Cheesecake Factory Avocado Egg Rolls

My family LOVES appetizers. I’ve blogged about this before, but we make them all the time and have been known to have Appetizers for dinner on more than one occasion! Well, with the big Game Day coming up I’m sure many of you will be looking for some new recipes to use, and I have the PERFECT one for you to try out.

If you have ever been to The Cheesecake Factory you may have tried their Avocado Egg Rolls. If you haven’t, you really should go and try them because they are absolutely HEAVENLY!! My family found a copycat recipe that we now love and use all the time that I think you will love too. It is super easy and the end result is AH-MAZING!!

Here is the recipe for these delicious Cheesecake Factory Avocado Egg Rolls:

Cheesecake Factory Avocado Egg Rolls
 
Ingredients
  • EGG ROLLS:
  • 1 large Avocado
  • 1 TB. sun-dried tomatoes packed in oil
  • 1 tsp. chopped fresh cilantro
  • ⅛ tsp. salt
  • 3 egg roll wraps
  • 1 egg
  • DIPPING SAUCE:
  • ¼ tsp. white vinegar
  • 1 tsp. balsamic vinegar
  • ½ cup honey
  • 1 pinch powdered saffron
  • ½ cup chopped cashews
  • ⅔ cup fresh cilantro
  • 2 cloves garlic
  • 1 TB sugar
  • 1 tsp. pepper
  • 1 tsp. ground cumin
  • ¼ cup olive oil
Instructions
  1. In a bowl, stir together vinegars, honey and saffron. Heat for one minute in the microwave.
  2. Puree this mixture in a blender adding cashews, ⅔ cup cilantro, garlic, sugar, pepper and cumin. Pour into a bowl and add the oil. Stir and refrigerate.
  3. In a bowl, stir together avocado, tomatoes, 1 tsp. cilantro and salt. Add ⅓ of the mixture onto the center of each egg roll wrapper.
  4. Position the wrapper so the corner is pointing towards you. Fold the bottom corner up over the filling. Fold remaining corners up over the filling and brushing the corners with egg to secure in place. Roll up from the bottom folding the top corner over all. Seal with egg and repeat for remaining wrappers.
  5. Fry egg rolls for 3-5 minutes or until golden brown.
  6. Serve with dipping sauce.

I was wondering about the sundried tomatoes packed in oil?
Is that something you actually buy or you make?
If it’s not obvious, I’m not much of a cook lol but I’ve been trying to get into cooking recently and I want to try this recipe SO BAD!

    Good question – just fry them in a pan with a little bit of oil. I would fry each side for a few minutes until it’s all golden brown. You’ll love them! 😀

Hi! This recipe looks amazing! One qck question though: it calls for 3 wrappers, does that mean this recipe only makes 3 egg rolls? Has anyone tried using wonton wrappers for mini ones? Thanks for sharing, can’t wait to try it!

I have to try this! I would leave out the cilantro tho. Can’t stand that stuff, but everything else looks delicious!

They look so good! Im trying to make them with some meat in the as well! But, are they freeze-able? Before frying them? Are the avocados going to hold up in the freezer without turning brown?

Is there any way to make these a day ahead?

    I personally haven’t, I’m not sure how the avocado would hold up a day before. Anytime, I use avocado, I add it right before, because it gets brown so fast. You could try?? I’d love to know, if you do!
