Tater Tot Breakfast Casserole is a tasty go-to breakfast casserole that is so cheesy and flavorful! It’s just as good and simple as our Biscuit Egg Casserole and Breakfast Potato Casserole.

Tater Tot Egg Bake

We have been long-time fans of Breakfast Casseroles, and wanted to share a new one today for a Tater Tot Breakfast Casserole with bacon and breakfast sausage that is incredible!

We’ve had our Biscuit and Egg Casserole and Breakfast Potato Casserole as favorites, but will be adding this one to our go-to list because it is simple and so delicious. Oh yeah – and packed with flavor!

Our classic Tater Tot Casserole has been one of our best-loved side dishes for a long tine, and we knew a breakfast version would be delicious – and it was.

How to Make IT

From start to finish, this easy Tater Tot Breakfast Casserole recipe can be made in about 10 minutes using some shortcuts. Use pre-cooked bacon and pre-cooked sausage crumbles to make it even easier.

PREP. Preheat oven to 350°F. Cook bacon in a skillet and then crumble it.

TATER TOTS. Arrange Tater Tots in a single layer in a greased 9×13 dish.

EGG MIXTURE. In a large bowl, whisk together eggs, milk, salt, and pepper. Stir in sausage and half the bacon crumbles. Stir in 1 cup of the Monterey Jack Cheese and 1 cup of cheddar cheese and mix well. Pour over tater tots.

BAKE. Sprinkle with additional tots and bake for 40-45 minutes.

CHEESE. Take out of oven and top with remaining cheese and bake an additional 5-7 minutes.

SERVE. Let stand for 10 minutes before cutting and top with remaining bacon and green onions, if desired. Serve warm.

Tips + Variations

Crispy tots. The tater tots on the bottom will not have the classic crispness of tater tots, but the ones on the top can get nice and crisp. Just be sure that they are not covered in sauce. Add extra tots to the top layer to ensure a crisp top.

Variations. Change up this Tater Tot Breakfast Casserole:

  • Cheese. pepper jack cheese, Swiss cheese, Colby cheese, sharp cheddar cheese, or mozzarella
  • Meat. add in or replace with turkey sausage or ground beef
  • Veggies. onions, bell peppers, mushrooms, or broccoli florets
  • Toppings. fresh chives, sliced avocado, ketchup, Salsa, Guacamole, or sour cream

Or mix and match to create different versions. For example, a Mexican version could include chopped onions, jalapenos, and Colby Jack cheese instead of cheddar cheese. Top with salsa or hot sauce.

Making Ahead and Storing

Make ahead of time. This dish already comes together very easily and quickly, but it can also be made ahead of time. Prepare as instructed, but store the different ingredients in separate containers before adding them to the baking dish.

STORE leftover Breakfast Tater Tot Casserole in an airtight container in the fridge for up to 4 days. Divide it up into individual servings making it an easy grab-and-go.

FREEZE in a freezer-safe dish covered tightly with plastic wrap and aluminum foil for up to 3 months.

Reheat it. Thaw overnight in the fridge and microwave. Freeze single servings and reheat for a quick breakfast.

Recipe FAQ

How do I make the tater tots crispy?

The tater tots on the bottom of the casserole will not be very crisp since they will be covered in liquid ingredients. However, the ones on the top can get nice and crispy. Add extra tots to the top layer to ensure a crisp top.

Do I need to cook the tater tots before adding them to the casserole?

No! Take them out of the freezer and add them straight to the casserole dish. So easy!

Ingredients 

  • 10 oz sausage crumbles
  • 1 pound bacon
  • 1 32 oz. package Tater Tots
  • 12 large eggs
  • 1/2 cup milk
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 cup Monterey Jack Cheese shredded
  • 2 cups cheddar cheese shredded and divided
  • green onions

    To be honest anything with “tatEr tot casserole” in the title brings some bad chIkdhood memeories of my moms recIpe. (Sorry mom) but the ingredients in this one caused me to give it a try and i was not dissApointed. It was a Perfect breakfast casserole!
