It’s no secret that we are slightly obsessed with all things tacos – so why NOT turn it into a casserole?

We basically turned a taco (or taco salad) into a casserole that preps in minutes and feeds a crowd – win-win!

Instead of tortilla chips, we used a biscuit base (still just as tasty but a bit heartier and easier to scoop). We layered that with taco meat (ground beef seasoned with taco seasoning) and added our favorite toppings for one tasty bite!

You can add all the ingredients you love, but we usually add sour cream, lettuce, tomatoes, cheese, and olives! Try topping it off with a delicious Taco Salad Dressing!

Casseroles are the ultimate solution for weeknight dinners and potlucks! This taco casserole recipe is one of the more unique casseroles, but everyone loves it!

Why we think you’ll love it:

  • Some favorite flavors. This recipe is kind of like a Taco Salad or Navajo Tacos but in casserole form!
  • Preps in 5 minutes! Cook up your ground beef and layer. This is one easy dinner, perfect for busy nights or any night!
  • Enough to feed the family. It’s hearty and filling and makes around 8 servings so there’s plenty for everyone! Add a couple of sides (like Spanish Rice and Refried Beans) to make it go even further.

Taco Casserole Ingredients and Substitutions

  • 2 pounds ground beef – or ground chicken or ground turkey
  • 2 (1-ounce) packets taco seasoning – store-bought or 2 tablespoons of homemade Taco Seasoning
  • 4 large eggs
  • ¾ cups milk
  • 1¼ cups biscuit/baking mix
  • dash black pepper
  • ½ cup sour cream or Mexican crema
  • 2 cups chopped lettuce
  • ¾-1 cup chopped tomato
  • 2 cups shredded cheddar cheese or Colby Jack cheese
  • olives
  • optional mix-ins – corn kernels, onions, jalapenos
  • more toppings – fresh cilantro, diced avocado, Pico de Gallo, and Guacamole

How to Make Taco Casserole

  1. GROUND BEEF. Cook 2 pounds of ground beef over medium heat, drain, and add 2 packets of Taco Seasoning. Spread the meat on the bottom of a 9×13 pan or baking dish.
  2. BISCUIT LAYER. Beat eggs, milk, biscuit mix, and a dash of black pepper until well combined, and pour over ground beef mixture.
  3. BAKE. Bake at 400°F for 20-25 minutes until golden brown.
    • Let it cool for a few minutes and spread on sour cream. Top with your desired toppings. Add chopped lettuce, chopped tomato, cheese, and black olives.
  • Fully brown the ground beef and drain the excess oil.
  • Spread the batter evenly over the ground beef mixture to ensure even cooking.
  • Add extra spice with red pepper flakes or chili powder.

Taco Casserole Recipe

This hearty taco casserole recipe has a biscuit base and all your favorite taco flavors. It preps in just 5 minutes and feeds a crowd!

Ingredients 

  • 2 pounds ground beef
  • 2 (1-ounce) packets taco seasoning
  • 4 large eggs
  • ¾ cup milk
  • cups biscuit / baking mix
  • dash black pepper
  • ½ cup sour cream
  • 2 cups chopped lettuce
  • ¾-1 cup chopped tomato
  • 2 cups shredded cheddar cheese
  • olives

Instructions 

  • Preheat the oven to 400°F.
  • Cook beef over medium heat in a large skillet until no longer pink. Drain meat, add taco seasoning, and prepare according to package directions.
  • Add meat to a greased 9×13 baking dish and set aside.
  • Beat eggs and milk in a large bowl. Stir in one and a quarter cup biscuit mix and pepper, and mix until combined well. Pour over meat and bake until golden brown (about 20-25 minutes).
  • Let cool for a few minutes and then spread on sour cream.
  • Top with lettuce, tomato, cheese, and olives. Serve warm and ENJOY!

    I guess I am one of the few that didn’t really like this. Concept is fine just flavorless. Would of been better to had just made delicious tacos 🌮. Just needed some oomph like salsa, taco sauce, Mexican seasoning. Leftovers lol I will be scraping off the biscuit mixture and adding the rest into taco shells.

    I have made this a number of times. Half the recipe as there are only two of us. Normally I add the cheese when it is done
    baking then leave in oven for a few minutes. I was wondering how it would work if I spread cheese over meat before I added biscuit mix. Anyone tried it that way?

    My family loved the taco casserole. We have taco’s a lot at my house. It can be a little messy eating. That Is why I like making the casserole, it comes together good and you can really taste all the flavors . Not like a regular taco where your taco breaks and you loose all the good stuff that falls out. You end up getting a fork to finish. The casserole is great and easy and I will be passing that recipe on to my sisters👍 yum 😋

    I made this for my Grand Daughter’s birthday who is a picky eater does not like anything made with hamburger. She didn’t want to even try it but i finally convinced her to take a taste and she loved it. Now she has requested that i make it for her every year for her birthday. The only thing i did differently was i made a cornbread topping and added cheddar cheese to it and then baked it. Once i then topped it with the other toppings.

