I have a feeling this easy Hamburger Soup will be on repeat all fall and winter long, especially because it’s so simple and the crock pot does the heavy lifting.

How to Make Hamburger Soup

VEGGIES. Add carrots and potatoes to the crockpot with water. Cook on LOW for 3-4 hours or on HIGH for 1½-2 hours.

BEEF. Meanwhile, brown the ground beef. After the potatoes and carrots have cooked, add the browned beef and remaining ingredients to the crockpot.

HEAT + SERVE. Cook for an additional hour on LOW (or HIGH for 30 minutes). Add one cup of cheese right before serving.

Let’s talk vegetables

This Hamburger Vegetable Soup is so versatile. Pretty much any vegetable can be used. The key is to add them at the correct time. Not all vegetables cook at the same rate. Celery, peas, and green beans would all be great additions.

  • Larger cut vegetables will need longer to cook so add them first. Save the small vegetables and finely diced vegetables for later.
  • Potatoes: Stay away from russet potatoes which are higher in starch and can take on a grainy texture. Stick with red potatoes, yukon gold potatoes, fingerling potatoes, or long white potatoes.
  • Save time and use a frozen bag of mixed veggies.

Recipe Tips

Serving suggestions. If Hamburger Vegetable Soup is the main dish plan on 1⅓ cup per person. As an appetizer, plan on 1 cup per person.

How to brown ground beef. Many types of meat can be added raw and cooked in a crock pot. Ground beef is not one of them. When using ground beef in a crock pot recipe, first brown it on the stove.

The best type to use for browning is 80/20 as it adds a delicious balance of flavor and texture to the dish. Ground turkey or ground chicken can be used in place of ground beef.

  1. Let the ground meat come to an even room temperature as you heat up the pan over medium-high heat.
  2. Oil the pan and add the meat in an even layer over the bottom of the pan.
  3. When the edges of the large patty start to brown and crisp up (about 4-5 minutes), use a spatula to break into sections and flip it.
  4. Stir occasionally and cook until no longer pink. Drain excess grease.

Add flavor. Just like with hamburgers, add ingredients to adjust the flavor of the dish.

  • Add onions and/or minced garlic to the ground beef when browning.
  • Garnish with sliced avocados or Bacon crumbles.
  • Spice it up with jalapenos, red pepper flakes, or hot sauce.
  • Cheese: use Pepper Jack cheese, Cheddar Cheese, or Colby Jack cheese. 

Storing + Side Dish Ideas

STORE. This Crockpot Hamburger Soup recipe can last in the fridge for 3-4 days. Reheat in the microwave or on the stovetop.

FREEZE. If you plan to freeze this soup, undercook the vegetables. Allow the soup to completely cool. Place in a freezer-safe container leaving 1-inch head space. Store for 4-6 months. Thaw in the fridge.

Reheat in the microwave for smaller portions or on the stovetop for larger portions.

Crock Pot Hamburger Soup

Ingredients 

  • 2 carrots, peeled and sliced
  • 4 potatoes, peeled and diced
  • 2 cups water
  • 1 pound ground beef
  • 1 (14-ounce) can beef broth
  • 1 (12-ounce) can diced tomatoes, drained
  • 2 tablespoons sugar
  • 1 (11-ounce) can corn, drained
  • 1 tablespoon taco seasoning
  • 1 cup grated mozzarella or parmesan cheese
  • salt and pepper to taste

Instructions 

  • Add carrots, potatoes, and water to your crock pot. Cook on low for 3-4 hours (or HIGH for 1½-2 hours).
  • Brown the ground beef in a skillet and add to the crock pot along with the diced tomatoes, beef broth, sugar, corn, and taco seasoning. Cook on low for another hour or HIGH for 30 more minutes. Add salt and pepper to taste and 1 cup of grated cheese a few minutes before serving. ENJOY!

Notes

Store leftovers in airtight containers in the fridge for 3-4 days, or freeze for 4-6 months. Reheat in the microwave or on the stovetop.

    As a substitute for ground beef, I use ground turkey and it taste fabulous! I also have a recipe for beef and cabbage, and I use ground turkey and cannot even tell that I’m not eating beef. Your recipes look wonderful and I can’t wait to try them but I just wanted to let you know about this for people that are trying to diet.

    Using taco seasoning is a nice way to help add delicious flavor to soup. It’s made a delicious and hearty meal during a rainy week. Also, I appreciated the extra info in the post as I wasn’t sure what type of potatoes were best. I ended up using red because that’s what I had.
