Sweet Chex Mix is a gooey and completely addicting 15 minute treat, filled with golden grahams and coconut. It’s a recipe the entire family will love!!

A perfect Munchy!

Who else craves a munchy in the evening? I love to have a good munchy and curl up and watch a movie once the kids are in bed. Well this sweet and salty Chex mix concoction is one of my go to treats!

Actually, the kids are in love with this too. It is simple, and is filled with all of the things the kids love…even the nuts. It makes a great after-school snack. We also like to divide it into small Ziploc bags for on-the-go munching.

You will love this sweet Chex mix version. And the best part is you can add in or take out anything you are craving at the time! You can make it more like a treat and add in some extra sweetness. It’s completely customizable. Enjoy!

Making sweet Chex Mix

TOSS. Add the Rice Chex, Corn Chex, Golden Grahams, almonds and coconut to a large bowl and toss together.

COATING. Place the sugar, light-corn syrup and butter into a small saucepan. Set temperature to medium-high and bring the mixture to a boil. Stir occasionally. Boil for 2 more minutes and continue to stir occasionally. Remove the mixture from the heat and mix in the vanilla.

COMBINE. Pour over the cereal mixture. Toss until all pieces are evenly coated. Treat can be stored in an airtight container at room temperature.

Tips + Variations

Coconut: If you are not a coconut fan I think you will still love this treat. The coconut flavor is not overpowering and aids in sweetening the mix. 

Nuts: The recipe calls for 1 1/2 cups of sliced almonds, but you could easily use an equivalent amount of other chopped nuts. Peanuts, cashews, and walnuts are all delicious choices. You could even use a mixture of them. 

Butter: This recipe calls for salted butter. If you don’t have any on hand, then use unsalted butter and add ¼ tsp salt into the mixture along with the butter.

Additional Add Ins: You can easily change this recipe up a bit, by adding in other delicious ingredients. Keep in mind not to add too many because then there won’t be enough syrup to adequately coat the mix. 

  • Mini or regular M&M
  • Holiday Sprinkles
  • Dried fury such as cranberries
  • Mini Pretzels or Pretzel sticks

Cool and set more quickly by lining a baking sheet with wax or parchment paper. Spread the sweet Chex mix evenly over the pan. Once cool serve it or store it for later.

Storing Tips

STORE the Chex mix in an airtight container. It should easily last for 3-4 days. 

That is – if you have leftovers.

Ingredients 

  • 3 c Rice Chex Cereal
  • 3 c Corn Chex Cereal
  • 4 c Golden Graham Cereal
  • 1 1/2 c sliced almonds
  • 2 c sweetened shredded coconut
  • 1 c sugar
  • 1 c light corn syrup
  • 3/4 c salted butter
  • 1 tsp vanilla extract

Instructions 

  • Add the Rice Chex, Corn Chex, Golden Grahams, almonds and coconut to a large bowl and toss together.

    1. I like to let it cool down and set by lining a baking sheet with wax or parchment paper. Just spread the mix evenly over the pan. And then once it’s cooled and set, you can break it up and put it in a bowl or an air-tight container to store.

    I love this recipe. Luckily Chex is on sale and this recipe makes a lot. I trust and love all of Lil’ Luna’s recipes. It started with her Snickerdoodle recipe, then her chocolate chip recipe, and after that I just love everything she puts out there. And this one is just as great. Enjoy!
