful not to let the butter get too soft). I added some more flour and set them in the fridge to chill. Second batch, the same. I decided to put the remainder in the fridge overnight and wait until morning to decide what to do. I made a second batch the next morning with shortening and added my refrigerated batch to it so part butter and part shortening. I upped the oven temp to other recipe instructions (400 degrees) and baked. Much better! I finished baking and these tasted just as good and looked better than the all butter batch. They had more substance and it was evident in a side by side comparison. Just thought I would share my experience.

In the video you used 1 and a half cups of butter. The recipe says 1 cup. What’s the right one? I made these with 1 cup and they came out really thick.

How long do you keep them on the baking sheet? I took mine off to cool and they fell apart 🙁
I usually keep them on for a minute or so. Might be worth leaving them in the oven for one more minute if they were still totally gooey and falling apart? Or you could try leaving them on the baking sheet just a tad longer too.
I’ve used this recipe countless times and it is wonderful. I also find that using margarine instead of butter works and I add an extra cup of flour. The snickerdoodle is soft and cakey but has firmer outside. Everyone loves this and it is my go-to when baking for family and friends.

I made these for the first time and they appear thinner than the picture shows. Is this normal? Are they a thinner cookie and if not what did I do wrong
They aren’t a super thick cookie, but about how they look in the pictures/video. If the butter was too soft, they may have spread more in the oven to be thinner. Another option you can try if you want them thicker is to chill the dough for 30 min – 1 hour before baking in the oven. Our recipe doesn’t require that step, but you could try to that if you want them thicker.

What kind of flour do you use?
I just use all-purpose flour.
Good recipe. Have tried it twice now. The first time did not have cream of tarter so they were too flat but the flavor was spot on. Second time had correct ingredients and cookies turned out great. Not too fluffy, not too crunchy. I’m a terrible baker but these are simple and quick. Good for a novice baker like myself.

I’ve been using this as my go-to snickerdoodle recipe for the past two years and it’s always a hit! Whenever I make a batch for families and friends, it’s usually gone within the day. The only issue I’ve come across is when I halve the recipe, my cookies turn out cakier than they should. Any tips to fix this?
Yay! I’m so glad to hear that. As far as halving the recipe, you could experiment with measurements a little if they aren’t turning out the same as the full recipe. Maybe use a little less flour or increase the butter just slightly to avoid a “cakey” texture? These cookies freeze really well too. A lot of times, I will make a full batch and then put the extras in a freezer bag and pop in my freezer. They last for a few months. Then when I want fresh cookies, I pull out the bag, let them come to room temp and they taste as fresh as can be!!
The second batch of cookies is in the oven right now, but i’m not sure what exactly has happened. I put the first batch in for about 30 minutes at 350° and the cookies were barely done! They were still delicious, though, and i’m going to try to put the second batch in for less time to see if maybe i just didn’t catch that it was done or i made the cookies too big.
I hope the cookies still turned out ok for you. The only reasons I can think for needing to bake for 30 minutes would be differences in ovens… every oven cooks a little different. And altitude/humidity/weather can make a difference too. And the other thing that comes to mind is the size of the cookies. If you formed yours large, it would require a longer baking time too. I like soft snickerdoodles too, so they are still a little soft/undercooked when I pull them out and then they set up. But if you like crispier snickerdoodles, a longer cooking time would also be necessary. Thanks for giving the recipe a try! 🙂

Yes, it’d be per cookie. The facts could be slightly different depending on the size of cookie you make.

This recipe turned out really well, even though I had to substitute Earth Balance spread for real butter. Because of the Earth Balance, I refrigerated the dough for a couple of hours and had cookies that spread a bit more when baking, but that was to be expected. These cookies are dynamite, and I can’t wait to make them again for my family with real butter! Now I’m a snickerdoodle fan for life.

So….there aren’t enough adjectives to describe these cookies. I lost my recipe when I moved from Germany to the U.S. and have been looking for a good one. THIS IS IT!!!!!! Perfection! My son-in-law can’t get enough of them and my husband who says he doesn’t care for Snickerdoodles….well, I’ve caught him more than once sneaking some!

These cookies turned out so soft, chewy and with a nice rise in them. I think I made a mistake by using salted butter and the added salt called for in the recipe because they turned out a bit salty. I had a feeling I should have used unsalted but it’s okay. They still tasted great. I also made a mistake and put the sugar in with the flour mix. It’s fine because I beat the butter slightly with the egg, then added to the dry, then mixed with the beater again and had to use my hands to form into the dough. Then it was smooth sailing from there. I’ll definitely make these again with unsalted butter and make sure to mix the butter with the sugar haha! Thank you for the recipe! Even with the mistakes I still really enjoyed them!

Not only are they good, but they are relatively healthy if you don’t go crazy and eat half the recipe at one time 🙂 I always add some nutmeg to my cinnamon mixture and it adds a special something. I’d been looking for a winner for snickerdoodles for YEARS! They’re my absolute favorite cookie. And this recipe right here is the only one you’ll ever need! I’ve made these over and over…double and tripled the recipe (because, duh! 😉 ). They can be made into smaller cookies and baked for 9 minutes. They can be made into larger (3T scoop) cookies and baked for 11 minutes. Always perfect. And they stay soft for at least a week or more. (The only way they last that long is if I make a huge batch, because they’re just THAT good!) So go ahead, and print this one…laminate it or put it in a sheet protector, because it’s the last recipe for snickerdoodles you’ll ever need.

These cookies were amazing I’d rate it 19/18 because I accidentally can’t math and made 19 cookies instead of 18 (Cut the recipe in half).
I’ve never made snickerdoodles before, or really cookies at all. I’ve baked many things but never cookies(outside of premade dough mixes) until today. Freaked out because they rose a ton.
For anyone that didn’t know, they’re gonna look super thick fresh out of the oven, they’ll flatten more while they cool.
These cookies were amazing I’d rate it 19/18 because I accidentally can’t math and made 19 cookies instead of 18 (Cut the recipe in half).
I’ve never made snickerdoodles before, or really cookies at all. I’ve baked many things but never cookies(outside of premade dough mixes) until today. Freaked out because they rose a ton.
For anyone that didn’t know, they’re gonna look super thick fresh out of the oven, they’ll flatten more while they cool.

