Absolutely love a breakfast casserole, makes feeding a group easy and delicious!
Very good recipe with great flavors and easy to make. And while I love crescent rolls (who doesn’t ) can’t be a regular in my diet since we try to do low carb when it is just my hubs and I. Maybe I will try omitting the rolls and see about a modification since all the other ingredients go so well together.
My daughter in law made this and her mom makes it and with a twist with hot sausage. I absolutely love this recipe
Sounds good. I’m trying it this morning fir church.
Looking forward to trying this one – easy and sounds delicious!
I belong to our community Garden Club and we have monthly meeting. Each meeting we have volunteers to provide breakfast items. This was my turn and I had no idea what I was going to make. I saw the Sausage Breakfast Casserole and thought it would be a perfect choice to make.
I had never really made breakfast items before but this was an easy recipe to follow. It was a big hit, so flavorful. Several members requested the website for the recipe. I will be making it again as one of the items for an Easter brunch this year
This is my go to recipe at Thanksgiving, Christmas and Easter. I prepare the night before and put in the refrigerator and bake the next morning. The smell of the casserole baking wakes everyone up, which is better then an alarm clock. The flavors are delicious.
Love how easy this is to throw together. Kids all loved it!!!
My family loves breakfast casseroles. So easy to make and everything in one dish. Makes for easy cleanup too.
This is the only way to go for breakfast when you have a large crowd to feed, especially around a holiday. Everyone loved it! So filling and yummy. I have to double it around my house!
This recipe is okay, but I prefer adding a block of cream cheese to the wet items and then topping with another crescent sheet.
Thanks for sharing what you do! That sounds tasty too!
I recently made this casserole a few days ago because I had friends drop in for a quick stop over on their way back to Kansas. This recipe is so quick and easy for breakfast or a brunch. I made it the night before and popped it in the oven the next morning and we sat around the table visiting instead of up trying to fix a meal before they had to leave.
Prep is quick and most of the items I have on hand so can make at any time.
There are so many variations that you can make with this recipe. I like ham mushrooms and onion with Colby jack cheese. My family likes the original recipe with sausage so we trade off which one to make. So everyone is happy and enjoys breakfast or brunch.
This recipe is everything and more. We love to change it up by using regular sausage with mushrooms & onions, or Italian sausage with chopped cherry tomatoes, garlic, onions, and mozzarella cheese. My favorite is ham with green peppers & onions. It goes together like a dream and the flavors are delicious. Whether you make it the night before, in the morning, or for dinner you will definitely want to make this again and again!!
This is easy but delicious! Perfect for Sunday brunch with the family but we love it for dinner too. Recently used Jimmy Dean turkey sausage crumbles which are precooked so dinner was on the table even faster.
Can this be halved and would the cook time remain the same?
Thank you.
Yes, you can split the recipe in half. The baking time may reduce a bit. I’d start checking it around 10 minutes and go from there. You’ll know it is done when the eggs are set and the crust is golden.
Can this be made in a crockpot? If so, what’s the suggested cook time and would you change any steps of the recipe?
Yes, I suppose you could! I’d say cook on high for about 3 hours or low for 4-6 hours. I think all of the steps would remain the same, you would just put it in the slow cooker rather than a casserole dish. You’ll have to let us know how it turns out if you make it in the slow cooker!
Happy Holidays! I was just going over some of your tried and true recipes and was reminded of your homemade Spanish rice. I don’t remember if I thanked you for it.
Several years ago I was in charge of our churches Anny Sunday for all the married couples of 10+ years. I had a Latin theme that year and used your recipe to feed over 50 people. It turned out perfectly and was the perfect side to all the other dishes. You and your recipes never disappoint!
Thank you for taking that stress out of a very busy and big meal! With you it’s always a win/win!!
Oh this makes me so happy!! Thank you for your kind words. I’m so glad that these recipes are helping bring joy and relieve stress for others. It bring me so much joy knowing others are loving them too.
Kids love this sausage breakfast casserole whenever they have sleepover! It is tasty, filled with flavor and incredibly satisfying!
I am always mixing up my breakfast routines, and this sausage dish was just delicious! thank you so much for sharing this amazing recipe!
Made this over the weekend and it turned out so delicious! Easy directions to follow and was so savory. Adding this to my recipe book.
