I don’t know about you, but I want my pancakes fluffy and big. This recipe for fluffy buttermilk pancakes is so easy and so tasty. We love our classic Easy Pancakes, but today’s version is our new favorite.

How to Make Fluffy Pancakes
Ever wonder what the secret is to making the best fluffy pancakes? I am going to tell you!
THE SECRET. Let the batter SIT for 10 minutes before adding it to the griddle.
Having baking powder and baking soda help too. But, letting the batter sit will give you the fluffiest softest award-winning pancakes ever!
DRY INGREDIENTS. Combine flour, sugar, baking powder, baking soda, and salt in a large bowl and mix together. Set aside.
WET INGREDIENTS. Whisk egg and butter into the milk mixture and mix together. Add flour mixture and whisk until lumps are gone. Let batter set for 10 minutes.
COOK. Heat skillet to medium heat and spray with cooking spray. Pour ยผ cups of the batter onto the skillet and cook until bubbles appear on the top (2-3 minutes). Flip with a spatula and cook the other side until browned.
Adding fruit. Feel free to add fruit to your fluffy pancakes. We sometimes add raspberries, blueberries, or strawberries straight into the batter before cooking! You can even add in some chocolate chips or sprinkles for a fun twist.
Tips + Toppings
Make sure your pancakes are super fluffy – just whisk whisk whisk!
Super fluffy. Extra fluffy and airy pancakes can be produced by whisking the egg whites. First, separate the egg yolk from the white. Place the yolk in the batter when directed to add the egg. Put the white in a separate bowl. When the batter is combined with all of the ingredients, then whisk the egg white until fluffy. Finally, fold the fluffy whites into the batter.
Flipping tips. You will want to make 1-2 test pancakes to make sure that your batter texture is perfect and that the skillet temperature is just right.
- Wait to flip the pancake until little bubbles appear on the top of the batter and the edges begin to turn golden brown.
- If the bottom is burnt, reduce the heat.
- Do not press the pancakes down with a spatula โto help them cook fasterโ. All that does is flatten it.
- Melted butter or cooking oil can help the pancakes from sticking to the pan.
Toppings. There are so many great options to top your best fluffy pancakes recipe. Depends on what you like most, but here are some of our favorite ideas:
- maple syrup, Nutella, jam, butter
- powdered sugar
- fresh berries, chocolate chips, sprinkles

Storing + Serving Tips
Make ahead of time. The batter for these easy fluffy pancakes can be made up to 2 days in advance if stored in the fridge properly. The pancakes made, also can last 3-4 days if placed in a Ziploc bag and stored in the fridge. We recommend placing a layer of wax paper between each pancake to keep them from sticking. Reheat small portions in the microwave or larger portions in the oven.
FREEZE. We like to place them on a baking sheet in the freezer, freeze for an hour and then stack and place them in a freezer-safe bag and place them back in the freezer.

Dumb question, but where it says “Servings: 4” does that mean it makes 4 pancakes or that it serves 4 people? How many pancakes is considered a serving/how many does this recipe yield as-is?
Not a dumb question at all. That means it serves 4 people. It’s hard to say how many pancakes the recipe yields because it kind of depends on the size of pancake you want to make. If you used 1/4 cup of batter per pancake, you’d probably get 10-15 pancakes. Somewhere around there. Enough for 4 people to have a few pancakes.
