Cake Mix Cookies!

We love making cookies with the kids, and these gooey butter cookies are a family favorite! This cake mix cookie is pretty much half a cookie and half a cupcake, and you really can’t go wrong with that. You may also want to try our Gooey Butter Cake!

When you need a quick and easy cookie recipe, cake mix cookies are the way to go! They’re so convenient, and you can easily switch up the flavors depending on the mix—like these Frosted Lemon Cookies, or Funfetti Cookies.

  • 1 (8-ounce) package cream cheese – softened

  • 1 (15.25-ounce) box yellow cake mix or another flavor like strawberry or chocolate cake mix
  • 1 cup powdered sugar – plus more for dusting

How to Make Gooey Butter Cookies

  1. BATTER. In a large bowl, use an electric mixer (or a stand mixer with the paddle attachment) to beat 8 ounces cream cheese, ½ cup butter, 1 egg, and ½ teaspoon vanilla with a hand mixer until fluffy.
    • Add the cake mix powder and mix until combined. Chill for 30 minutes.
  2. PREP. Preheat the oven to 350°F.
  3. BAKE. Place 1 cup powdered sugar in a shallow bowl. Scoop and roll dough into 1½-inch cookie dough balls then roll in powdered sugar until well coated. Place onto a lightly greased baking sheet.
    • Bake for 10–12 minutes.
    • Let cookies sit on the cookie sheet for a few minutes, then remove to a wire rack to cool.
  4. ENJOY! Sift more powdered sugar on top, if desired.

Gooey Butter Cookies

Ingredients 

  • 1 (8-ounce) package cream cheese, softened
  • ½ cup unsalted butter, softened
  • 1 egg
  • ½ teaspoon vanilla extract
  • 1 (15.25-ounce) box yellow cake mix
  • 1 cup powdered sugar, plus more for dusting

Instructions 

  • In a large bowl, beat cream cheese, butter, egg, and vanilla with a hand mixer until fluffy.
  • Mix in cake mix until combined, and chill for 30 minutes.
  • Preheat the oven to 350°F.
  • Place powdered sugar in a bowl. Scoop out and roll dough into 1½-inch balls and roll in powdered sugar until well coated. Place onto a lightly greased cookie sheet.

  • Easily change the flavor by using a different cake mix, like strawberry or chocolate cake mix.
  • The butter and cream cheese should be at room temperature for a smooth batter and to prevent lumps.
  • The 30-minute chill is important for preventing the cookies from spreading too thin.

    They are just okay, I agree with a reviewer below that that just taste like yellow cake mix cookies kinda on the dry side. I’ve had “Butter Bars” before that they have more of a buttery ooey gooey filling and these are not the same. Going to stick with traditional Butter Bars. I would like to try this with a chocolate cake mix though, that would be tasty.

    This recipe is fantastic as is but you can also add flavor extra. I made half plain and 1/2 strawberry. Both turned out delicious and they freeze great! In fact, I’m sitting here eating a few right now that I just took out of the freezer. That prompted me to look up which recipe I used, and it’s this one.     These turn out exactly as yellow cake. You’d think 8oz of cream cheese & 4oz of butter would make some difference, but they don’t. If you like plain unfrosted yellow cake mix in baked rounded blobs, go for it!

    These were fantastic! I ended up dividing the batter and made one just like the recipe and the other I added a natural strawberry flavoring extract and white chocolate chips. Both were yummy! I’m going to use semi sweet chocolate mini chips the next time in the strawberry version (which actually is our favorite). So good and so easy! Thanks for this great recipe!

    Box cake mixes are shrinking in size like most things we buy so they are now only 13.25 oz.
    Does that change the recipe???

        Here’s a lemon glaze recipe we use on our lemon zucchini muffins… I imagine it would taste yummy drizzled on these cookies too. If you want less lemon flavor, you could start with a little less and then add more to taste.

        2 tbsp lemon juice

    This receipe is great, and was recommended to me by my bosses mother. I love that you can try different cake mixes with it. Last year I tried strawberry, and chocolate. This year I will be doing a red velvet mix with some white choc chips, a devils food cake with toffee bits, and the standard yellow cake mix with lemon zest. My only thoughts on it are that on my first go around it was tough to tell when these were done bc the top stays very gooey (as the name suggests), and the bottom of the cookies brown but very little. Not to mention they are too squishy to really check the bottom so that can be difficult. You also have to let them cool on the pan for several minutes (like 5-10) before putting them on a wire rack if you’re going to, and even then as they are such a soft cookie I would recommend parchament paper down on the cooling rack. Lastly they should be fully cooled if you plan to sprinkle them with powdered sugar afterwards, otherwise they wont get that pretty snowed on effect. This recepie is so easy, and if you like to bake cookies the things I just mentioned are easy enough to figure out, although it couldn’t hurt having these tips in the recepie so it was easier for newbies. Either way its still a 5 * receipe as its so easy to create and play with.

