A long-time family FAVORITE, these Scotcheroos are filled with chocolate, peanut butter and butterscotch and whip up in minutes for a quick and easy go-to dessert.

An All-Time Favorite!
This is a no bake treat that we have been making FOR YEARS!! In fact, we can’t remember when Scotcheroos wasn’t a classic dessert staple in our home. We’ve always loved Rice Krispies so it’s no wonder we love the addition of chocolate, peanut butter, and butterscotch!
Plus, they are SO easy to make. Just 20 minutes from start to finish with simple steps! These are actually a treat that OUR KIDS make all of the time!
We love them for sharing with friends (at activities or after school) and they are perfect for potlucks and parties.
We know these will be a family favorite for you too!!
WHY WE LOVE IT:
- The flavor can’t be beat! We’ve always loved Rice Krispies, chocolate, peanut butter, and butterscotch, so these are definitely a family favorite.
- Beyond simple. They’re so easy, my kids make them all the time!
- Quick party treat. From start to finish, these are made in 20 minutes and because everyone loves them, they’re great for parties, get-togethers, and holidays.

Ingredients
PREP TIME: 5 minutes
COOK TIME: 15 minutes
- 6 cups Rice Krispies cereal – To keep this recipe gluten-free be sure to check the package labels.
- 1 cup sugar
- 1 cup creamy peanut butter – We prefer creamy but crunchy can be used for more texture.
- 1 cup light corn syrup – Dark corn syrup works too, it will just darken the color of the treat.
- 1½ cups chocolate chips – We like milk chocolate chips but you can use dark or semi-sweet chocolate chips.
- 1½ cups butterscotch chips
- optional topping – Add sea salt flakes, festive sprinkles, or crushed candies to the top of the chocolaty layer.






How to Make Scotcheroos
- PREP. Pour Rice Krispies into a large bowl and set aside.
- COMBINE. In a medium pot over medium-high heat, bring sugar, peanut butter, and corn syrup to a boil, stirring constantly.
- As soon as the mixture starts to boil, pour over the cereal and mix well. Pour into a greased 9×13-inch pan and gently press down with a spatula to spread evenly into the pan.
- Don’t overheat the sugar/corn syrup mixture. Remove the mixture just as it is beginning to boil otherwise overheating will end up creating a dry and rock-hard treat.
- As soon as the mixture starts to boil, pour over the cereal and mix well. Pour into a greased 9×13-inch pan and gently press down with a spatula to spread evenly into the pan.
- CHOCOLATE. In a small pot, melt chocolate and butterscotch chips together over low heat, stirring constantly. Pour over pressed Rice Krispies and let set for at least 30 minutes before cutting and serving.
Use a MIcrowave
Instead of using a saucepan on the stove, microwave the butterscotch and milk chocolate chips. Heat in 30-second intervals and stir in between each interval. Be very careful to not overheat.

Recipe FAQ
After melting the chocolate and butterscotch chips together, melt a separate bowl of butterscotch chips. Spread the chocolate mixture evenly over the treat, then drizzle the plain butterscotch over the chocolate. Finally, use a toothpick to drag the butterscotch drizzle through the chocolate, creating a pretty pattern.
Make 1-2 days ahead of time, cover, and store at room temperature. Leftovers can be stored in an airtight counter for up to 4 days.

Can it be a smaller or larger pan
Yes! It fills a 9×13 just right, but a small pan would thicker layers and a larger pan would have smaller layers.
Real Scotcharoos are made with Special K… never rice cereal.
Mine turned out chewy but a hard chewy. Like chewy on Laffy Taffy hard. Any idea why and how to fix it,?
Yes, so that can happen if the mixture gets overcooked/over boiled. You’ll want to remove the mixture just as it is beginning to boil otherwise overheating will end up creating that dry and rock-hard treat. Hope that helps!

This did not work. Sugar did not dissolve before peanut butter started to scald. The result was treats crumbly and hard as rock

Can I freeze this for a few weeks?
Yes, they are good in the freezer for up to 3 months.
The corn syrup and peanut butter and sugar mixture easily burns.
It can! It’s important to stir constantly while it’s melting to avoid that happening.
Should I use semisweet or milk chocolate chips?
Delicious. My only critique would be to change the instructions that you don’t bring the sugar, peanut butter, white syrup to a boil, just so that it is well incorporated. Mine got a little burnt because of this.

These are so good and not hard to make. My family loves them. I add sprinkles and change them up based on the holidays.
I remember making these with my grandmother before she passed away but until a few days ago I could never remember what it was that we made together and then I had one of these at a potluck years later and I was so excited that I finally found it. Try brown sugar the next time you make these — more yumminess than this even!!! Use the same amount, 1 cup….

There are some great conversion calculators online. You can just pop in the amounts and they will convert to the metric amounts. 🙂
I recommend the app “Cupful” it does a lot of measurements of pre-programmed ingredients and you can even contact them through their google play app review page from suggested ingredients. Not everything is on there (like ALL of the flavorings and extracts) so for those I use what would be similar. (like using vanilla extract for all extracts and flavorings.) I’m always dividing and multiplying recipes so having everything in metrics is easier than having to figure out cups, tbsp, etc. the app is super helpful with that.

