a family fav – Mexican steak Tacos

I LOVE me some tacos. Seriously, I could eat tacos several times a week. I need one of those fun shirts that express my love for tacos!!?? I’m thinking…”I wonder if tacos think about me too?” Perfect, right? Okay, but really, tacos are the best. They are so so easy to make and include several healthy and fresh ingredients.

It is also really easy to mix it up. You can change up the meat, or even go meatless! Sweet potato tacos are delicious. Spice it up with different toppings. Switch up the cheese to cortija cheese instead of cheddar, use fresh salsa or pico de gallo, or play around with your fave toppings.

Any way you do it, tacos make the perfect weekday dinner. I use ingredients I usually have on hand anyway, and it takes not time at all to get dinner on the table! So get your grill on and try these delish steak tacos tonight!

How to Make Steak Tacos

MARINATE. Add the dressing and sauce to an airtight container. Rub salt and garlic salt onto the steak, then marinade in the sauce for a few hours. Keep Refrigerated.

COOK. Remove the steak from the fridge 30 minutes before cooking. Cook steak to preference.

BUILD YOUR TACO! Cut steak and add to tortillas. Add cheese and any other favorite toppings.

How long to marinade steak? To let the marinade permeate the steak you will need to let it sir for at least. I like to throw my steak in the marinade in the morning so it is ready to be cooked up for dinner. If you need to cook it earlier in the day, let it marinade overnight. You can even put the marinating steak in the freezer to be ready to use at a future date. Simply put the marinade and steak in a Ziploc bag, then place it into a second bag, label and freeze for up to 3 months. Thaw in the fridge.

Steak: We used sirloin steak for this recipe, but you can easily use flank steak, skirt steak, sirloin steak, rib eye, or New York strip steak. Arizona weather is usually nice enough to grill so we use that method often, but you can use a grill pan on the stove top or even the broiler in the oven. Remove the steak from the fridge and allow it to come to room temperature for about 30 minutes before cooking.

  • Rare: remove from heat at 130-135°F final temp should be 130-140°F
  • Medium rare: from heat at 140°F final temp should be 145°F
  • Medium: from heat at 155°F final temp should be 160°F
  • Well done: from heat at 165°F final temp should be 170°F

Allow the steak to sit for 5 minutes per inch of thickness to reach the final internal temperature. Once ready, slice against the grain and place in tortillas.

What to serve with steak tacos

Storing + Side Ideas

Place LEFTOVER tacos in an airtight container in the fridge for 2-3 days. Reheat on a pan in the oven or in the microwave.

If the tacos do not have any toppings, aside from cheese, you can wrap each taco in plastic and place them all in a Ziploc bag to be frozen. FREEZE for up to 3 months. Thaw, reheat and enjoy.

  3. Kind of blah. There are much better recipes for steak tacos ESPECIALLY if you are using sirloin.
    Overall this recipe is a waste of time and steak.