    Yeck! These tasted bland and perhaps needed more ingredients. I have used yellow cake mix before in pan cookie bars but those usually have more ingredients which enhances the cake mix and in the end, you can’t distinguish the cake mix. These cookies were so bad that my brother-in-law put his back. That’s a first in 35 years!

    Hi Kristyn, I haven’t made these yet so I cannot rate them. I was just wondering if the recipe is able to be doubled and still come out the same? I know some recipes can and some can’t be doubled. Just would save on having to whip up cream cheese and all two different times. 🙂 Can’t wait to try these!       My mom made these for years, and I absolutely adore them! The recipes can easily be doubled, however the dough can get incredibly firm and hard to mix by the time you get to mixing in a second box of cake mix, so she would add a dash of milk or softened cream cheese to help with that.     You can used just about any cake mix flavor and appropriate added flavor you want. I’ve made these using chocolate cake mix to carrot cake mix and everything in between. I also use the smallest size cookie scoop or even a melon baller to get smaller sized cookies. I’ve been able to get almost 40 small sized cookies using this recipe. Chilling is key when making smaller cookies. If you only have a 1 inch scoop, just cut the scooped ball in half. This is a great, easy go to recipe for the novice or expert. Let your imagination run wild.

    I am going to try this recipe for sure. But, I’m going to add some chopped pecans to them and see if they are anything

      My cookie balls rolled really well after 30 min in the freeze. Still a bit sticky but no different than other cookies I roll. I was a bit disappointed in the flavor, not much to it. But I also ate it right out of the oven so they might be more flavorful when completely cooled.

    I tried these for the first time and they are yummy…BUT I clearly did something wrong. I know it’s a sticky dough but mine was beyond sticky and wouldn’t really form a ball. We decided chilling longer than 30 would help but even after an hour and a half they were barely workable. When cooking they spread way out as well. What did I do? Did I let the butter and cream cheese get too soft? Did I over mix? I’m not sure keeping dough in fridge overnight would have helped. Good news is they were still yummy but they weren’t pretty and wouldn’t take them anywhere lol.

      Because of how sticky the dough was .. I dumped it onto wax paper, rolled it up, (like the kind bought at the store) put into the freezer for 30 mins & cut them. Once removed from the oven & cooled .. I dipped the tops into a powdered sugar & cream cheese glaze. 😋

    Can someone please tell me if you press the cookie down a little bit before baking? I went through the comments and watched the video and the author says she pressed her cookies down using her 3 middle fingers and her video shows her not pressing them down. I would really appreciate it if anyone can let me know? I am not a great baker so these kinds of details are pretty important to most of us amateurs! Thank you!

      I usually check the sides and if they are golden in color and the top doesn’t look too glossy (like raw cookie dough still), then they are usually done. They will set up a little as they cool too.

    This delicious recipe provided a full circus of flavors in my mouth. However, do not eat these high and on an empty stomach … I was NOT happy the entire batch lasted only 30 minutes – & that I burnt my tongue trying to eat them too early either. I wish they weren’t so fluffy and delicious, it makes them way to easy to eat – and for these reasons, I can only give this recipe a 4*.

      I wish I knew for sure. There are many factors that can make cookies flat, such as: not refrigerating the dough, using margarine instead of butter, over-beating the dough, etc. Did you happen to do any of these? Did you press them down at all?

    These are amazing!! I used the butter flavor cake mix. The first time, i only chilled the dough for an hour, and it was really stickY still and very difficult to Work with, but the cookies came out delicious anyway. The second time, I maDe a doIble batch and let the dough chill for 2 1/2 hours or so. The dough was much easier to work with. And once again, delicious!! Even my hUsband, who doesn’t care for things with cream cheese in it, loved them.

    1/4 apple sauce for the EGG

    How do you tell when they’re done?? I put three trays in the oven at the same time (I made the monster cookies, so cute!), which at least in my oven always slows down the baking time. But I can’t tell when to pull them out….

      If they are still jiggling in the middle, you know they aren’t done. The bottoms get a little brown, but I like mine at the lowest amount of time, rather than longer. I prefer soft cookies, over crispy. Now, since three trays are in, it may take a little longer! Hope that helps!

