Strawberry Cake Mix Cookies

Strawberry Cake Mix Cookies use 5 ingredients to make one chewy, delicious cookie! They are a favorite go-to cookie.

Similar to our Lemon Cake Mix Cookies or Cake Mix Snickerdoodles, these Strawberry Cake Mix Cookies are chewy, easy, and delicious! Cookies from a cake mix are always a hit, like our Gooey Butter Cookies.

Easy + delicious!

We love a good cookie recipe at our house! These pink cookies are an easy favorite, perfect for a baby shower, Valentine’s Day, or just because!

These Strawberry Cake Mix Cookies are especially easy. We cut the prep time by using a cake mix, but amped up the flavor by adding in some extra, tasty ingredients like cream cheese!

With 5 ingredients and a bit of time, whip up a tasty treat, perfect for sharing! I think these would be especially yummy with a scoop of Vanilla Ice Cream smooshed between two cookies. Yum!

How to make strawberry cookies with cake mix

PREP. Preheat oven to 350°F.

BATTER. With a hand mixer, beat butter, egg, and cream cheese until fluffy. Add in cake mix and beat until smooth.

Chill in the refrigerator for 30 minutes.

DIP. Add ½ cup powdered sugar to a small bowl. Use a medium cookie scoop to scoop out dough and roll it into balls. Dip in powdered sugar.

BAKE. Place on a greased cookie sheet and lightly press the tops to flatten them a bit. Bake for 12-13 minutes. After removing from the oven, sift the tops of the cookies with powdered sugar if desired.

Recipe Tips

Cake mix. A boxed strawberry cake mix is approximately 15.25 oz. Do NOT mix the cake according to the directions on the box. Use only the cake mix powder in this recipe. 

Room temperature ingredients. Pull the eggs, butter, and cream cheese out of the fridge about 30 minutes before baking, or use this post on How to Soften Butter Quickly.

Sticky dough. The dough is fairly sticky and chilling the dough can help them roll easier. The colder dough also yields a puffy shape with a soft center. 

Easy clean up. Line the baking sheet with a silicone mat or parchment paper for easy removal and cleanup.

Do not overbake the cookies. Take them out and allow them to finish baking while they cool on the pan, then transfer them to a wire rack.

Don’t overmix the batter as the gluten in the cake mix will over-activate and cause a tougher texture.

Check for doneness. Strawberry Cake Mix Cookies are done when the tops take on a matte appearance and some cracks appear. Once out of the oven, keep them on the pan. They will continue to cook to perfection before cooling off. After 5-7 minutes, transfer them to a wire rack to cool completely. 

Variations

  • Cake mix. This recipe uses a box of strawberry cake mix but different flavors of cake mix can be used.
  • White chocolate pairs really well with strawberries. Mix in white chocolate chips, dip half the cookie in white chocolate or top with a white chocolate drizzle. 
  • Nuts. Mix in chopped macadamia nuts.
  • Frost. Top Strawberry Cookies from Cake Mix with a Strawberry Frosting or Vanilla Buttercream Frosting, and add sprinkles.

Storing Info

STORE cookie dough. Cake Mix Strawberry Cookies dough can be made, covered, and kept in the fridge for several hours before baking them.

FREEZE cookie dough. For longer storage, form the dough into balls and place them on a cookie sheet. Freeze for about 2 hours or until the outside has become frozen, then transfer the cookie dough balls to a freezer-safe container. Safely freeze for 4-6 months.

  • To bake: Place the desired amount of dough balls on a baking sheet. Let them thaw and bake as written in the recipe or bake from frozen and add 1-2 minutes to the bake time. 

STORE baked cookies. Once the Strawberry Cookies with Cake Mix have cooled on a wire rack, transfer them to an airtight container. Store on the counter for 4-5 days. (Add a piece of white bread to help keep the cookies soft.)

FREEZE baked cookies. Place a piece of parchment or wax paper between each layer of cooled cookies and freeze in a Ziploc bag for 4-6 months.