Pillowy centers with crispy centers and the perfect balance of sweet dough with a hint of salt. Amazing. I added some raw sugar to the cinnamon sugar mixture for added texture.

Super easy to make and are not greasy like some recipes. Great butter to flour ratio on this one! Super soft without falling apart. We made ours a bit bigger so had just shy of 3 dozen. One pan we left as balls, one we slightly flattened before the oven. I liked the pan we left as balls best.

Yes, you can chill them as long as you’d like. Around an hour would be plenty of time to help the dough set a bit.
this is my go to recipe for cookies.. but instead of just going ahead making them in to balls right away. i put the mix in my freezer for about 10 minutes to help harden the dough a little.. helps with rolling the dough in the cinnamon sugar..

Can you freeze the dough to these cookies instead of freezing them baked?
You sure can! Place the cookie dough balls into a ziploc bag and place the bag in the freezer. You can freeze cookie dough for up to 3 months. 🙂
Best snickerdoodles ever! These are my husband’s favorite cookies and my sister would make them for him by ive never been a confident Baker. But this recipe is foolproof! Hubby and I made them together and he says they’re delish! Crispy edges with chewy middle + the tang of cream of tartar… this recipe is a keeper 🙂

Recipe forgot to add vanilla when creaming the butter & sugar! Cookies are delicious just remember to add that vanilla!
I’m so glad you enjoyed them! In this recipe we add the vanilla at the same time we add the eggs in step 2 but it would also work to add the vanilla when creaming the butter and sugar as well. Thanks so much for sharing!
Can you substiture margerine for the butter?
Sure! It does change the texture though. For recipes that call for softened butter, swapping in margarine may change the texture – cookies will generally spread out more and be less crisp.

This is the first time that I have ever posted a comment on a recipe that I found on the computer. This recipe was so easy and I got exactly 36 cookies. I have never flattened the dough ball before baking, they look just like the picture. I also experimented and filled two trays of the dough and then rolled each of them in the cinnamon/sugar mixture. I found this to be much easier on the timing. I am curious if you can make this recipe with salted butter, I don’t always have the unsalted in the freezer.

These were very good. Soft and chewy. It took my cookies 10 mins in oven. Only added about 4 shakes of nutmeg, ( only because I like a little spice), and they were perfect.

I made these, and while they were pretty straight forward, the batter came out a bit sticky even after I added an extra 1/4 cup of flour. I had to use a batter scoop instead of my hands to roll them, and then had to kind of sprinkle the cinnamon-sugar on top (which is not ideal, but it works). They tasted amazing however, so that gave them a few points back.
Did you try sticking them in the fridge? Sometimes, when my dough is sticky, I will stick it in there. It seems to help. Thanks for trying them!
They came out looking more like biscuits but pretty good! The recipe is easy to make and is pretty straight forward. They don’t look a whole lot like the pic but at least they taste OK. This is a good, trustworthy recipe. Would recommend adding more cinnamon than called for for the sugar and cinnamon cover.

They are delicious. I thought they had a little too much cinnamon, but that is just my preference. Don’t be alarmed that they don’t look ready when you take them out of the oven they will deflate and sturdy up as they cool.

There are a few reasons cookies might spread more…over-mixing the butter, sugar, it might need a little more time in the fridge, & google has a couple more reasons. Not sure if those were any of the reasons, but I hope that helps!
Hello! I just quickly wanted to step in and give a tip. If you would like thicker cookies add in about 1-3 tsp of cornstarch to your dough. This guarantees success for scones and cookies. Good Luck!

I just made snickerdoodles for the first time using your recipe and they turned out great! My friends love them so I put some in a cute container and left them on their doorstep for Christmas. I baked mine for 11 minutes because my oven sometimes likes to underbake things, but next time I’ll follow your advice and bake for a shorter amount of time. Do I have to use Cream of Tartar? If I do, are there any possible substitutes?
If you aren’t using it, you could substitute with lemon juice or white vinegar. 1/2 teaspoon cream of tartar equals 1 teaspoon lemon juice/white vinegar.

I have tried to post this rating four times and my phone keeps feeling. But they are so good I keep going back to the website and trying again because I just have to see how good these are! Do you know how snickerdoodles sometimes we will get an aftertaste when they have like cream of tartar.? These don’t do that. I would buy these anywhere at any bakery

This is by far the BEST snickerdoodle recipe I have made. I love it. These are my favorite cookies and I made these for family while pregnant (I was craving them) and they were a huge hit. Stayed soft for days. My problem now is that I am dairy free for my little one and I would love to make these but I’m scared to try it with plant based butter. Made these tonight and they came out so good. I had halved the reCipe as i onky had 1/2 cup butter. Was able to make 12 large cookies. Very yummy. So soft snd chewy. This is the third time im making snickerdoodles and i think this recipe may be the Best so far.

It is so hard to know. There are many reasons a cookie turns out flat. But, for me it’s hard to know. I would google “why my cookies are flat” & see if any of those things match with what you did/used.

IF I USE SALTED BUTTER DO I STILL ADD THE SAME AMOUNT OF SALT LISTED IN YOUR RECIPE? We love these Cookies! Last time i made em i was told tHey were “bomb” and Am constantly asked to make again and again. However i was going to get ready to make some today and discovered I only have salted butter On hand. Trying to avoid going to the store.
I haven’t used salted butter, but you can maybe use 1/4 tsp instead.

These are really good! Mine weren’t thick and fluffy like a chocolate chip but I don’t know that snickerdoodles usually are. They spread out and are the perfect thickness for this type of cookie. Definitely a recipe we’ll keep!

Super yummy! I’ve tried SO many different sNickerDoodle recipes in the past and they all go flat, but these puffed up perfectly. I acCidently added An extra half cup of flour (always look over the recipe before DuMping flour in, whoops), But they ended up total perfection! Will definitely be making again. I was weary due to some of the comments stating the dough was too soft, but I Didn’t have any issues at all and the whole family raved over them. I am wondering if maybe some who had issues used melted butter or butter that was too warm. I made sure mine was just at room temperature because I was worried about it. I also sprinkled some extra cinnamon into the batter itself. So yummy!

