Tater Tot Egg Bake

We LOVE a good breakfast casserole – they’re easy and filling, perfect for feeding our family.

We especially love this savory tater tot breakfast casserole packed with BOTH Bacon and Breakfast Sausage!! Double the breakfast meats mean double the flavor! And what kid doesn’t like tater tots? Cheesy potatoes are something we all can get behind.

This casserole is basically all the things you love about breakfast mixed into one pan – a little of everything all in one bite.

With just 5 minutes of prep, it’s a hearty, filling, no-fuss way to start the day with a bang!

  • Packed with flavor. It’s filled with potatoes, cheese, eggs, and TWO kinds of breakfast meat (bacon and sausage) for all of your favorites in one bite!

Ingredients

  • 10 ounces cooked sausage crumbles Add in or replace with cooked turkey sausage or ground beef.
  • 1 pound bacon
  • 1 (32-ounce) package frozen tater tots
  • 12 large eggs
  • ½ cup milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup shredded Monterey Jack Cheese or pepper jack cheese, Swiss cheese, Colby cheese, sharp cheddar cheese, or mozzarella
  • 2 cups shredded cheddar cheese, divided
  • optional toppings – green onions, fresh chives, sliced avocado, ketchup, Salsa, Guacamole, hot sauce, sour cream
  • optional veggies – Saute and mix in onions, bell peppers, mushrooms, or broccoli florets.

How to Make Tater Tot Breakfast Casserole

  1. PREP. Preheat oven to 350°F. Cook 1 pound of bacon in a large skillet and crumble it.
  2. TATER TOTS. Arrange frozen tater tots in a single layer in a greased 9×13 casserole dish.
  3. EGG MIXTURE. In a large bowl, whisk 12 eggs, ½ cup milk, ½ teaspoon salt, and ¼ teaspoon pepper. Stir in 10 ounces cooked sausage crumbles and half the bacon crumbles. Stir in 1 cup of the Monterey Jack Cheese and 1 cup of cheddar cheese and mix well. Pour over the tater tots.
  4. BAKE. Sprinkle with additional tots and bake for 40-45 minutes.
    • Take it out of the oven and top it with the remaining 1 cup of cheese. Bake for an additional 5-7 minutes.
  5. SERVE. Let stand for 10 minutes before cutting and top with the remaining bacon and green onions, if desired. Serve warm.

  • ¼ teaspoon black pepper
  • 1 cup shredded Monterey Jack Cheese
  • 2 cups shredded cheddar cheese, divided
  • green onions

Instructions 

  • Preheat oven to 350°F.
  • Cook bacon in a skillet and then crumble it.
  • Arrange frozen tater tots in a single layer in a greased 9×13 dish.
  • In a mixing bowl, whisk eggs, milk, salt, and pepper. Stir in sausage and half the bacon crumbles.
  • Stir in 1 cup of the Monterey Jack Cheese and 1 cup of cheddar cheese and mix well. Pour over tater tots.
  • Sprinkle with additional tots and bake for 40-45 minutes.
  • Take out of oven and top with remaining cheese and bake an additional 5-7 minutes.
  • Let stand for 10 minutes before cutting and top with remaining bacon and green onions, if desired. Serve warm.

    I made this recipe but made 1/2 added two eggs, cheddar and a Mexican blend. Looks delicious! 😊

        Do you cook the sausage before you put it in the casserole?

        Great question! We use the pre-cooked sausage crumbles (Jimmy Dean has some good options). But if you want to use raw sausage, yes, you’ll want to cook that up before putting in the casserole.

    Looks wonderful. Do the tater tots come out crispy or sort of soggy? Could you cook them up before to make them crispy? TIA

      They aren’t crispy, but they aren’t necessarily soggy. Just soft, more hash brown like. The tots on top have a more crispy texture though! You could certainly try cooking them up before. I haven’t tried that, but if you do, you’ll have to let us know how it turns out!

      Yes you sure can! Just make it as instructed, but store the egg mixture in an air-tight container for up to 24 hours in advance. Pour the egg mixture over the tots right before baking and finish cooking as instructed.

    One issUe i had was it bEing soUPy in the middle, not getting Done. I left iT in longer hoping it would coOk, but the outside Kept getting more done.
    Any helpful hints?

    I cook a monthly breakfast for a group of senior citizens. they love this casserole. i changed things up a bit last month and didn’t make it.     To be honest anything with “tatEr tot casserole” in the title brings some bad chIkdhood memeories of my moms recIpe. (Sorry mom) but the ingredients in this one caused me to give it a try and i was not dissApointed. It was a Perfect breakfast casserole!
