A Quick Dinner to Love!

Sometimes dinner just gets away from us, especially after a long and busy day. On days when we need to get dinner on the table, it’s nice to have some go-to easy dinner ideas.

One of those recipes is today’s recipe for English Muffin Pizzas. This has been a go-to dish since we were newlyweds (the hubby made them all the time). No, it’s not our classic and delicious Pepperoni Pizza, but it’s a simple alternative that the family loves!

What’s to love:

  • So quick. This dinner idea for kids is on the table in only 15 minutes and only requires 5 ingredients!
  • Various cooking methods. These can be cooked in a toaster oven, microwave, or oven.
  • Grab and go. Like Pizza Muffins, these freeze easily for a quick snack for kids to grab and reheat on their own.
  • Make them your own. This family dinner idea is easily customizable with your favorite toppings!

Ingredients

  • 6 English muffins, cut in half or mini bagels for pizza bagels
  • ¾ cup pizza sauce  store-bought or homemade Pizza Sauce Recipe or White Pizza Sauce
  • 3 cups shredded Mozzarella cheese or pizza blend
  • 1 teaspoon pizza seasoning store-bought or homemade Pizza Seasoning, or Italian seasoning
  • ½ cup mini pepperoni or other favorite pizza toppings like olives, onions, crumbled sausage, bell peppers, mushrooms, ham, pineapple, chicken, spinach, bacon bits

How to Make English Muffin Pizzas

  1. PREP. Preheat oven to 375°F.
  2. TOAST. Split or slice 6 English muffins. Toast muffin halves in the toaster for a minute or so to keep the crust crunchy and prevent soggy muffins.
  3. TOP. Add about ⅛ cup of sauce to English muffin halves, getting in all of the nooks and crannies. Top with ½ cup shredded cheese, a sprinkle of pizza seasoning, and mini pepperoni slices.
  4. BAKE & SERVE. Bake for 10 minutes, or until all cheese is melted and bubbly. Serve warm.

Microwave English Muffin Pizzas

Toast the English muffins to crisp the crust. Add sauce, cheese, and toppings. Heat in the microwave until the cheese is melted.

English Muffin Pizzas

Ingredients 

  • 6 English muffins, cut in half
  • ¾ cup pizza sauce, store bought or homemade sauce
  • 3 cups shredded Mozzarella cheese
  • 1 teaspoon pizza seasoning
  • ½ cup mini pepperonis

Instructions 

  • Preheat oven to 375°F.
  • While oven is preheating, make sure muffins are sliced and toast in the toaster for a minute or so. This makes sure the pizza stays more crunchy and doesn't get too soggy.
  • After it's done toasting, add about ⅛ cup of sauce to each muffin. Then, top with ½ cup shredded cheese, a sprinkle of pizza seasoning, and mini pepperonis.
  • Bake for 10 minutes or so or until all cheese is melted and bubbly. Serve warm.

Notes

Freezable for an easy snack. Place cooled pizzas on a baking sheet and freeze. Once the mini pizzas are frozen, transfer them to a freezer-safe airtight container or freezer bag. Freeze for up to 2 months. Heat from frozen using the microwave or toaster oven. To reheat in the oven, preheat the oven to 425°F and heat until warm, about 8-10 minutes.
STORE leftovers in an airtight container in the refrigerator for about 5 days. Reheat in the microwave, toaster oven, or oven.
