This Blueberry delight recipe is a chilled layered dessert of shortbread, cream cheese, and sweet blueberry topping, all prepped in only 15 minutes!

Our mom makes this refreshing blueberry dessert EVERY summer. It features a buttery Easy Shortbread Cookie crust topped with tangy cream cheese and a sweet blueberry topping.

Ingredients
PREP TIME: 10 minutes
COOK TIME: 5 minutes
CHILL TIME: 1 hour
- 10 ounces shortbread cookies – or use graham crackers, vanilla wafers, or pecan sandies
- ยผ cup butter, melted – We used unsalted butter but salted butter can be used.
- 8 ounces cream cheese, softened
- 1 cup powdered sugar – sifted
- 1 (8-ounce) tub whipped cream, about 3 cups – Cool Whip or Homemade Whipped Topping
- 12-ounce canned blueberry pie filling – or homemade Blueberry Pie filling, or raspberry, cherry, or strawberry pie filling
- 1 cup chopped pecans
- optional topping – a dollop of whipped cream, fresh blueberries, lemon zest
How to Make Blueberry Delight
- PREP. Preheat the oven to 350ยฐF.
- Crush 10-ounces shortbread cookies in a ziploc bag with a rolling pin or pulse in a food processor. Take out ยฝ cup of the mixture and set aside.
- CRUST. Stir the remaining crushed cookie mix with ยผ cup melted butter. Press buttered crumbs into the bottom of an 8.5-inch x 11.5-inch baking dish. Bake for 5 minutes and let cool.
- FILLING. In a bowl, beat 8 ounces of cream cheese, 1 cup powdered sugar, and an 8-ounce tub of cool whip until mixed well. Spread over the bottom crust later.
- LAYER. Pour 12 ounces blueberry pie filling slowly over the cream cheese layer. Cover the entire cream cheese layer.
- CHILL. Sprinkle 1 cup crushed pecans over the pie filling. Refrigerate for at least 1 hour until ready to serve.
- SERVE. Top with Cool Whip or Homemade Whipped Cream and reserved cookie crumbs and ENJOY!

- Slowly pour blueberry pie filling over the cream cheese layer making sure it is spread all over.
- Sprinkle crushed pecans over the pie filling.
- Refrigerate for at least 1 hour until ready to serve.
- Right before serving add some Cool Whip and reserved cookie crumbs. ENJOY!

Cover with plastic and refrigerate for up to 24 hours. To freeze, wrap it tightly with plastic wrap and again with foil. Label and freeze for up to 1 month. Thaw in the fridge.

Powdered sugar was mentioned in the Instructions, but not listed as an ingredient in the list of IngredientsโฆโฆI read through the others and it was listed in other recipies on this page as 1 cup powdered sugar (actually, I only use 1/4 less, it is sweet enough coming from the instant jello uncooked mix. Iโll then go to 2/3s cup of sugar.