These tasted amazing. I gave 4 stars simply bc mine spread out so much and look more like a snickerdoodle crackle cookie. Lol I’m not sure what I did wrong, I know it’s not make baking soda bc all my other cookies I made today came out. Any tips?
Hmm..if all the others turned out, I’m not really sure. They are a pretty flat cookie. Sometimes, over mixing might cause that or using margarine, instead of butter. It’s hard to know. I am glad you tried them & liked the taste!

tHESE TRULY are the best snickerdoodles! And for good reason. This tried and true recipe has been used for generations. some know it by the name Mrs. Siggs Snickerdoodles. You simply cannot beat this recipe. And, regarding the question of “is there a substitute for cream of tartar”, the answer is yes, of course there is. You can eliminate the Cream of Tartar and the baking soda in this recipe and sub in 1 tablespoon of baking powder (which is a blend of cream of tartar and baking soda). Or, you can sub in white vinegar or lemon juice for the cream of tartar, but the lemon juice will change the overall flavor while the vinegar will not. But they will give your cookies the tang they need. My one and only change is that I bake my snickerdoodles at 375 for 8 minutes. Remove from oven, leave to cool for a few minutes then transfer to cooling rack. Yum!!

This recipe is so easy and it turns out beautifuL and delicious! I softened the unsalted bUtter for 2 hours on the counter before baking, followed the recIpe which only took a couple of mInutes, and popped the dough in the fridge whIle i cleaned up/put everything away.
NO problems with the dough being runny, and it spread to form 1.5 inch cookies. Thanks for an amazing and easy Kristyn!

Busy making field meals as the guys are planting corn. I doubled the recipe, thought I had so many they would last until harvest….. they are nearly gone in two days, my son in law just told me they are the best he’s ever had. i use vietnamese cinnamon, it is potent, so i halved the amount of cinnamon for my family’s tastes.

I have made this recipe so many times. It is delicious.
If anyone wants to make a thicker cookie, whip the butter and sugar together with an electric mixer and refridgerate the dough 1 hour before rolling and baking.
Another thing I have learned is you can substitute 1.5 tsp of baking powder for 1 tsp of cream of tartar incase you don’t have it.

This is a wonderful recipe that i have used many times. Everyone absolutely loves it. The only thing that i would recommend is that you change the time ALLOTTED. It takes much longer than 20 MINUTES due to the 4+ baking sheets that you must do. Baking alone takes at least 20 minutes. Then you must factor in the time spent rolling the dough in the cinnamon sugar mixture. Besides the incorrect timing on the recipe, it is wonderful and i will continue to use it in the future.

These cookies are awesome! I’ve used this recipe for years and its the only snickerdoodle recipe i wanna use. They’re so soft and the classic snickerdoodle taste. My family loves them and always requests that I make them and I turn to this recipe every time. The only flaw I had in the beginning with making them wasn’t really on the recipe, but the dough got too sticky right after making the batch so I put it in the fridge, covered, for 15-30 mins and that was no longer an issue when it came to rolling them into balls. I really love cinnamon sugar on mine, so I’ll coat them an extra time or two in the mixture before baking them. Anyways, thank you for posting this recipe! Its super easy, no flaws that I’ve EXPERIENCED, just a great snickerdoodle cookie.

I cooked this batch in 3 different cooking times: 10 minutes made the cookies very soft and (what i thought) was a little undercooked); 12 minutes was a little drier but still moist and chewy to the bite, and 13 minutes made the cookie with a crisp edge, mildly soft in the middle. i recommend cooking for 11-12 minutes and letting them cool completely.
i would not substitute cream of tartar – it’s what makes a snickerdoodle a snickerdoodle!

When you mix butter and sugar do you use mixer for dry ingredients and mix all
Mix dry ingredients in a bowl, then cream the butter/sugar in the mixer. Add the dry ingredients to the wet ingredients in the mixer & mix. Hope that helps 🙂
I tried making this today and made it with a flax egg and vegan butter instead. It was completely flat, BUT the flavors were amazing!!! still tasted great! I’m going to try it again and try refrigerating my dough. I think my butter was too warm and it spread too much.

I searched for a good recipe for snickerdoodles and will be making yours this weekend. I’m curious how you measure the flour — do you use the spoon-and-sweep, or the dip-and-sweep method? I ask because each method will result in a different amount of flour per cup, and that could account for the stickiness of the dough that some have reported.

Lovely recipe! I made these for my english class and I also cut the recipe in half and made a separate gluten free batch (my teacher is gluten intolerant). The gluten free version is yummy too, looks exactly the same. If you want the measurements for a half recipe (i couldn’t find it on here so i made one up) then i GOTCHA:
1/2 cup butter softened
3/4 cups sugar
1 egg
1/2 tsp Vanilla
1 cup & 3 Tbsp flour
1 tsp cream of tartar
1/2 tsp baking soda
1/4 tsp salt
1 1/2 Tbsp (or 4 1/2 tsp) sugar
1 1/2 tsp (or 1/2 Tbsp) cinnamon

made a couple SUBSTITUTIONS for dietary restrictions (dairy and gluten) for our wedding dessert table and these were a major hit! traded out coconut oil for butter, and pamelas gluten free flour for the AP flour. So delicious and surprisingly, were amazing days later (normally, popping coconut oil into the recipe makes things taste stale quicker in my experience), so I create this recipe with our success!

I made this recipe – i lost my own recipe so, after making a quick google search, i settled on this one. I am happy i did! Its going to replace my own with one excepTion; i add baking powder in addition to the Baking soda. I Find that this addition keeps my cookies Soft after thEy cool.

