Mini Salad Appetizer

I LOVE SALAD!

I don’t like it just because it’s normally healthier than other options on a restaurant menu, but I love the taste and love how it can be changed up so easily with the ingredients and dressings.

One of my all-time favorite salads is Caesar Salad. It always tastes so good to me and I’m usually never disappointed when I order it.

I wanted to make an appetizer version of my favorite salad and came up with these Caesar Salad Cups made with wontons. They were quick to make and were perfect for snacking on.

I think it would be fun to change it up and use different salad ingredients, but this Caesar version was phenomenal!

How to Make Them

PREP. Preheat oven to 350.

WONTONS. Place wonton wrappers in muffin tin and spray with olive oil. Bake for 9-11 minutes or until golden and crispy.

FIXINGS. In a bowl, mix together lettuce, chicken, Parmesan and dressing. Scoop into wonton cups and top with cherry tomatoes and mini croutons. Serve immediately.

Make ahead of time: You can make the wonton cups, salad and dressing ahead of time and store them separately until you are ready to assemble them. They can be assembled up to 2 hours before serving—just keep them in the fridge.

Switch it Up

Just remember to cut or tear the ingredients up smaller than you might normally that way it’s easier to take a bit without spilling or getting more than you can chew.

Dressing: Any dressing works though dressings that are creamier can help bind the ingredients together so that salad pieces are trying to fall out after you have taken a bite. Some of our favorite dressings include:

Ingredients 

  • 12 wonton wrappers
  • romaine lettuce
  • 2 chicken breasts cooked and cubed
  • Caesar salad dressing
  • shaved parmesan
  • 24 cherry tomatoes
  • 1 cup mini croutons

Instructions 

  • Preheat oven to 350.
  • Place wonton wrappers in muffin tin and spray with olive oil. Bake for 9-11 minutes or until golden and crispy.
  • In a bowl, mix together lettuce, chicken, Parmesan and dressing. Scoop into wonton cups and top with cherry tomatoes and mini croutons. Serve immediately. ENJOY!