    My daughter is a junior in high school and the juniors put on the prom for the seniors and this weekend is prom. I volunteered to make cookies. I wanted something other than your run of the mill cookie but I also wanted easy, so of course I turned to pinterest where I found this recipe. Last night I did a trial run and I have to say they are delicious and they turned out perfectly!! I used the funfetti mix to make them look fun for prom. We ate some right from the oven and knew we found the right cookie. I do have to say that we had one this morning before school and it was even better after it had set up. They are not overly sweet and they are so delicate and pretty. Tonight when I make the cookies I may add more sprinkles to the batter for more color. I am so glad that I found this recipe and I know I will be making them again and again in many variations!

      I actually did it.. in Mini-Cupcake/Teacake tins. and it worked.. not really gooey.. but made the process much simpler than regular cupcakes.. used a small scoop but really likely not small enough just to do a teacake, so they look like mini- big top muffins. I used a vanilla cake mix and a lemon cake mix combined.. added a little Lemon essence (as well as the vanilla) and the powedered sugar made a nice crust on top.

      To be honest, I’m not sure. I haven’t tried freezing them before. :/ I would make a batch though and test it out. I’d make some cookies 1 day and then put them in the freezer and then take them out at least a few hours a head of time 2 days after you put them in and again 3 days after just to see how they taste. 😉

    Hi, I pinned your cookie on my pinterest Christmas cookie…….how big should the cookie balls be? Should they be crisp when they come out of the oven? Mine are kina rubbery……..what did I do wrong…..I whipped until creamy and then added the cake mix……………….cooled in frig for 35 min and then did the rest of what you said.     I made these last night and while I was happy with the outcome, I had a really hard time getting the cake mix mixed in to form the dough. Do you use a stand mixer or add a little at a time or anything special? My hand mixer couldn’t handle the job and I ended up having to knead it with my hands.

    Just found this on line and want you to know at Weight Watchers last fall one of the members shared something similar. We used a spice cake mix (or carrot cake or similar) with one can of pumpkin and that’s all. It was very good and so low in WW points. Thanks for your version, I will try it next time!

    I made these cookies today using lemon cake mix. I have made other versions of cake mix cookies before but this is by far the best one yet. They are fresh tasting, deliciously lemony and slightly tangy. This will now be one of my go to recipes and I look forward to trying other flavours of cake mix soon.

    I know this post was a long time ago but I just had to comment that this is really a great recipe. We have used different flavor cake mixes and added different things in the middle of the cookies (peanut butter, marshmallow fluff, nuts, chocolate chips etc. depending on the cake mix we choose) I love that this recipe is super easy for my 7yr old to make as it doesn’t use tons of liquid ingredients. We use the recipe exactly as written and just change up the cake mix for a different flavor each time. Our grocery store was out of cream cheese last time so I grabbed the Neufchâtel cheese and it still came out perfect! Thank you so much for a great recipe that has become a family favorite!

    These cookies are heavenly. I followed the recipe exactly, except I baked them for 14 minutes, and let me just tell you I think angles sang when I tasted them. I made these for a friend’s birthday, which was literally the only thing that (just barely) stopped me from gobbling up the whole batch right then! Seriously, I’m not exaggerating, these cookies are by far the best I’ve ever tasted, not to mention the fact that there are so many different ways you can go with it! Next time I think I’m going to try it with pumpkin bread mix in honor of fall! Thanks for the delicious recipe 🙂

    I honestly don’t know how many cookies this recipe makes because me & my husband kept eating them as I pulled them out of the oven! Such a great, simple recipe and the cookies were not overly sweet. 10 minutes left my cookies a little too gooey (so I baked them for 12 minutes) and the texture was perfect! If anyone is a fan of cream cheese, they will adore these cookies.

        I roll my dough balls in regular sugar then again in the powered sugar. Seems to give the cookie a better crinkle effect. These cookies are the best. For Christmas, I bake a batch of chocolate, almond, butter and lemon then use tins for gifts. Everyone loves these and wants more!!! LOL

        Holy smokes, these are an absolute addiction..ive been around the block with my cookies and these are hands down the best. I tried them for the first time using the lemon cake mix. Let me tell ya, they didn’t last much longer than a few hours..highly recommend these for ANY occasion, its truly a perfect recipe. You will never bake another type of cookie again with all the variations you can do with these. Just prepare to eat them way to fast. Especially when served alongside some lemon skunk kush!