Made these exactly as written. Did not substitute anything. They are amazing. I would def recommend refrigerating the dough for at least an hour before Baking. Mine were perfect at around 10 mins. I have a gas oven and a hanging oven theRm to make sure the temp is accurate as it does fluctuate sometimes. Anyways, i have to stop myself from Eating too many because i dont want a tummyache. I’ve never made snickerdoodles so I hope I didn’t mess this up. I assume the vanilla is added with the butter and sugar but was u suppose to remove 3 tbsp sugar from the 1 11/16 cup to use for the cinnamon mixture?
You add the vanilla & eggs to the 1 1/2 cups sugar & butter. The cinnamon is mixed with the 3 tablespoons of sugar. There are 2 different measurements for the sugar 🙂 They are so good!! I hope you like them!
I haven’t heard of snickerdoodlE cookies bEfore. But made it as our goodbye gift For a missionary who lOves TheM. This recipe is true to its word and works perfectly. However, i didn’t chill the dough. I scooped spoonfuls of dough in equal amounts and Quickly rolled them into balLs and the sugar cinamon coating. If you like soft, melt-in-your-mouth cookies, bake For 8 minutes and remove iMmediately from the pan. If you prefer soft cookies that have a bit of crunch, bake for 10 mInutes and leave cookies On the pan for two minUtes to crisp the bottom. Either way they are awesomely delicious! I made this just now and they are absolutely perfect! I lost my recipe a while back and I was so happy to find this one. These were my father’s favorite cookies. I used to make them for him, so when my son asked me to make some today…of course I said yes! For those who are wandering about cream of tarter…it really is best to use it. You can find it in any grocery store. It really isn’t a snickerdoodle without the cream of tartar. Follow the recipe just as it says and your cookies will be perfect. This is the best Snickerdoodle Recipe I have ever tried. First of all … the smell they make is just amazing. My house smells wonderful for a few days after the cookies are all eaten! They ship very well and arrive fresh and intact 48 hours after baking. Your college kids will appreciate you for a tin of these cookies.
The title doesn’t lie. These really are the BEST snickerdoodles! They are so soft, with a little bit of crunch when you bite into them from the cinnamon & sugar. I like to slightly underbake them, so about 6-7 minutes cooking time, but that’s just a personal preference. I’ve also made them substituting shortening for the butter (for a dairy allergy in the family), and they turn out perfectly. The recipe really is so easy and fool-proof. My 8-year-old makes them by herself, and all my kids love rolling the balls in the cinnamon sugar. Thanks for the amazing recipe! It’s a family favorite!

Since I found this recipe I make these cookies all the time w/o cream of tarter substituting with lemon juice! I use this exact recipe but put in 4 tsp lemon juice instead- with my butter/sugar. I just made them today and put in 6 tsp by accident but I think they’ll still be great! They are so soft and delicious.

Is the ratio of cinnamon to sugar correct? 1 T sugar to 3 T of cinnamon seems a bit strong on the cinnamon. I made these with 3 T sugar and 3 tsp cinnamon because I was reluctant to try your proportions. Excellent cookies, btw!!
I use your recipe everytime I make snickerdoodles but I always have to make a double batch because a single batch just goes to quick around my house. Everyone just loves them.

This recipe was so fun and easy to make, considering I already had all the ingredients! I halved the recipe (since 48 cookies is a lot) and I don’t have an electric mixer, so I mixed everything by hand, but the cookies turned out great and I received so many compliments from my friends. This cookies were so easy to make. The texture was perfect. I did 8 minutes cook time. They turned out delicious, soft and chewy. I didn’t have cream of tartar so I used lemon juice. I’ll definitely be making these again in the future.

After reading many of the comments, I was scared that the dough would be too wet and my cousins wedding would be littered with store bought snickerdoodles. THANK EVERYTHING THAT IS HOLY!!! Not only did these turn out, they turned out perfectly!! I had to triple the batch, then make one more single batch, because my husband, kids, mother, and I all ate so many as I was baking, there weren’t enough for my cousins wedding!!! These are the best cookies I have ever made and I followed the recipe exactly as written. Snickerdoodles are my all time favorite and it has been years since I’ve had a good one. These are perfection. I don’t know what all the fuss is about owning a small jar of cream of tartar on here, easy to get at any store in spice section. I know substitutes exist but ???? heavens, just get the dang stuff and make this recipe and let your taste buds be happy. Easier than all these silly arguments about oh, but I used this instead… who cares?! Just make this recipe as it’s stated. If an amateur baker like me can make this level of perfection, then the recipe speaks for itself and you are all just jealous you didn’t write it!!! Get your own blog or make these cookies as written! No changes needed. Perfection level: Completed. They are THAT good!

I am sorry they did. I am not sure what happened either, because they are usually soft. I know sometimes if my ingredients aren’t fresh, that makes a difference.
I made them vegan and added a small amount of apple sauce to help with binding.

This snickerdoodle recipe brings back of memories of being a kid. First time I followed the recipe exactly, made them a second time and added a full teaspoon of cinnamon, definitely changed the recipe from a mildly cinnamon cookie to one that is super cinnamon. I should note that I use a high grade, freshly ground cinnamon of Vietnamese origin.

These are very good! True to the name they are soft and chewy.
I used a cookie scoop (size40) to form the dough and had to double the cinnamon sugar mix in order to coat each one well enough.
My batch made 27 cookies.
I think next time I will add another 1/2 tsp of cream of tartar to see if it ups the tang a little.

So, I won’t claim to be some amazing baker. I’ve only recently really gotten into it. When I use a recipe, I like to scroll through the comments just to see anything that could potentially make it better or any issues I could come across. I made the first few batches of these and they came out PERFECT. They taste AMAZING. Toward the bottom of the bowl of my stand mixer, I noticed there appeared to be some egg that hadn’t been mixed well. When I made those cookies, they spread out flat like pancakes. So, a lot of these commenters saying their cookies were flat, it’s possible the egg wasn’t mixed in well. I actually might try this recipe with less egg. But again, WONDERFUL.

Yummy, the best. I’ve been using this recipe for many years. It’s in the Farm Journal’s Great Home Cooking in America. It probably was first printed in the magazine.. The only difference is that my cookbook calls for 1/2 cup butter, 1/2 cup shortening.

