Cheesy Dorito casserole is an easy crunchy taco lasagna. It’s layered with meat and of course nacho cheese Doritos!
Taco Casserole + Doritos
This recipe combines two of our favorite things – Dorito chips and Taco Casserole!
Because we love these two things, it’s no surprise our family loves this dorito casserole. It’s delicious, simple and feeds a crowd. This cheesy casserole also travels well and is great for hosting or when taking a meal to a family in need.
We love the Mexican flavors mixed in with the crunchy Dorito chips. Each layer has a different flavor which all combine for one incredible bite.

Ingredients
PREP TIME: 15 minutes
COOK TIME: 40 minutes
- 1 pound ground beef, lean – or ground turkey or ground chicken
- 1 package taco seasoning – Adjust the flavor by making homemade Taco Seasoning. For more spice, increase the amount of red pepper flakes and chili powder. If you like more cumin or garlic increase those amounts.
- 1 cup sour cream – or plain regular or Greek yogurt
- 16 ounces green enchilada sauce – store-bought or homemade Green Enchilada Sauce or try Red Enchilada Sauce
- 6-7 cups Nacho Cheese Doritos, divided – We used classic Nacho Cheese Doritos, but you can use other flavors or plain Tortilla Chips.
- 4-5 cups Monterey Jack cheese, divided – Substitute the cheese for cheddar cheese, pepper jack cheese, or a Mexican cheese blend
- optional vegetables – add in any other veggies like corn, bell peppers, or jalapeno peppers
- optional toppings – cilantro, avocados, or tomatoes
How to Make Dorito Casserole
- PREP. Preheat the oven to 350°F.
- BEEF. In a large skillet, cook 1 pound ground beef until brown. Drain and stir in 1 packet of taco seasoning, 1 cup of sour cream, and 16 ounces of green enchilada sauce.
- LAYER. Grease a 9×13 baking dish. Layer ⅓ of Doritos over the bottom of the dish (crush them only slightly). Next, add ½ of the ground beef mixture, then ⅓ of the cheese.
- Add another layer with ⅓ Doritos, slightly crushed, the rest of the meat mixture, and ⅓ of the cheese.
- BAKE. Add the remaining chips and shredded cheese over the top. Cover with foil (tent it so that the melting cheese will not stick to the foil.) Bake for 30 min.
- Remove the foil and bake for another 5-10 minutes, until the cheese is melted.
- ENJOY! Let the casserole rest for about 5 minutes. Garnish it with diced tomatoes, avocados, green onion, and cilantro. Add any other favorite taco toppings like Guacamole or Salsa.

- Fridge. Prepare the casserole but don’t bake it. Keep it covered in the fridge and cook the next day when you need it.
- Freezer. We recommend you leave the top layer of cheese and chips off before freezing it. Wrap tightly with plastic and foil and freeze for up to 3 months. Thaw before adding the top layer of chips and cheese, and then bake.

Store leftovers in an airtight container(s) and refrigerate for 2-3 days or freeze for up to 2 months. Add some crunch back in by topping with fresh crushed Doritos.
Sooo good! Even our picky 12 year old asked for seconds. Only thing i did differently was to add both enchilada sauce and taco sauce (all I Had) and to use cheddar. It’s a great FridaY night recipe!
