BJโ€™s Restaurants is one of my family’s favorite places to eat and you can often find us gathering there to celebrate someone’s birthday. One of the reasons we love this place is its famous Pizookie. 

What is a Pizookie? A Pizookie is a cookie baked in a large circle like a pizza.

You whip up your favorite cookie dough and bake it in a cast iron skillet. The cookie is nice and crisp on the edges and deliciously gooey in the center. Then, you top it with a generous pile of ice cream.

How to Make a Pizookie

You will LOVE this easy Pizookie recipe. It whips up in no time at all!

WET INGREDIENTS. In a large bowl, cream butter, oil, and sugars. Add eggs and beat until fluffy.

DRY INGREDIENTS. Add remaining ingredients and stir.

BAKE. Press the cookie mixture into a greased 8-9 inch pan or cast iron skillet. Bake at 350ยฐF for 18-22 min. Serve immediately with a scoop or three of Vanilla Ice Cream.

Individual Pizookies

To make individual Pizookies, divide the dough into ramekins, mini pie pans, or individual pizza cookie skillets. Press the dough to about 1/2-1โ€ณ thick.

Reduce the bake time to about 6-8 minutes at 350ยฐF, or until the edges have turned golden brown and the center is still gooey.

Recipe Tips

Make it easy. For a quicker and easier dessert, grab a package of cookie dough from the store to use. 

Donโ€™t overbake. The edges should be browned and crisp while the middle is soft and gooey.

Variations

There are SOOO many ways to change Homemade Pizookies up, but here are a few of our favorites:

  • Chips. Use butterscotch chips, milk, dark or semi-sweet chocolate chips, white chocolate chips, M&Mโ€™s, or Reeses Pieces.
  • Nuts. Add nuts like macadamia, walnuts, or almonds.
  • Candy. Mix in chopped candies like Kit Kat, Reese’s cups, Rolos, or Butterfinger.
  • Sauce. Drizzle on Hot Fudge Sauce or Caramel Sauce.
  • Ice cream. Use your favorite flavor of ice cream.
  • Cookie flavor. Use your favorite cookie dough recipe like Peanut Butter or Sugar Cookies. Keep the thickness to about 1 inch and watch the bake time.
  • Double it up! Combine two types of cookie dough – ยฝ the pan chocolate chip cookie recipe and ยฝ the pan peanut butter cookie dough.

Storing Info

Make ahead of time. Prep this Pizookie Dessert ahead of time:

  • Dough: Premake the dough and keep it stored in the fridge for 1-3 days or freeze it for up to 3 months. Form the dough into a ball or log and wrap it tightly with plastic wrap. If freezing it, wrap it again with aluminum foil. 
  • Baked: Once the dough has been baked, keep the cookie in an airtight container at room temperature for up to 3 days. 

STORE. If you did not add ice cream to the top of the Pizookie Recipe, it can be stored at room temperature for up to 3 days. Cover tightly or store in an airtight container. 

Once the ice cream has been added it’s more difficult to store. Scrape off any ice cream and place the remaining cookie in an airtight container. Place it in the fridge for 1-2 days.

It may become a bit soggy due to any melted ice cream left behind, but since the middle was already supposed to gooey you may not notice it too much. 

To reheat: Preheat the oven to 300ยฐF. Place the Pizookie in a skillet or pan and heat for 4-5 minutes, or until warm.

Pizookie Recipe

Ingredients 

  • ยฝ cup brown sugar
  • ยฝ cup granulated sugar
  • ยผ cup unsalted butter, softened
  • ยผ cup vegetable oil
  • 1 egg
  • ยฝ teaspoon baking soda
  • ยฝ teaspoon salt
  • ยฝ teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1ยฝ cups all-purpose flour
  • 1 cup milk chocolate chips
  • 2-3 scoops ice cream

Instructions 

  • Preheat the oven to 350ยฐF
  • In a large bowl, creamย brown sugar, granulated sugar,ย unsalted butter, and vegetable oil. Add egg and beat until fluffy.
  • Addย baking soda,ย salt,ย baking powder, vanilla extract,ย all-purpose flour and stir. Mix in milk chocolate chips.
  • Press the cookie mixture into a greased 8-9 inch pan or cast iron skillet. Bake at for 18-22 min. The edges should be browned and crisp while the middle is soft and gooey.
  • Serve immediately with a scoop or three of Vanilla Ice Cream.

Mix and match. Make the dough and then divide it in half. You can then add different mix-ins to each section of dough before pressing them side by side in the skillet.

        I haven’t. But if you do, you’ll have to let us know how it turns out. You can also use any vegan cookie dough recipe (if you have one you know and love) and then follow the rest of the steps to make a pizookie. You’ll just bake that cookie dough in the skillet or cast iron pan.