I made this but didn’t have bread. The dog ate 1/2 loaf of bread while I was outside. I had butter and garlic croutons and used those. It was great! Thank you for teaching me such a delicious and easy meal. We love it!
This was Delicious! Made as written and will make again. In the notes you say to store in fridge up to 4 days. Underneath its stated that you can store in the fridge up to 2 months. I know you meant freezer. thought maybe you’d want to fix that
Thank you for pointing that out! We’ll get it updated!
Our favorite for a crowd!
Yes!! It’s always a hit!! Thank you!
This looks really good! And easy as well! I’m going to give it a try. Thank you!
I sure hope you like it!!
I prepare this Sausage Breakfast Casserole when we have overnight guests. I can prepare it and reheat it whenever the sleep-in guests are ready for breakfast.
Love this for breakfasts at the lake!
I am always searching for new breakfast ideas. Can’t wait to try this.
This is the best breakfast casserole for people who are not morning people , but enjoy a tasty home cooked breakfast with out the fuss. I make this the evening before a place it in the refrigerator overnight . Pop it in the oven in the morning and enjoy ! One of my families all time favorites
Yes, that’s why I love it!! Thanks for sharing that!
I made this last Sunday and my husband and grandchildren loved it. I eat Keto and I felt very safe eating this. Fast and easy. Thank you so much Lil Luna for a great dish I can keep in my recipe box.
You are so welcome!! Glad they all loved it! Thank you!
I have used this recipe so many time whenever children and grandchildren come to visit! Now they request it!
I love to hear that!! It’s a keeper for sure! Thank you!
This was sooo good! I loaned out my 9×13 dish so I made it in my round porcelain cast iron and cut it into wedges. We had this for dinner (breakfast for dinner night) & loved every bite! It reheats great in the microwave too. Win Win.
Love breakfast for dinner!! Thank you!
I’ve made this a few times for my boys and they love it. It is such an easy breakfast especially on busy weekends.
Yes, for sure!! Glad you like it!
I can’t wait to try this! I make something similar, but have never done it with the crescent sheet. YUM!
I sure hope you like it! We love it!
I love quick breakfast recipes that can be put in the oven and are filling for a crowd. It sure beats being stuck in the kitchen while everyone else gets to visit and have fun.
Agreed!! Glad you like this one! Thank you!
This is an amazing breakfast casserole. It has all my favorite ingredients sausage, eggs, and Cheese. Cheese and sausage are a perfect combination. I love the layer of bread on the bottom. It is easy to make and feeds a group of friends. Everyone loves it when I take it to a church potluck!
Glad it’s a hit!! Thank you!
Love the sausage breakfast casserole, it was so easy. I might add potatoes to the next one for my church buddy breakfast. 5 stars
Great idea!! Thanks for sharing that!
I have made this recipe for a lot of family breakfasts, especially for holidays! Now that my kids are older and on their own, they always request this got mornings when we are all together, my don says it’s his meal that he remembers when we were all together growing up!

A friend of mine made this and it was absolutely delicious. I came home and made it and it’s now a family favorite!
I love making this and dropping it off for my grandkids to have for breakfast!
This is one of my go to recipes when we have friends or family over for breakfast/brunch. Quick, easy and full of flavor!
Made it and everyone loved it. Perfect to make the night before on a holiday eve. So easy and good. Thanks for all the ideas you come up with!!
We love this recipe for breakfast, and even dinners. Sometimes, I pour a little sausage gravy over the top as it bakes. Either way is sooo good.
This couldn’t be any easier – but tastes like you put a lot of effort into it! Freezes well, so it’s nice to be able to make it ahead of time.
Delicious and easy to bake and take to breakfast on Sunday. Always looking for yummy alternatives!
I use this recipe when do breakfast for dinner, then we eat the leftovers the next morning!
Crowd pleaser for my family – and my Canasta group loved it as well
Yum! But substitute texas garlic toast for the crescent dough and yummmmm!!!!
This is a big hit on Christmas Day along with the French Toast Casserole in our home! Also a must when we go camping! It is so easy and fast to whip up!
This has become a weekend staple at our house. Absolutely delicious.
Can’t to try this one.
I love this recipe. Adding bacon crumbles. Yummy
Love a good breakfast casserole. This one is easy and delicious to make. Such good flavors
These look delish! Can’t wait to try them!
Made it night before and cooked next morning. Great time saver and my family ALL enjoyed it!
