I have one last soup to share with you before I have an awesome round-up of Soup Goodness for you this weekend.

This next one was made by my mom and I have to admit I was a little hesitant when she said it had sausage and tortellini. I love both but couldn’t image it together in a soup. I’m happy to report that it was SO good. It tasted just like a yummy Italian dish and was so hearty and flavorful. I may have had 3 servings – no joke!! I think you will love this Tortellini Sausage Soup just as much as we did!!

Tortellini Sausage Soup - a new favorite! Packed with lots of flavor, including sausage, veggies, & tortellini tossed in lots of spices!

  • 4 links Italian Sausage
  • 4 tsp garlic minced
  • 1/2 cup apple cider (NOT Apple Cider Vinegar)
  • 4 cups chicken broth
  • 15 oz can tomatoes diced
  • 1 8 oz can tomato sauce
  • 1 cup carrots chopped
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 2 tbsp dried parsley
  • 2 medium zucchini sliced
  • 16 oz cheese tortellini


  1. Cook sausage in a pan until browned and broken up.

  2. Add garlic and cook sausage for 1-2 minutes longer.
  3. Move meat to a pot. Stir in broth, tomatoes, cider, tomato sauce, carrots, basil and oregano. Bring soup to a simmer, cover, and cook for 30 minutes.
  4. After 30 minutes stir in zucchini and parsley and simmer for 10-12 more minutes.
  5. Add tortellini and cook for 7-10 more minutes. Top with grated Parmesan. Enjoy!

Oh, yum, this recipe was good!! If you are a fan of Italian food I know you will LOVE this recipe. It was really easy to make and didn’t take long either, which is always a bonus.

  1. Thank you for the delicious Tortellini and Sausage Soup Recipe! It is a BIG HIT at our house!! I’ve made it twice in the last 3 weeks and am sure we’ll be having it very often at our house.

    1. I have and it works just fine. I browned the meat as per instruction and threw everything in the pot and cooked on low for six hours. Add tortellini and turn to high until pasta is tender and serve. I served mine with piping hot cornbread and butter which went perfectly with the flavors of the soup.. YUM! . On a side note, I added one onion, a tsp. of marjoram and a bay leaf to mine as well. I also have made this with chicken and rice instead of the sausage and tortellini and it was good too.

    Followed the recipe to a T except I tossed in some fresh baby spinach too.

  3. I do not see a response to the apple cider question. Can you tell me if you use apple cider vinegar for this recipe?

    1. i never have apple cider and i do have cider vinegar so that is what i have always used. although i just use a glug of it, not a ton. sometimes i might add some sprite or something if it needs a bit more liquid.

  5. Thank you for the tortellini soup recipe! I made this today and am sitting in my clean house loving this soup! It has a permanent place in my recipe rotation and I can;t wait to try it with a hotter italiian sausage. I used sweet tonight and it truly is amazing!

  6. This soup was fantastic! I made it for dinner tonight and my husband was eating it straight from the pot after his huge bowl :^) Very, very tasty, thank you for sharing your recipe. I made cornbread with it and it was perfect!

  7. Since I am suppose to be eating low carb I left out the tortellini :(sob): and added a can of washed and drained cannelloni beans. I also added an onion, 3 stalks of celery, 1 tsp. marjoram, a yellow summer squash and a bag of baby spinach ( added in the last five minutes of cooking so it just wilts) to the existing recipe. We love this soup and I love taking a crockpot full to potlucks. It always comes back empty. ๐Ÿ™‚

I never would have thought of adding apple cider and I tried it once without but OMG the difference it makes!!! I tell everyone I share this with to make sure they don’t leave it out.
        The additions I made were to try and make up for not having the stretching power of the pasta and a wonderful jaunt to a local farm stand inspired me as well. I LOVE how all the colors and flavors ( and the fabulous aroma) mix together and it is even better the next day. I am actually sitting here eating a bowl as I type this and on this chilly rainy fall day it is like a bit of summer is lingering in my kitchen. ๐Ÿ˜€

  9. I followed the instructions exactly. This soup was so salty! It was not good and we ended up throwing it away. It’s to bad because it was expensive to make!

    1. I’m so sorry you thought it was salty. We’ve made this several times and have never felt that way but everyone has different tastes. As you can see from the recipe there is no salt, but perhaps you could use chicken broth with less sodium so it doesn’t tasty so salty. Sorry you had to throw it away. :/

  10. I have been making this soup after I found the recipe on your website five years (!) ago. It’s one of my family’s favorites! I noticed recently though that the tomato sauce called for in the directions isn’t listed in the ingredients anymore. Can you remind everyone how much tomato sauce you use in your recipe? I went by memory the last time I made it but would like to know what the recipe really calls for.

    Wow! This recipe is amazing.

    i hadn’t made it in a while, so i went into pinterest yesterday, and saw that it was from lil’ luna! (I met you in may at the at conference). i have been making this recipe for years… and i’ll have you know it was my first ever pin!

    i use ground sausage (out of laziness) and usually use apple juice instead of cider, also out of laziness/what i have on hand (it seems like I can always find a kid’s apple juice box laying around somewhere- ha!)
