Cinnamon Bites are a quick and easy pull-apart treat made with refrigerated biscuits, cinnamon sugar, melted butter, and a sweet vanilla glaze. They bake in an 8×8 pan until warm and golden, then get covered in glaze while still soft and delicious.

We love making these for breakfast, brunch, after-school treats, or a simple dessert because they taste like shortcut cinnamon rolls without the extra work. Since they start with canned biscuits, they’re perfect when we want something sweet and tasty in minutes.

Why you’ll love them + Why they work:

  • Simple! Easy cinnamon bites made with refrigerated biscuits.
  • Tasty. Perfect for breakfast, brunch, dessert, holidays, or after-school treats.
  • Cut biscuits bake quickly. Quartering the biscuits helps them cook through and makes them easy to pull apart.
  • Warm glaze soaks in slightly. Pouring the glaze over warm bites gives them a soft, sweet cinnamon roll-style topping.

Cinnamon Bites Ingredients

  • Refrigerated biscuits, 8 count package (1 can, 16 ounces): Creates the soft, fluffy base and make the recipe quick and easy.
  • Butter, melted (3 tablespoons): Adds richness and helps the cinnamon sugar coating bake into the biscuit pieces.
  • Sugar (⅓ cup): Sweetens the cinnamon coating.
  • Cinnamon (1 tablespoon): Adds warm cinnamon flavor and makes the bites taste like cinnamon rolls.
  • Powdered sugar, sifted (1 cup): Creates a smooth, sweet glaze.
  • Butter, melted (2 tablespoons): Adds richness to the glaze and helps it taste extra delicious.
  • Vanilla extract (1 teaspoon): Adds warm flavor to the glaze.
  • Milk (2 tablespoons): Thins the glaze so it pours smoothly over the warm biscuits.

How to Make Cinnamon Bites

PREP. Preheat the oven to 350°F. Grease an 8×8 pan. Place the cinnamon and sugar in a small bowl and mix well. Set aside.

DOUGH. Cut the biscuit dough into quarters, and dip balls in the cinnamon sugar mixture, coating completely.

BAKE. Place the pieces in the baking dish, close together, and cover with melted butter. Bake for 20-22 minutes until the bites are cooked through and browned on the outside.

GLAZE. Mix glaze ingredients until well combined and drizzle over warm biscuits.

  • Cut each biscuit into 4 even pieces so the bites bake evenly.
  • Place the biscuit pieces close together in the pan so they bake into a pull-apart treat.
  • Pour the glaze over the bites while they are warm so it melts into the tops.
  • Instead of a vanilla glaze, try topping with Cream Cheese Icing.
  • For an easy variation, toss in some chopped nuts or raisins.
  • Instead of canned biscuits, use Homemade Biscuit Dough. Weigh out 16 ounces, gently roll into an 8×4-inch rectangle, and cut into 32 equal pieces.
  • For easy biscuit removal and clean up, line the pan with parchment paper.

These were great and super easy to make during the holiday season! Only thing I did different was more of my sugar cinnamon mix over top of the butter and needed an extra 10 minutes baking! Will definitely make again!

  2. Sandy Ward says:

These were so good & quick. Next time I will wait until they aren’t so hot to put on icing so they stay covered. It also took 26 minutes for them to cook through. In saying that I’ve eaten half by myself and I used a large can of biscuits! lol

I do not understand the negative comments! These are so fail proof!
