Easy + Cheesy Crowd Pleaser
We love a good casserole at our house! There is something just so comforting and yummy about them. Plus, they are easy to make. You basically just mix a bunch of tasty things together and bake it!
This cheesy ham and potato casserole is no exception. Whether you are using up leftover Ham or bought some just for this, you are sure to love this! The potatoes are smothered in creamy goodness. The ham adds just the right amount of salt, and the cornflake topping the perfect crunch. It’s heaven.
While this makes a great side, it’s also perfect as a stand-alone dish. Just whip up a salad or veggies and maybe some rolls and you are good to go!

This ham and potato casserole recipe only takes minutes to prep!
POTATOES. Place your potatoes in a colander. Let them sit until thawed and drained.
MIX. Combine sour cream, soup, and butter in a bowl. Mix it well. Add salt, onion, and cheese to this mixture and mix until all are combined. Add potatoes and ham to the mixture and stir until all combined.
BAKE. Place in a 9×13-inch baking dish. Sprinkle on butter-covered crushed cornflakes. Bake uncovered at 350°F for 40-50 minutes.
Use Fresh Potatoes
Use 4-5 medium russet potatoes or Yukon Gold potatoes to make this casserole but they will need to be prepped a little before adding them to the casserole.
1. Peel and dice potatoes. (Leave the skin on the Yukon Golds or peel them).
2. Place the cut potatoes in a large pot of boiling water. Cook them for about 5-6 minutes or until they become slightly tender but still hold their shape. Be careful not to overcook them as they will continue cooking in the oven.
3. Drain the potatoes well and set them aside to cool slightly.
4. Use them in the recipe as directed.
Variations
Add veggies or change up the flavor in this easy ham and potato casserole with any of these suggestions:
- Potatoes. Use a bag of seasoned potatoes. I think the potatoes with bell peppers would be pretty delicious to try.
- Cheese. We used a simple cheddar cheese, but Colby jack, pepper or Monterey Jack would as would a Fiesta Mexican Blend.
- Veggies. Broccoli, carrots, peas, corn, onions, jalapenos, or a small onion make great additions.
- Meat. Substitute the ham cubes with turkey or chicken.
- No meat and fill it with cheesy veggies.
Storing Info
STORE leftovers by dividing this recipe for ham and potato casserole into individual serving sizes, place them in freezer-safe storage containers and freeze.
To make ahead of time, assemble the cheesy ham and potato casserole as directed, but don’t bake. Instead, cover the pan with plastic wrap and again with aluminum foil. Label and freeze for up to 3 months. Thaw overnight before baking.

Fantastic! We absolutely love this recipe. I’ve made several different variations and this one is our favorite! The only thing I added was a cup of raw finely chopped onion to the mix as we love onion. It adds another depth of flavor.