    I made this but I changed it, I put parchment paper down on the pan. I layered it with re-fried bean layer then the beef on top with a layer of sharp cheddar cheese. Baked it a 250°F. for 20 minutes. Then I took it out by the parchment and put it on a sheet. I relined the pan with Doritos’s then flipped the parchment over with the cheddar layer on the chips. Then topped with sour cream, lettuce, tomato and black olives as suggested. Next time I will make the chips a little larger.

    My friend made this for dinner one evening and my husband and I loved it so much that I got her to give me her recipe and that was about 23- 24 yrs ago. Her recipe name was Taco Quiche. The only thing we do differently is we bake the meat/ bisquick part, cut in in cake size pieces and then we each put our own toppings on it, that way everyone can choose what topping they like best. We love this one!

    I will be making this later this week and have picked up a Betty Crocker Bisquick Buttermilk Biscuit mix that you need to just add water to. It also cooks at 425 for 8-11 minutes. These are the instructions to make individual biscuits. Should I follow the instructions on pkg or your instructions (Beating 4 eggs with 3/4 cup milk and then adding the 1 1/4 cup Bisquick.) Pour onto the casserole and bake 20-25 min. Thanks so much!

      It goes in as a topping. So once the bottom part of the casserole has baked (meat and biscuit layer), then sour cream, lettuce, cheese, olives, etc. get added to the top.

    I used Bob’s Red Mill 10 Whole Grain Pancake Mix and substituted Chobani Original Non-Fat Greek Yogurt for Sour Cream.

    I made it and used the taco spice recipe. Made half recipe since only two people not 8 🙂 Halving worked fine I used about 1 1/2 TBS of the taco season as we like it spicy! Also used cornbread mix and cooked the mixture with the ground beef at 425 for a little over 20 minutes (till it was bubbly and browning). I thought 350 for 15 to 20 min was not enough. Turned out great and we loved it. Put the topping on and used a little Cholula and dressing. Thanks for putting this out there would have never thought to do it.

      You could just leave it off. Not really sure what else would be good with this specific recipe. Usually Greek yogurt is a great substitute for sour cream, but not sure it would be great with this..lol!

    Cook the refried beans with your ground beef or ground turkey and follow the other instructions. but might I suggest using a corn tortilla shell at the bottom before the meat and do the layering of the other ingredients after that.

    I cook at a senior living home and this was the perfect Way to make taco salad for them. As shells or chips are Difficult for many of the elderly to East, the biscuit variation Worked very well and it was still as good as your typical taco salad. Will definitely make this again!     We had this last October for my bday and it was delicious. I love how simple this recipe is to make. The only changes we made were to omit the biscuit mix and instead we layered corn tortilla strips on top of the meat and then put the sour cream and lettuce on top of the strips. Super easy to dress this up anyway you like, we just added some cilantro for flavor. A great week night rotation recipe. Many thanks. IT is sometimes hard to find uncomplicated recipes these days!

    It turned out really well. I was sceptical when it was baking and looked like meat cake but it was pretty yummy. The onky thinG i’d add next time is crushed tortilla shells so you still get the taco crunch. But it was really good as is (except we skipped the olives as no one likes them here ha ha)

        Loved this recipe. Just had the kids and 3 grandkids over for an ouside distancing poolside supper. It was simple to throW together before they arrived and quick to cook 25 minutes) when the Kids said they were getting hungry. Made it in a throw away pan and we all used disposible plates so clean up was easY with minimal “touching” of each others supplies. Served it with individual packs of DoritoS for the kids. Everone loved it and ate until it was gone. Will for sure make again. I made it just as Written. Thank you for this great r3cipe!

    I used a pkg. of Mexican Cornbread (Martha White) instead of the Bisquick, adding some red & green bell pepper, jalepeno pepper and onion, all diced small. It was good!! I did not use sour cream but instead when casserole was finished cooking, I topped with cheese putting it back into the oven to melt and then once cheese was melted topped with lettuce, tomatoes and green onions..no black olives…don’t care for the olives or sour cream. Also, to my meat I added some onions, jalepeno pepper and rotel tomatoes and seasoning it with black pepper, onion and garlic powder along with the taco seasoning. I really liked it!!!

    Little Lil’Luna is such a sweetie and looks like she is ready to dive right into that casserole. Think she was enjoying her cookie a lot more.