These turned out great! I substituted 2.5 teaspoons of baking powder for the cream of tartar AND baking soda. I also refrigerated the dough overnight. They made about 4.5 dozen smaller sized cookies. Thank you for the recipe!

I misplaced my copy of our family recipe and my mom didn’t answer the phone. I went to Google to look for a recipe that looks right and I’m pretty sure this is exactly the same as our family recipe! I think the ONLY difference is that there was a little hand written note to use 1/2 cup butter, 1/2 cup shortening instead of a full cup of butter. I’m not an experienced baker, so I’m not really sure what difference that makes.

The recipe was amazing only one issue using the suggested measurement of 1 inch balls it doesn’t make anything close to four dozen it makes a little under two dozen so be aware that if you want to make four dozen you may need more of some or all ingredients.
If this isn’t the exact snickerdoodle recipe it’s darn close. My mom’s great grandmother’s recipes were hidden from me when my mom passed last year. I am so glad I came across this one. Cream of tartar is the most important ingredient. Without it all you have are sugar cookies.

Cannot see my comment anywhere. Basically, I love the recipe, the cookies are so moreish! But the problems I encounter is that they don’t flatten out so I have ‘ball’ cookies. Also, the bottom of them are very black, look burned, don’t taste it but I cannot serve guests with burnt looking cookies. Any ideas? I’d be very grateful for any suggestions. I’ve tried a plain baking tray, also foil covered and greaseproof paper but it makes no difference to the bottom of the cookies. Any suggestions would be very welcome.

I wouldn’t keep it in there too long, if it’s more than a day or so, I’d just freeze it. I like to make them right away, so I haven’t tried keeping it in there more than half a day.
I just made these for my daughter’s 3rd grade Christmas party at school. But instead of rolling in the Cinnamon and sugar mixture I rolled in colored Christmas sugar. Turned out great!

Hi Help ……I just made these and the bottoms all burned. I baked for 10 minutes and I made mine 2 inches with ice cream scoop. I think it was the sugar /cinnamon mixture on the bottom that burned but I noticed you rolled yours all over with the same mixture I baked on parchment ungreased at 350 what did I do wrong?
Sounds like you did everything right. I’m not sure why they burned. I do know that all ovens bake differently. My oven gets super hot, so I never leave mine in for the time it suggests or it does burn. Trying looking at them at 8 minutes & see if that helps 🙂

I added a bit more flour as some have said this initially comes out like sticky gooey scoop it with a spoon. But about half a cup more of flour made it easier to roll up. Otherwise delicious and super soft.

Got up this morning on this rainy day, decided to hunt for snickerdoodle. Just took my 2nd batch out the oven. These are really soft and chewy just how I like them. Amazing taste. Just the right amount of cinnamon. My 3yr old son said “wow mommy what kind of cookie is this”? I hope they stay fresh that is the trick of how long they will last. Really so far in love with this if I have to bake cookies and serve them while nice and warm I will do so.. lol cause these were super great.

I started baking cookies around age 8, and of course they were snickerdoodles. My sister is 5 years older and always wanted me to make cookies for her, so I probably made snickerdoodles 2-3 times a week for the next five years. Of course I new the recipe by heart. As the years go by, the memory goes as well. I am so looking forward to making these cookies again. I made these today. Bought new cream of tartar. New baking soda. My cookies taste amazing BUT are as flat as pancakes. Oven temp is accurate. ?
Yes it is accurate. How big did you make them? I know the bigger, the more flat they may turn out. Sometimes, mine turn out more flat than other times.
I make these A LOT!! We love them! I made a cheat sheet with 1/2, whole, and double recipe so I’ve got it covered for a quick batch or a bunch, lol.
Tried this recipe; AMAZING! I added 1 1/2 tsp vanilla to the dough, and added a couple dashes of nutmeg and ginger to the sugar coating. Just for some extra punches of flavor ????

This is the Best Recipe I’ve tried for these. I had to adjust a bit as I did not have all the ingredients.
I made 1/2 recipe:
3 oz. European Butter
1 oz. Unrefined Coconut Oil
1 lg. farm egg
3/4 cup mixed organic palm sugar (ground in my coffee grinder)
1 2/3 cup unbleached flour
2 t. baking powder
1/2 t. organic salt
mix wet ingredients, add by spoonsfull the dry ingredients. Place in fridge for 30 min along with pan and parchment paper.
mix 2 T ground palm sugar, 1T Turbinado sugar, 1T cinnamon. Roll large spoonful in palms and drop in measuring cup with the sugar/cinnamon mix. Put 8 on large pan rows of two and press gently with large fork. Sprinkle with Pink Himalayan Salt. Put in oven for 10 min. 325 degrees.
Here they are, soft, yummy, melt in your mouth.

These are fantastic all the way around: easy to make and delicious. I substituted 4 teaspoons baking powder for the baking soda and cream of tartar. I also let my dough harden in the fridge before trying to roll them out. Thanks for the recipe!

Absolutely amazing! Made them for the FAM, turned out as a hit!!! The dough was very sticky when rolling it into a ball but it was all worth it! I didn’t stir together the cinnamon and the sugar but used Cinnamon Sugar found at Walmart and made it a lot easier when you are rushing! Some people don’t use cream of tartar but I recommend using it because you are using 2 eggs.

I use almost same recipe except I add 1/2 Cup flour, reduce salt to 1/4 teaspoon,use 3 Tablespoons sugar, 3teaspoons cinnamon. I also add 1teaspoon vanilla when I add the eggs. I do not remember where I got my recipe either!

These were so good and a hit right out of the oven. I followed the recipe to a ‘t’ and made almost 6 dozen. Plus had to make a second batch of the cinnamon sugar. Also, there is no mention in the recipe as to how long to let sit on the baking sheets after they come out of the oven. Thankfully I’ve made enough cookies in my lifetime that I let them cool a few minutes and then removed. You might want to add that at the end of the recipe. Otherwise, the ingredients are spot on and cook time was pretty much right on as well.

These were delicious and so easy to make! They are how I remember Snickerdoodles as a kid buying from a bakery. I cut the recipe in half because its just the two of us, but they were the right consistency no sticking on my hands. They rolled easily and taste oh, so good! This will be a keeper!

