How to Make Gooey Butter Cookies

BATTER. In a large bowl, use an electric mixer (or a stand mixer with the paddle attachment) to beat cream cheese, butter, egg, and vanilla with a hand mixer until fluffy.

  • Add the cake mix powder and mix until combined. Chill for 30 minutes.

PREP. Preheat the oven to 350°F.

BAKE. Place powdered sugar in a shallow bowl. Scoop and roll dough into 1½-inch cookie dough balls then roll in powdered sugar until well coated. Place onto a lightly greased baking sheet.

  • Bake for 10–12 minutes.
  • Let cookies sit on the cookie sheet for a few minutes, then remove to a wire rack to cool.

ENJOY! Sift more powdered sugar on top, if desired.

    • To keep the cookies from spreading too thin while in the oven, we always chill the dough for the full 30 minutes.

      They are just okay, I agree with a reviewer below that that just taste like yellow cake mix cookies kinda on the dry side. I’ve had “Butter Bars” before that they have more of a buttery ooey gooey filling and these are not the same. Going to stick with traditional Butter Bars. I would like to try this with a chocolate cake mix though, that would be tasty.

      This recipe is fantastic as is but you can also add flavor extra. I made half plain and 1/2 strawberry. Both turned out delicious and they freeze great! In fact, I’m sitting here eating a few right now that I just took out of the freezer. That prompted me to look up which recipe I used, and it’s this one. Just wanted to say how much we have enjoyed them. Great recipe! Easy and yummy.

      These turn out exactly as yellow cake. You’d think 8oz of cream cheese & 4oz of butter would make some difference, but they don’t. If you like plain unfrosted yellow cake mix in baked rounded blobs, go for it!
