Of all the sweets – mint is our go-to flavor! Which means we LOVE everything about this grasshopper pie!

Our grasshopper pie delivers BIG on the mint flavors! The base is a simple Oreo cookie crust (a great place to start). We fill the crust with mint chocolate chip ice cream and top it with fresh whipped cream and crushed cookies – that’s it!

Because it’s an ice cream pie it can easily be made ahead of time for a special occasion (it’s a BIG hit on birthdays).

It’s SO easy to make! Only 5 ingredients and a couple of simple steps. It’s a dessert our kids love to whip up – like our Oreo Ice Cream Cake.

Grasshopper Pie Ingredients and Substitutions

  • 1 chocolate cookie crust – store-bought or homemade Oreo Pie Crust
  • 1½ quarts mint ice cream (about 6 cups) We like mint chocolate chip ice cream but mint Oreo ice cream works too.
  • 2 cups whipped cream store-bought or we prefer Homemade Whipped Cream
  • 6 mint Oreo cookies, crushed – or 6 regular Oreo cookies and add ¼ cup chopped Andes mints
  • chocolate shavings, or crushed Andes mints
  • optional garnish – chocolate ganache, whole mint Oreos or cookie crumbs, Chocolate Syrup

How to Make Grasshopper Pie

  1. PREP. Let ice cream soften for at least 10 minutes.
    • While ice cream is softening, crush cookies in a Ziploc bag. Set aside.
  2. ASSEMBLE. Fill the cookie crust with the softened ice cream. Top ice cream with whipped cream or Cool Whip.
    • Sprinkle on crushed mint Oreos and chocolate shavings on top.
  3. FREEZE. Freeze for at least 2 hours. Remove from freezer 15 minutes before serving.
    • For easy slices, use a knife dipped in hot water.
  • Make mint ice cream by mixing softened vanilla ice cream with creme de menthe and green food coloring.
  • Freeze for at least 2 hours before serving, but it can be frozen for up to 5 days.
  • For easy clean slices, dip a sharp knife in hot water. Wipe and rewarm after each cut.
  • Use a springform pan. Press the Oreo crust in the bottom, top with ice cream, whipped cream, and toppings, and freeze. Remove from the springform pan to showcase the delicious layers.

Grasshopper Pie

With just 5 ingredients, our grasshopper pie is a minty dream come true! It's the perfect chilled treat for any occasion.

Total: 2 hours 15 minutes

Ingredients 

  • 1 chocolate cookie crust
  • quarts mint ice cream, (about 6 cups)
  • 2 cups whipped cream, store-bought or homemade
  • 6 mint Oreo cookies, crushed
  • chocolate shavings, or crushed Andes mints

Instructions 

  • Let 1½ quarts of mint ice cream soften for at least 10 minutes.
  • While ice cream softens, crush mint Oreo cookies in a Ziploc bag. Set aside.
  • Fill the chocolate Oreo cookie crust with the softened ice cream. Top ice cream with 2 cups whipped cream or Cool Whip.
  • Sprinkle on crushed mint Oreos and chocolate shavings on top.
  • Freeze for at least 2 hours. Remove from freezer 15 minutes before serving.
  • For easy slices, use a knife dipped in hot water, wiping the blade clean between each slice.