Any tips for high altitude? I’m in Utah and my dough was sticky.. do I just add more flour?
I know that higher altitude usually means it needs to cook longer, but I’m not an expert on high altitude cooking. Maybe a little more flour would help too. Hope that helps! Good luck!
My Granddaughter LOVES snickerdoodles. I am doing the deserts for her bridal shower. I was thinking of making these cookies, roll the dough and cut into heart shapes. Her wedding colors are going to be Black and Gold. I was thinking of icing them in dark chocolate and write Mr. & Mrs. on them with a gold icing pen. Do you think this will work…would love your opinion,
I am sure the heart shape would work, but not sure about the icing part. I have never iced these or any snickerdoodle. I think it would change the taste for sure, but it’s totally up to you, to try. Maybe you can try it on one or two & see what you think? Good luck!

I followed the recipe exactly and these are fantastic! My yield was 4 dozen cookies and it’s killing me because although I had to sample ONE (for quality control. of course!) the rest are sitting on the counter to be taken to an event tomorrow. I wonder if people who are having issues with the sticky dough are also baking in humid conditions or maybe at a different altitude. Both of those things can affect the dough. I made these cookies yesterday and my three grandsons didn’t stop until they were all gone. They love snickerdoodles but this is my first time making them from scratch. Wow! These are fantastic!! I didn’t have cream of tartar so I listened to some of the previous comments and used 2 tsp of baking powder i substitution of the cream of tartar AND the baking soda. Everyone loved these – probably the best snicker doodles I’ve had!

Great recipe. It could possibly be my oven, but I found that with this recipe, I needed to heat my oven to 375 and bake for 11 minutes.

My great grandma was known for her snickerdoodles. Sadly, no one knows where the recipe is. Did a search and decided to make these this morning. Delicious! The cream of tartar can be adjusted for those who don’t care for it. The first batch I used as directed. Second batch I decreased by about 1/4 tsp. Also, I believe the people having issues with the dough being runny may have used melted butter instead of softened. We keep our house cool in the winter so my butter didn’t soften well. I mixed it with the sugar in a metal bowl and then placed the bowl in the sink with hot water. I was able to melt just enough to make the rest soft and it creamed right up with the sugar. It’s a fairly sticky dough but not difficult to work with. Thank you for the recipe! I’ll definitely be using again (until my great grandma’s recipe is found!)

I made the cookies today and they were a hit with the class. I measured 13.5 oz of flour and let my butter stay out 1 hour. They were perfect. I also measured the 2 3/4 c by lightly spooning it in the cup then leveling off. I measured this amount and it was 12.5 oz. A full ounce off in measurement. I always weigh out my flour on the scales.

We all measure flour differently. My kitchen scale came with a chart of ingredients and the measurements in ounces. 2-3/4 cups of flour is 13.5 oz. I’m planning to make this recipe in my Senior Cooking Class this Thursday.

Hi, I love this recipe and have made it several times and they always turn out great. But today they spread out and are really flat. Any suggestions of what could cause them to go flat? Could butter being too soft or over mixed be the culprit? Or maybe my baking soda is too old?
I made these about a week ago. They turned out perfect SO yummy and chewy! Then I made them again today. Did every step exactly the same and the batter was so hard to roll, really soft. The cookies came out of the oven flatter than pancakes. Maybe the butter was beat too much but I truly made them exactly the same way I did the first time so I’m kind of confused…? At least they taste great!
My MIL is a snickerdoodle freak and I only make them once a year this recipe is by far her favorite now I make them in double batches roll them into balls bake one batch and freeze the other for her to bake when she gets a craving. Major brownie for me. Thank you!

Kristyn! You nailed it with this Snickerdoodle recipe. When I saw the cream of tartar ratio I just knew it was going to be good. I have tried so many that don’t have enough of that ‘tang’ you get from the cream of tartar, or they use vanilla (which Snickerdoodles don’t need. I think you are right, this recipe is PERFECT! Absolutely! You can make a yeast dough, proof it, and when you punch it down after the 1st rise, you cut the dough into 1 or 2 inch pieces and ball them up. Put the balled up dough into a greased pan. You can make a sweet dough like a for a danish, for monkey bread (sugar and cinnamon covered dough balls) or a white bread dough for savory flavors like cheeses and herbs. I used the mixer to get a good cream mix. I learned as a young baker, creaming the butter when asked for is critical to break down the grains of sugar. When I cream by hand it’s time-consuming and hard on the wrist.
Hi, I’m not sure what I could have done wrong, but these cookies did not turn out well for me at all. My first batch was flat and too undercooked (despite baking them for the specified time), and my second batch was puffy around the edges, flat in the center, and almost hollow inside??
I had the same problem. Mine puffed up nicely but went flat as pancakes and stuck to the cookie sheet.

I think that’s where I messed up lol. I took it straight out of the refrigerator and into the mix.
As a leavening agent – replace the baking soda and the cream of tartar in the recipe with baking powder. One teaspoon of baking powder replaces 1/3 tsp of baking soda and 2/3 tsp cream of tartar.
This is from the Frugal Living website. You may want to reconsider not having C of T in your pantry. I use mine for biscuits as well as for this recipe.

Could this receipe be Gluetin Free? They sound so good I’d like to make them. I can have the rest of the ingredients, and would like to substiute an all purpose Gluetin Free flour.
Yes and Dairy Free too! My wife is dairy free/gluten free for Fibromyalgia. In general, Snickerdoodles are one of the best adaptable recipes for doing gluten free/dairy free. Made them last year and were some of the best sugar cookies I’ve ever had, even when I ate gluten.
I use king arthur flour’s gluten free flour as a substitute for all purpose flour in most of my recipes and haven’t had a problem yet. It measures 1-1 and contains everything you need for a good result

Made these tonight and they tasted great. Had one problem though, the dough was too gooey and sticky to roll so I just sprinkled the cinnamon and sugar over them. Any idea what I might have done wrong?
They should be a little sticky but not too sticky to roll into balls. Not sure what happened but you may need a tid more flour. Wish I could be more help!
Mine were really sticky too. I added more flour, but still too sticky to roll. I took 2 spoons and dropped some into the cinnamon sugar and rolled around. First dozen are coming out of oven now.
Mine were super sticky even with extra flour. Finally got baked but first batch spread too much, put second in fridge and they did better. Seems the dough should be refrigerated before rolling into balls. Some recipes do call for that. They do taste good though!

