Tortellini Sausage Soup

I have one last soup to share with you before I have an awesome round-up of Soup Goodness for you this weekend.

This next one was made by my mom and I have to admit I was a little hesitant when she said it had sausage and tortellini. I love both but couldn’t image it together in a soup. I’m happy to report that it was SO good. It tasted just like a yummy Italian dish and was so hearty and flavorful. I may have had 3 servings – no joke!! I think you will love this Tortellini Sausage Soup just as much as we did!!

A yummy and hearty Italian soup.

Ingredients

Instructions

  1. Cook sausage in a pan until browned and broken up.
  2. Add garlic and cook sausage for 1-2 minutes longer.
  3. Move meat to a pot. Stir in broth, tomatoes, cider, tomato sauce, carrots, basil and oregano. Bring soup to a simmer, cover, and cook for 30 minutes.
  4. After 30 minutes stir in zucchini and parsley and simmer for 10-12 more minutes.
  5. Add tortellini and cook for 7-10 more minutes. Top with grated Parmesan. Enjoy!

Oh, yum, this recipe was good!! If you are a fan of Italian food I know you will LOVE this recipe. It was really easy to make and didn’t take long either, which is always a bonus.

    Thank you for the delicious Tortellini and Sausage Soup Recipe! It is a BIG HIT at our house!! I’ve made it twice in the last 3 weeks and am sure we’ll be having it very often at our house.

      I have and it works just fine. I browned the meat as per instruction and threw everything in the pot and cooked on low for six hours. Add tortellini and turn to high until pasta is tender and serve. I served mine with piping hot cornbread and butter which went perfectly with the flavors of the soup.. YUM! . On a side note, I added one onion, a tsp. of marjoram and a bay leaf to mine as well. I also have made this with chicken and rice instead of the sausage and tortellini and it was good too.

    Thank you for the tortellini soup recipe! I made this today and am sitting in my clean house loving this soup! It has a permanent place in my recipe rotation and I can;t wait to try it with a hotter italiian sausage. I used sweet tonight and it truly is amazing!
