Our favorite fudgy mint brownies elevate a box mix with creamy mint and chocolate layers for one easy, decadent dessert!
Chocolate & Mint
Our entire family LOVES Mint Brownies! We’ve been making them for years, and they are top requested, especially at holiday gatherings.
Chocolate and mint are one of our favorite flavor pairings and these brownies do not disappoint!! They have three delicious layers: a fudgy brownie base, a creamy mint layer, and a topping of melted chocolate chips.
We used a brownie box mix because sometimes life just needs simplifying (our classic Brownie recipe works as the base too). This is the perfect recipe to make in a pinch because it not only tastes amazing, but it comes together in a snap – about 30 minutes!
If you love chocolate and mint like we do, this dessert will definitely hit the spot!
WHY WE LOVE IT:
- A shortcut. We used a brownie mix to keep things quick and simple.
- Three delicious layers. There’s a fudgy brownie base, a creamy mint layer, and a topping of melted chocolate chips!
- Just mix and bake. The layers are simple and this easy dessert recipe only takes about 30 minutes to make!
Ingredients
PREP TIME: 10 minutes
CHILL TIME: 1 hour
- 1 (16.3-ounce) box Betty Crocker Fudge Brownie Mix – ingredients on the box include water, vegetable oil, and eggs. Or use your favorite fudgy brownie mix or Homemade Brownies.
- 2 cups powdered sugar – sifted
- ½ cup butter, softened – see How to Soften Butter Quickly
- 2 tablespoons mint extract
- 2-3 drops green food coloring – optional
- 1 tablespoon milk – whole milk or 2% works best
- 6 tablespoons butter
- 2 cups semi-sweet chocolate chips
- optional toppings – mint chocolate chips, chopped Andes mints, chopped thin mint cookies, fresh mint leaf
How to Make Mint Brownies
- PREP. Preheat your oven to 350°F. Prepare a 9×13 baking dish by lining it with parchment paper and lightly grease.
- BROWNIES. Make brownies as instructed on the box, pour batter into the dish, and bake according to the box directions.
- MINT. Make the mint frosting by beating 2 cups powdered sugar, ½ cup softened butter, 2 tablespoons mint extract, 2-3 drops green food coloring, and 1 tablespoon milk until smooth in a medium bowl. Add dollops all over the top and then spread evenly over the brownies.

Recipe FAQ
Store mint brownie recipe in an airtight container in the fridge for 4-5 days. To freeze, wrap individual brownies in plastic wrap, put in a freezer-safe bag, and freeze for up to 3 months.
Do you really use 2 TBSP mint extract? or should it be 2 tsp? just want to be sure 🙂
thanks!
It is 2 Tbsp, but you can certainly adjust the amount of mint extract to your liking. 🙂
These were awful!! Even if you like mint, 2 tbsp of mint extract is WAY TO MUCH!!! I should have known better after putting in just 1 tbsp which I felt was over powering but thought maybe with the brownie it wouldn’t be so bad, UMM NO! And putting the choc. frosting on the top warm, it just melted the mint fronting and mixed together.
Thanks for the feedback and for giving the recipe a try!
These will be the perfect addition to our holiday baking. Yummy!
These brownies are always a hit and so easy to make. I love that that flavor profile can change with the middle frosting so easily too.
These are my absolute favorite!
These really are so decedant and rich. They are beautiful to look at too!
I would go to Kneaders just for their mint brownies. Now I can make a full pan for about the same price as a single slice!
Give me all the mint brownies!! The creamy mint filling and chocolate ganache makes these brownies so irresistible!!
This is really tasty and delicious! Thanks a bunch for this min brownies! Indeed very easy to make! Fam really enjoyed it, will make it again! Well done!
Mint and chocolate are in my opinion, the best combination!! Love the creamy frosting on top & the minty, middle layer.