My old Betty Crocker cookbook says to chill dough…I chill it overnight. Also, I use Crisco instead of butter.

Crisco is in my recipe from my childhood. Same proportions as these. I thought everyone made them this way. If you chill your dough an hour or two, they don’t stick to your hands at all.
You should let the dough cool in the fridge and then you will be able to scoop/dip and roll easily
I refrigerate them about 10 mintures
Stick the dough in the fridge for a bit to stiffen it. High butter content cookies can get sticky if your house is a little warm or you had to zap the butter to get it soft. I’d recommend an hour chill time. After that, you should have easily manageable dough.
Lightly cover ur hands in flour before each ball i had the same issue
In my experience the biggest effect on stickiness is how cold your butter is. I haven’t tried putting the dough in the fridge, although that technique works wonders for other cookies such as chocolate chip.

good! I did need to add about a half cup more flour. Not sure if i did something wrong, but i really don’t think i did. My mixture was like cake batter goo. I wonder if maybe the eggs were too large? Worked out in the end though!

I read that baking powder can substitute the baking soda and cream of tartar. However, the amounts for each substitution are conflicting. Do you have an idea how much baking powder I should substitute for the soda & tartar? I would rather not add another ingredient to my storage.
Baking powder is Cream of tartar and Baking soda already mixed . Just a heads up for anyone wondering . I never uses any of it when a recipe says to use All purpose flour and baking soda, cream of tartar or baking powder just use straight from the packet Self Raising flour . Never had problem .
In the pictures, the cinnamon on your snickerdoodles looks so brown and rich, but in the past when I’ve made snickerdoodles, the cinnamon looks more black and is more evenly mixed with the sugar–do you have any suggestions on how I can make my cookies look more like the ones in the pictures?
I find they look better when the topping is not completely mixed. Also I would bet the oven has a lot to do with this. My oven seems to cook very slowly at 350, recipes in general take longer. I bake these cookies for 15+ minutes, although I like them a bit dry and crispy.

Laura, there is no substitute for cream of tater, none whatsoever. I see you live in Las Vegas. There are tons of stores that carry cream of tarter in the baking section, its with the spices (cinnamon, salt, pepper, herbs). I know the big chains like Wal-Mart sell it.
Yes there is you can substitute 1tsp of baking powder for every 1/4 tsp of baking soda and 1/2 tsp of cream of tarter. So it’ll come out to be 4 tsp of baking powder instead of baking soda and cream of tater. I had to google it.
The problem with this is it merely makes this cookie a cinnamon-sugar cookie and less a snickerdoodle. A snickerdoodle has that acidity that is found in cream of tartar. I suggest that if someone uses this substitution, they should add some lemon juice or vinegar to get that acidity back
Kevin you are right. No sub for cream of tartar. It gives them that tang. Baking powder or soda will not do that.

Ingredients

2 Tablespoons ground cinnamon

2 ⅓ cups (10.5 ounces or 298 grams) all-purpose flour
1 teaspoon baking powder
1 teaspoon kosher salt
1 cup (8 ounces or 227 grams) unsalted butter, at room temperature
1 ½ cups (10.5 ounces or 298 grams) granulated sugar
1 large egg, at room temperature
2 teaspoons pure vanilla extract
Instructions
For the Snickerdoodle Cookies Without Cream of Tartar
Prep the oven and pans. Position a rack in the center of the oven and preheat the oven to 375°F. Line two half sheet pans with parchment paper.
Make the snickerdoodle topping. Whisk together ¼ cup (1.75 ounces or 50 grams) granulated sugar and the ground cinnamon in a shallow bowl.
Make the snickerdoodle cookie dough. In a medium bowl, whisk together the flour, baking powder, and salt.
In the bowl of a stand mixer fitted with the paddle attachment, combine the sugar and butter. Beat on medium-high speed until light, fluffy, and doubled in volume, 2 to 3 minutes, using a rubber spatula to scrape down the bottom and sides of the bowl as necessary. Reduce the mixer to low and add the egg and vanilla and beat until just combined. Scrape down the bottom and sides of the bowl. With the mixer on low, gradually add the dry ingredients and beat until just combined. Scrape down the bottom and sides of the bowl once more, and beat on low for an additional 30 seconds.
Assemble the cookies. Use a 3-Tablespoon cookie dough scoop to portion the cookie dough into balls. Roll each in the snickerdoodle topping, covering them completely. Place the coated cookies at least 3 inches apart on the prepared sheet pans.
Bake the cookies. Bake one pan at a time for 12 minutes, or until the edges have set but the centers are still gooey. The cookies will look puffed when you pull them out of the oven, but will fall and crack into the perfect cookies as they cool. Cool the cookies on the pan on a wire rack for 20 minutes, or until the edges and bottoms of the cookies have set and feel firm to the touch. Repeat with the remaining cookie dough.
Serve and store. Serve warm or at room temperature. The cookies can be stored in an airtight container or zip-top bag at room temperature for up to 3 days.
Notes
Because this dough has a LOT of butter in it, it has a tendency to really want to stick to the bottom and sides of the bowl when mixing. For the best cookies, use a rubber spatula to scrape down the paddle and the bowl repeatedly—I like to liberally scrape things down two to three times during the creaming process (once after every minute of creaming), once after every egg addition, and finally, two more times after adding the dry ingredients (the first time after ALL the dry ingredients have JUST been added, the second time after they’ve just been mixed together).
For the best snickerdoodle cookies, be sure to cover your cookie dough balls with a LOT of the cinnamon sugar topping. But be warned: you may still end up with some of it leftover since the recipe makes a generous amount. I like to save the leftovers in an airtight container to sprinkle on my breakfast oatmeal and toast throughout the rest of the week—I wouldn’t keep it any longer than that though (because I mean… you did roll raw cookie dough in the stuff, lol).
I like to bake the cookies one pan at a time. I find that doing so makes the best cookies, ensuring that none of them have overly burnt bottoms or raw centers. However, to save time, you can bake two sheet pans at a time. Position a rack in the upper-third position of the oven, and a second one in the lower-third position of the oven. Bake a pan on each rack, swapping their positions half way through the Bake Time.
Hey, just letting you know that I made these tonight without cream of tartar at all (no substitute either) and they tasted amazing!

