Our favorite fudgy mint brownies elevate a box mix with creamy mint and chocolate layers for one easy, decadent dessert!

Our entire family LOVES Mint Brownies! We’ve been making them for years, and they are top requested, especially at holiday gatherings.
Chocolate and mint are one of our favorite flavor pairings and these brownies do not disappoint!! They have three delicious layers: a fudgy brownie base, a creamy mint layer, and a topping of melted chocolate chips.
We used a brownie box mix because sometimes life just needs simplifying (our classic Brownie recipe works as the base too). This is the perfect recipe to make in a pinch because it not only tastes amazing, but it comes together in a snap – about 30 minutes!
If you love chocolate and mint like we do, this dessert will definitely hit the spot!

Ingredients
PREP TIME: 10 minutes
CHILL TIME: 1 hour
- 1 (16.3-ounce) box Betty Crocker Fudge Brownie Mix – ingredients on the box include water, vegetable oil, and eggs. Or use your favorite fudgy brownie mix or Homemade Brownies.
- 2 cups powdered sugar – sifted
- ½ cup butter, softened – see How to Soften Butter Quickly
- 2 tablespoons mint extract
- 2-3 drops green food coloring – optional
- 1 tablespoon milk – whole milk or 2% works best
- 6 tablespoons butter
- 2 cups semi-sweet chocolate chips
- optional toppings – mint chocolate chips, chopped Andes mints, chopped thin mint cookies, fresh mint leaf
How to Make Mint Brownies
- PREP. Preheat your oven to 350°F. Prepare a 9×13 baking dish by lining it with parchment paper and lightly grease.
- BROWNIES. Make brownies as instructed on the box, pour batter into the dish, and bake according to the box directions.
- MINT. Make the mint frosting by beating 2 cups powdered sugar, ½ cup softened butter, 2 tablespoons mint extract, 2-3 drops green food coloring, and 1 tablespoon milk until smooth in a medium bowl. Add dollops all over the top and then spread evenly over the brownies.
- CHOCOLATE CHIPS. In a microwave safe bowl, melt 2 cups chocolate chips and 6 tablespoons butter until smooth. Stir and spread the chocolate mixture over the mint layer, cover, and chill for at least 1 hour.
- SET. Let set out for 20-30 minutes before cutting into squares.

Recipe FAQ
Store mint brownie recipe in an airtight container in the fridge for 4-5 days. To freeze, wrap individual brownies in plastic wrap, put in a freezer-safe bag, and freeze for up to 3 months.
