Tater Tot Breakfast Casserole is a hearty breakfast bake loaded with eggs, sausage, bacon, cheese, and crispy tater tots. It’s the kind of easy 9×13 recipe we love for holidays, brunch, breakfast-for-dinner, or anytime we need something filling for the whole family.

We love that the frozen tater tots go right in the pan, then everything gets covered with the egg, meat, and cheese mixture before baking. Let it rest for a few minutes, then top with extra bacon and green onions for a warm, cheesy breakfast everyone will want a slice of. Tater Tot Breakfast Casserole Ingredients

  • Cooked sausage crumbles (10 ounces): Adds savory flavor, protein, and make the casserole hearty.
  • Bacon (1 pound): Adds smoky, crispy flavor inside the casserole and on top.
  • Frozen Tater Tots (1 package, 32 ounces): Creates the potato base and add classic breakfast casserole texture.
  • Eggs (12 large): Holds the casserole together and make it filling.
  • Milk (½ cup): Helps soften the egg mixture and keeps it from baking up too dense.
  • Salt (½ teaspoon): Seasons the eggs and potatoes.
  • Black pepper (¼ teaspoon): Adds simple seasoning and a little warmth.
  • Shredded Monterey Jack Cheese (1 cup): Melts smoothly and adds creamy cheese flavor. Or use pepper jack cheese, Swiss cheese, Colby cheese, sharp cheddar cheese, or mozzarella.
  • Shredded cheddar cheese, divided (2 cups): Adds bold cheesy flavor throughout the casserole and on top.
  • Optional toppings: green onions, fresh chives, sliced avocado, ketchup, Salsa, Guacamole, hot sauce, sour cream
  • Optional veggies: Saute and mix in onions, bell peppers, mushrooms, or broccoli florets.

How to Make Tater Tot Breakfast Casserole

PREP. Preheat oven to 350°F. Cook 1 pound of bacon in a large skillet and crumble it.

TATER TOTS. Arrange frozen tater tots in a single layer in a greased 9×13 casserole dish.

EGG MIXTURE. In a large bowl, whisk 12 eggs, ½ cup milk, ½ teaspoon salt, and ¼ teaspoon pepper. Stir in 10 ounces cooked sausage crumbles and half the bacon crumbles. Stir in 1 cup of the Monterey Jack Cheese and 1 cup of cheddar cheese and mix well. Pour over the tater tots.

BAKE. Sprinkle with additional tots and bake for 40-45 minutes.

  • Take it out of the oven and top it with the remaining 1 cup of cheese. Bake for an additional 5-7 minutes.

SERVE. Let stand for 10 minutes before cutting and top with the remaining bacon and green onions, if desired. Serve warm.
