We Love Slow Cooker Dinners!

Crockpot dinners are a lifesaver for our busy weeknights! One of our favorite dinner recipes is crockpot pork roast because it is packed with flavor.

We often repurpose the leftovers from this dish in recipes like Pork Tacos or Loaded Pulled Pork Cups, which means we can enjoy two or more easy dinners in a week.

Why we love it:

  • Time-saving. With easy slow cooker recipes, the crockpot does most of the work! Minimal prep makes these perfect for any night of the week.
  • Cranberry glaze. The sweet and tangy Cranberry Sauce adds a flavor explosion and a unique twist.
  • Cost-effective. By cooking it until tender and flavorful, you turn one of the least expensive cuts of meat into the tastiest.

Ingredients

Roast

  • 3-pound pork sirloin roast Pork sirloin, pork loin roast, pork butt, and pork shoulder roast do well when cooked low and slow. If using a pork shoulder in this recipe, increase the cooking time a bit. I do not recommend using pork tenderloin.
  • 1 (2-ounce) package dry onion soup mix – contains all the seasoning needed for a flavorful roast.
  • 1 (16-ounce) can whole berry cranberry sauce Use Fresh Cranberry Sauce for even more flavor. If you are not a fan of cranberry sauce, use a mixture of brown sugar and chicken broth.

Gravy

  • 2 tablespoons unsalted butter – is the needed fat to make a roux
  • 2 tablespoons all-purpose flour – combined with the butter, the flour will help thicken the gravy.
  • drippings/juice from the cooked roast – using flavorful drippings as the base for gravy provides an incredible depth of flavor.
  • salt and black pepper – to enhance the natural flavors

Add Flavor

Season with smoked paprika, chili powder, rosemary, thyme, garlic, dijon mustard, or even Italian seasoning

How to Make Crock Pot Pork Roast

  1. PREP. Place 1 (3-pound) pork roast in the crock pot. Sprinkle 1 (2-ounce) package of dry onion soup mix over the top of the roast followed by a 1 (16-ounce) can of cranberry sauce.
  2. SLOW COOK. Cook on low heat for 8-10 hours. Remove the meat from the slow cooker and shred. Cover with foil and keep warm while preparing the gravy.
  3. GRAVY. Add 2 tablespoons butter to a large skillet over medium heat. When the butter is melted and bubbly add 2 tablespoons flour and whisk to form a paste. Cook 2-3 minutes, until golden brown.
    • Pour the drippings from the cooked roast into the skillet and whisk to combine. Cook 5 minutes, until the gravy bubbles and thickens.
  4. SERVE. Serve the roast with noodles or Best Mashed Potatoes, and pour the gravy on top.

Sear For Extra Flavor

Sear pork sirloin in a skillet before adding it to the crock pot to enhance the flavor and appearance of the meat by creating a caramelized crust on the surface of the meat. If your roast has a layer of fat, cook it fat side down.
