Sweet Chex Mix Ingredients

  • Rice Chex Cereal (3 cups) – Light and crisp for a balanced base.
  • Corn Chex Cereal (3 cups) – Adds another layer of crunch and flavor.
  • Golden Graham Cereal (4 cups) – Sweet, toasty graham taste that makes this mix unique. You could also use cinnamon toast crunch for even more sweetness.
  • Sliced almonds (1½ cups) – Nutty crunch that balances the sweetness. Try peanuts, cashews, and walnuts (omit the nuts for allergies).
  • Sweetened shredded coconut (2 cups) – Chewy, sweet texture that blends beautifully.
  • Sugar (1 cup) – Sweetens the syrup coating.
  • Light corn syrup (1 cup) – Keeps the sugar from crystallizing and makes the coating smooth.
  • Salted butter (¾ cup) – Adds richness and helps coat the mix evenly. Use unsalted butter and add ¼ teaspoon of salt.
  • Vanilla extract (1 teaspoon) – Brings everything together with a warm, sweet note.

How to Make Sweet Chex Mix

TOSS. Add Rice Chex, Corn Chex, Golden Grahams, sliced almonds, and coconut to a large bowl and toss.

COATING. Place sugar, light corn syrup, and butter into a small saucepan. Set the temperature to medium-high and bring the mixture to a boil. Stir occasionally. Boil for 2 more minutes and continue to stir occasionally. Remove the mixture from the heat and mix in vanilla.

COMBINE. Pour over the cereal mixture. Toss until all pieces are evenly coated. Line a pan with parchment paper and spread the mix out evenly to set.

  • TOAST. Toast the almonds and coconut lightly before mixing for extra flavor.
  • SWITCH UP ADD-INS. Try swapping almonds for pecans or walnuts, or even add M&Ms or mini marshmallows once cooled for extra fun.

    Do you have to leave it out to dry? Just imaging it all clumping up in a bowl.

      I like to let it cool down and set by lining a baking sheet with wax or parchment paper. Just spread the mix evenly over the pan. And then once it’s cooled and set, you can break it up and put it in a bowl or an air-tight container to store.

    I love this recipe. Luckily Chex is on sale and this recipe makes a lot. I trust and love all of Lil’ Luna’s recipes. It started with her Snickerdoodle recipe, then her chocolate chip recipe, and after that I just love everything she puts out there. And this one is just as great. Enjoy!
