This breakfast egg sandwich is so yummy prepared first thing in the morning, or made ahead of time and reheated before you run out the door (like our breakfast burritos and breakfast tacos). Either way, this egg sandwich will keep you full and energized to take on the day!

This sandwich is packed with breakfast ingredients and tasty flavors. Feel free to add or take away anything you want to make this sandwich your own. This recipe starts with an English muffin, and has sausage, eggs, cheese, and bacon on it. YUM, right??

Make Ahead Breakfast Sandwiches

These sandwiches are the perfect make-ahead breakfast.

EGGS. Start by cooking your eggs into an omelet. Fold the edges up into a square and set aside.

BACON & SAUSAGE. Cook your bacon and sausage patty separately.

ENGLISH MUFFIN. Slice the english muffin in half and toast each side. Once it’s nice and toasty, start to assemble!

ASSEMBLE. Layer the sausage, bacon, eggs, and cheese inside of the english muffin!

ENJOY! After you have assembled the breakfast sandwiches you can either eat it right away (it’s tempting not to with how delicious they smell!) or you can package them up and save for another time.

Storing + Variations

If you’re saving them for later, wrap each sandwich tightly with plastic wrap. Then put multiple sandwiches into a zip plastic bag and FREEZE them in the freezer.

When you’re ready to eat them, unwrap the plastic wrap, wrap the frozen breakfast sandwiches with a paper towel and REHEAT in the microwave, one at a time, for 1-2 minutes.

Ingredients 

  • 2 English muffins
  • 3 Eggs
  • 2 Sausage patties
  • 3 slices Bacon
  • 2 slices Cheddar Cheese sliced
  • Avocado optional

Instructions 

  • Cook eggs, omelet style with a little salt and pepper.
  • Cook sausage and bacon separately. Drain on paper towel lined plate.
  • Slice English muffins and toast. Sandwich together sausage, bacon, eggs and slice of cheese. Top with avocado if desired. Enjoy!

    great breakfast sandwich, much better than a mcsomething with rubbery sausage, etc, and avocado is not optional! but a great idea, same with chorizo, thank you!
