Cake Mix Cookies

Is there anything happier than funfetti? I could probably eat anything if it was funfetti flavored. There is just something about rainbow sprinkles that make the world a better place.

The best part about these funfetti cookies? They are made with a funfetti cake mix – so quick and easy.

This recipe is perfect for little bakers who want to help you in the kitchen. They’ll love all the bright-colored sprinkles and frosting cookies.

Deliver a batch of these goodies to a friend on their birthday or make these in lieu of a birthday cake. Sometimes I just want cookies for no particular reason so these are the perfect “anytime” treat.

How to make Funfetti Cookies

This quick and easy funfetti cookie recipe is made with a cake mix and whips up in no time!

PREP. Preheat your oven to 375ยฐF.

COMBINE. Add cake mix, oil, and eggs to a bowl and stir until well combined.

BAKE. Shape the cookie dough into 1-inch balls and put them onto your ungreased cookie sheet. Bake for 6-8 minutes. Cool for 1 minute before removing cookies from the sheet.

FROST. Let cookies cool, then frost and sprinkle. ENJOY!

Note. Do not overbake these! The softer they are, the better! Let the cookies cool for a bit then frost them and top them with more sprinkles! You can never have too many sprinkles in my cookie opinion.

Recipe Tips

Follow these tips for the softest, tastiest cookies!

To make these cookies soft and moist.

  • Remove from the oven right as the edges turn light golden brown, not any later. Cool them on the baking pan for a few minutes before transferring them to a cooling rack.
  • Keep the cookies in an airtight container to keep them as soft as possible and add a piece of white sandwich bread to prevent them from drying out.
  • Chill the dough for 15-20 minutes to help prevent the cookies from spreading too thin and losing moisture. Chilled dough is not as sticky and is easier to scoop and roll into balls.

Cake mix. A box of cake mix is approximately 15.25 oz. Do NOT mix the cake according to the directions on the box. Use only the cake mix powder along with the ingredients for these cookies.

Room-temperature eggs will incorporate better with the ingredients than cold eggs.

Recipe Variations

Change things up to make these for different occasions or to add flavor.

  • Mix-ins. Add white chocolate chips or mini M&M’s.
  • Sprinkles. Stick with rainbow jimmies for the best texture and taste, but change them up with holiday colors! You could also roll the cookie dough balls in sprinkles in lieu of frosting.

Storage Tips

STORE cookies in an airtight container at room temperature for up to a week.

FREEZE cookies in an airtight container for up to 3 months.

STORE cookie dough. Cover or store in an airtight container in the fridge for up to 5 days.

FREEZE cookie dough. Shape the dough into balls and freeze for later. Place the cookie dough balls on baking sheets and then into the freezer.

Once solid, transfer them to a large freezer Ziploc bag for about 3 months. Bake them directly from the freezer, just add 2-3 more minutes.

Recipe FAQ

How to get sprinkles to stick on cookies?

One way is to add a layer of frosting and then add the colorful sprinkles before the frosting sets. If you don’t want to use frosting, then I suggest pressing the sprinkles into the top of the cookie dough balls before you bake them.

What sprinkles don’t melt in the oven?

Colorful rainbow jimmies don’t melt in the oven and they are soft and look pretty when mixed with cookie dough.

    This is the first cake mix cookie recipe I’ve made and love it! I did find it easier for scoop and roll the dough when it was chilled so I put it in the fridge in between batches.