What makes a Snickerdoodle cookie a “Snickerdoodle Cookie”?
Snickerdoodles and Sugar Cookies are similar in ingredients, but snickerdoodles have that “tangy” flavor, which is a result of the cream of tarter.
I looked up substitution for cream of tartar and found, for every 1/8 tsp use 1/2 tsp lemon juice.
You could substitute 2/3 tsp cream of tartar and 1/3 tsp baking soda with 1 tsp baking powder. Worked great for me!

You can use baking powder but then you’d also have to leave out the baking soda
Laura, I know that I’m not the person who made this recipe, but I make snickerdoodles a lot! I don’t use cream of tartar at all. I find it doesn’t really make a big difference in the cookie. So yeah, otherwise if you really want some amazon.com is a very good way to buy it!
Lemon juice will work. Just double how much.

I wonder if they are measuring an actual cup for the dough to come out like so…. If they are, they are packing it way too tight/full. I learned a trick I haven’t seen in a while for measuring things of the sort. Say butter or peanut butter mayo just to mention a couple items. Fill a 2 cup measuring cup with 1 cup water. Fill will butter until it reads the desired amount say 1/2 cup of butter would measure out to 1 1/2 cup or a full cup would measure at 2 cups. Maybe throw a easy how to video up. Just my immediate thoughts as to how they got it wrong…. shoot I could be wrong on that too though. I made your recipe and turned out wonderful! Thank you! Very much! It is 2 teaspoons total baking powder..not 3 in place of cream of tarter..everything else the same..I love these cookies and so does my whole family.

did you cream the butter and sugar until very white and fluffy? I also noticed that leaving them in a little longer and gently placing them down when you put them on the rack to cool will help with the collapsing issue. Make sure you mix until JUST combined with the eggs and then keep a steady stream of flour going into the mixer when adding on stir. I hope that helps.
Hmmm, not sure what happened exactly but I’d try it with butter next time and make sure it’s not melted, just softened. I’m sorry you had problems. We just made these the other week again and didn’t have an issue. :/
Margarine these days has water whipped into it. It is not pure fat like butter is. That might be the difference. If you don’t want to use all butter try some Crisco. Be sure it is not Crisco-lite or one that has water added. Many years ago most margarines were all fat but I can’t find one anymore that doesn’t have water whipped into it, so I don’t use it for baking.

There could be a few reasons, not saying you did any of these, but these could affect your cookies…baking soda/powder old, didn’t pre-heat your oven, not starting with room temp ingredients..those are just a few reasons, cookies could spread or not cook evenly. Did any of these apply to you?

I tried to bake with flowers when I was five years old. If I remember right, only a squirrel and a couple of bees liked the finished product. Now, as an adult, I have found that using actual baking “FLOUR” works much better. Try and move out of the horticulture kitchen, and into the real people kitchen…these recipes will work much better…just saying.

Usually, if it’s too sticky, there isn’t enough flour or it needed to be refrigerated longer, which was not the case for this recipe. I would have added a little more flour. I hope they turned out 🙂
I wish I knew…a few reasons a cookie would be too crumbly is over baking, butter substitutes, or too much flour. They shouldn’t have, but I wish I knew exactly? Were all the ingredients fresh?

Did you press them down before baking? There are a few reasons, cookies can go flat, but I am not sure what you may or may not have done. If you google reasons cookies go flat, you’ll see the different ways. I am glad you tried them, though!

Thank you for trying them! I wish I knew. There could be a few factors that might make them dry, so it’s hard to know. I would google “why cookies are dry” & see if any of those might have played a role.
Chilling the dough should help firm up the batter. If it is still wet and sticky after chilling it for a while try adding some more flour to the dough. This should help firm the dough up as well. Hope this helps! Let me know how they turned out. I’d love to hear!

Ok I figured out my mistake…
I didn’t add enough sugar and went a little overboard with the baking soda. I made them again and they were heavenly! Definitely one of the best snickerdoodle recipes i’ve tried! 😀

Sorry to hear the directions seemed confusing for you. Here they are from the recipe card at the bottom:
-Mix together flour, cream of tartar, baking soda, and salt together. Set aside.
-Cream together sugar and butter. Add eggs and vanilla and blend well.
-Add dry ingredients to wet ingredients and mix well.
-Shape dough into 1 inch balls and roll in the cinnamon-sugar mixture.
-Place 2 inches apart on ungreased cookie sheet.
-Bake for 8-10 minutes at 350 degrees. (Makes about 3-4 dozen cookies)

Cooking time and temp were off. I had to bump my oven up and cooked 13 minutes. Unless eating raw cookie dough is your thing, then have at it I guess lol
Every oven cooks slightly different. Temperatures and altitude can affect baking time too. So it’s not unusual to have to bake cookies a bit more or less than a recipe states. The cookies do continue baking a bit after taking them out of the oven, which yields a soft snickerdoodle. Some like a crispier cookie which would need them to be cooked a bit longer. Hope you enjoyed the cookies once they were baked to your liking! 🙂

Not sure what went wrong. These turned out flat and uncooked at 10 minutes. Needed at least 5 more minutes, but still very flat. I followed the recipe exactly and I’ve been baking for 30 years.
Update: I baked the finished cookies again for another 6 minutes and the cookies are passable. Barely crispy on the outside and soft inside.
I think if you make these changes it should work better:
do 3 cups flour
1 egg
1 egg yolk
2 tsp vanilla
Bake for 13 minutes at 365F
I’d also do a touch less sugar for the dusting bowl and add another tbs cinnamon
That all should fix the consistency and flavor issues.
