A Favorite Side!

We LOVE all of the holidays in our house and work hard to prepare a delicious menu – from the main dish to the sides.

One of our favorite sides happens to be today’s recipe for Honey glazed carrots. They are the perfect veggie addition to your dinner table because they’re simple, require few ingredients are kid-approved.

Similar to our Glazed Carrots, they are flavorful, soft, and perfect for any Thanksgiving or Christmas table. We guarantee this vegetable side dish will be a hit at your next meal.

WHY WE LOVE IT:

Carrots in a pot of water.

Ingredients

  • 1 pound baby carrots – Any type of carrot can be used. If needed, trim stems and peel. Cut them all the same size so that they cook at the same rate.
  • 3 tablespoons unsalted butter – or salted butter
  • 2 tablespoons honey – or maple syrup (if the honey is too hard to scoop, warm it in the microwave)
  • 1 tablespoon lemon juice fresh or from a bottle (one regular-size lemon will yield 2-3 tablespoons of lemon juice)
  • 2 teaspoons garlic salt with parsley flakes
  • black pepper – to taste
  • parsley dried – to taste

How to Make Honey Glazed Carrots

  1. CARROTS. Add several cups of water to a pot (enough water to cover the carrots by 1-2 inches). Sprinkle with 2 teaspoons garlic salt and bring to a boil on MEDIUM-HIGH heat.
    • Add 1 pound of carrots and cook for 5 to 8 minutes (baby carrots need less time than gourmet carrots) or until fork tender.
  2. GLAZE. Drain the water from the pot. Add 3 tablespoons butter, 2 tablespoons honey, 1 tablespoon lemon juice, pepper, and garlic salt to the carrots. Cook on LOW for 5-7 minutes or until carrots are coated with glaze.
    • Add any more salt and pepper to taste and garnish with dried parsley.

Alternative Cooking Methods

SLOW COOKER. Place the carrots in a greased crock pot. Combine melted butter, honey, lemon juice, garlic salt, pepper, and water. Drizzle the mixture over the carrots and mix until the carrots are coated. Cook on HIGH for 2-3 hours or until carrots are tender.

OVEN. Place carrots in a buttered casserole dish and sprinkle with salt and pepper. Sprinkle with honey and lemon juice and drizzle on 2 tablespoons of melted butter. Cover and bake at 350°F for 30-40 minutes or until soft.

Notes

Make ahead of time. These are best when freshly cooked but can be prepped the day before. Wash and boil the carrots according to the recipe. Drain and allow them to cool before placing them in an airtight storage container and in the refrigerator. Let them sit at room temperature for about 30 minutes before heating them up with the butter, honey, lemon juice, and other seasonings.
Store in an airtight container in the fridge for 3-4 days. Freeze for up to 2 months. They will be much softer after being frozen, but still delicious.