This is a terrible recipe. Your dish will come out dry and crunchy. You never want to bring this mixture “to a boil” and the sauce to cereal Ration is bad which also makes it crunchy instead of soft. The video was entirely unhelpful as were the instructions. Super frustrated that I followed this and wasted time and money.
I made these today for my family – excellent and easy – and a big hit with the kiddos!
I saw the comment below about the video not playing. I noticed that if I opened up the recipe using Chrome, the videos would not pull up. But when I opened up the recipe using Edge, the video popped up and played just fine. I am most certainly not a computer expert, but I wonder if some of these links work better with some browsers vs others. Just thought I would share this observation.

These are awesome bars. I personally would reduce the amount of butterscotch & chocolate chips to 1C. each but my family is a firm NO! They love them just as the recipe calls for.

You know, I haven’t made it with anything other than peanut butter before. You could probably experiment with other nut butters… maybe cashew butter or almond butter. You could try cookie butter perhaps? Another option is to try another kind of Rice Krispie treat. You can’t go wrong with the classic! We also have a chocolate and caramel version. You’ll have to let us know what you end up using and how it turns out.
I have a recipe like this . The only difference is you use special k cereal instead . Glad you reminded of them , think I’ll make some for my niece they’re her favorite.

Sorry I didn’t follow a different recipe for these. I now know better! Melt the sugar first. THEN add the pb. 🙁
It was hard to tell with everything in the pan when ‘boil’ occurred b/c I was stirring pretty constantly to keep the mix from scorching. Also (more a personal preference) SEMI-SWEET CHOCOLATE not milk chocolate for these. The sugar in the recipe can handle the darker chocolate for balance.
Mine aren’t ruined by any stretch and CERTAINLY still edible. Just way to sweet due to the milk chocolate (no balance; cancels the pb flavor out) and the texture isn’t quite as soft as I would like it to be. Very chewy. All easily fixed if there’s a next time for this recipe. We’ll see!

Horrible directions- please specify that you boil the corn syrup and sugar BEFORE adding the peanut butter like all other recipes do there’s aren’t a mess.

Butterscotch can be a love it or not flavor, for sure. You can always omit the butterscotch chips and just have the peanut butter Rice Krispies with plain chocolate on the top if you aren’t a huge fan of butterscotch. Thanks for the feedback and for giving the recipe a try!
I made these and they turned out very very dry. Next time I would only do 4 cupes of rice krispies. Maybe that is just me because I prefer a chewier bar.

The reason everyone is struggling with this recipe is the method used with the corn syrup in the beginning. It should be tempered because you are essentially making candy. Just corn syrup and sugar first. Heat on medium heat just up until it STARTS boiling. Remove from heat then add peanut butter. If you bring it to a boil and boil too long you get rock hard candy. The corn syrup crystalizes I think. And it’s personal preference but the semi sweet chocolate is a whole bag and the butterscotch chips are only 1 cup per the original recipe but I also just do 2 bags because why have left over butterscotch chips. Lol. Hope that helps.

The flavor is there, I might just suggest warming them up for about 12 seconds before eating because they are a bit stiff for chewing.

btw the scotcheroos were a awful- a disappointment beyond belief! they tasted good i mean how can you go wrong with rice krispies peanut butter & chocolate the karo syrup was worst than gorilla glue

I used light agave syrup instead of corn syrup – healthier and awesome texture.
I believe you boiled the sugars to long, they were getting to candy stage
Do not add the peanut butter with the sugar and corn syrup. Mix and warm the sugar and corn syrup first to help melt the peanut butter in the pan next. Otherwise it burns to the bottom of the pan and ruins the recipe.

I would double the recipe. Depending on how much chocolate/butterscotch you like, as easy option would be to just use a full bag of each (each bags hold about 2 cups of chips) rather than 3 cups of each, but we love the chocolate so it certainly wouldn’t hurt to do the full amount. 🙂

You can just spread these out a little thinner – my family actually likes them better that way. I have been making these for 40 years and my grandma 40 years before that! Best recipe.

I should have known better…only the syrup and sugar bring to a boil…then add peanut butter.
I add it all & bring to a boil, without any problems.
I crave these all the time but especially when I’m pregnant, like right now 🤤 I love the butterscotch with the chocolate and the peanut butter with the chewy rice crispiest…. Excuse me while I go make another pan.

Not sure if it’s because of an allergy or preference, but you can try honey, light molasses, a syrup, etc. I haven’t personally used anything else, but those would work…probably change the flavor a little.

Hi Karen! I grew up making this recipe with my mom, and the reason yours turned out hard is because you boiled the sugar/corn syrup mixture too long. It’s very finicky, and the moment it comes to a boil, take it off the heat. We also add the peanut butter after we take the sugars off the heat, mix well, and then add rice krispies. I’m not sure if this makes a difference. Working quickly is the key!

I have loved this recipe for years but now I am really excited to try it with the added sugar and corn syrup. It makes perfect sense to me. I use instead of chocolate chips the bakers baking bar, about 6 squares. I feel it gives it a deeper chocolate taste When combined with the butterscotch chips.

These defiNitely cure a sweet tooth! I would increase the topping even more and would use more chocoy, less butterscotch. The butterscotch was a bit Strong for my taste. They were a big hit with all who Tried Them! Will make again for sure.