Absolutely delicious & quick to make!! Great for leftovers also!
Sounds great. Update your freezer directions though.
You said 2 months in fridge. I hope you meant freezer. This was wonderful, thank you.
Thanks for catching that! Yes, in the freezer! Glad you enjoyed the recipe.
This was a very easy casserole to make and I winged it and put onions and peppers In It to give it flavor
This was SO easy and delicious! We have a standard breakfast casserole we have made for years which includes toast broken up into small pieces but this one is so much less time consuming and according to my hubby, even better! Because of the size of our family, I included 8 eggs and it was done in 22 minutes.
I just got through making this breakfast casserole, and will definitely add this to my favorites! Not only was it easy, but has lots of flavor!
I added peppers and onions to the sausage when I cooked it. I also used half of low fat cheddar cheese and half of regular cheddar. I also used half and half milk instead of regular skim milk.
I will definitely make this again. Thanks for sharing this recipe!
You’re welcome! I’m so glad you enjoyed the casserole! Thanks for sharing what you did.
We found this recipe a few years ago. Always a favorite with family and friends and so easy!
Quick, easy and delicious.
Oh I’m so glad to hear the recipe is a hit! Thanks for sharing!
I haven’t made this yet, but I wondered if you or anyone on here has ever tried adding some gravy to this casserole and if so, did it come out ok? I used to get these little frozen individual breakfast pizza’s that had gravy, sausage, cheese, and egg that were so good, but I can’t ever find them anymore, so I’ve been on the hunt for a recipe that might be similar.. the gravy really made the whole dish so good.. any ideas would be great! Thanks in advance! 🙂
Those do sound tasty!! I haven’t made this particular breakfast casserole with a gravy before. But if you do add one, you will have to let us know how it turns out! We have a Biscuits and Gravy Breakfast Casserole that might interest you too… a little different than this one, but might be worth looking into for the gravy aspect of it. 😉 https://lilluna.com/biscuits-and-gravy-casserole/
I’m making today. CAN I ADD ONIONS, MIXED PEPPERS N KALE TO THIS RECIPE? COULD TURKEY SAUSAGE BE USED INSTEAD OF REGULAR?
Absolutely!! How did it turn out?
Yes! I made the casserole but added hashbrowns on top of the egg and topped them with cheese and baked as directed. While that was baking I made some sausage gravy. Girl! If you haven’t made it yet you’re missing! Chef’s kiss 💋
Do you know what I can substitute for the crescent roll dough? I have looked in many stores and there seems to be a supply issue with Pillsbury
Oh darn! You could try using a pie crust or even using refrigerated biscuits. Both would give you a little different flavor and texture, but may still work? If you use biscuits, I’d say flatten them out either with your hands or a rolling pin so they aren’t so thick. Best of luck in the hunt for crescent rolls!
My family loved it the video helped.
I typically use a different recipe but was intrigued by yours with the use of the cresent sheet, so I combined them. I just realized that in your recipe it calls for 5 eggs, my normal one, 8 eggs. Should I remove some of the egg mixture? Wondering if it’ll still cook up nicely with the crescent sheet with that much egg.
I haven’t ever tried the recipe with 8 eggs. You maybe would need to play with the baking time? You’ll have to let us know what you did and how it turned out. 🙂
We love this recipe!! When making ahead of time, do you still pour the egg mixture on top? Even if it’s not going to be cooked til the next day?
Yes, you can! You can make the recipe up to 24 hours beforehand and you can pour the egg mixture on already. You can also wait until right before baking too. Either way!
Cooking this for 15 minutes?? All other recipes say cook for 45 +
Needless to say….now I am running late waiting on my still raw casserole dish tobake!
Sorry to hear the recipe put you behind in your day. It has typically only taken us 15-20 minutes to fully bake, but every oven is different so that time could vary. Hope you still enjoyed the casserole and thanks for giving the recipe a try! 🙂
I literally just made this recipe and it took about 18 minutes to be completely cooked. And the nice thing is you don’t have to wait till it cools, it cuts perfectly.
You did something wrong then. I just pulled mine 4th one this month from the oven after 17 minutes and as always it’s perfect and delicious! Don’t blame her for it not cooking in your oven properly. Great recipe. Christmas breakfast this year!
One of my top 5 favorite breakfast casseroles! Super tasty, super easy to make, and it’s a definite crowd pleaser.
Great for more than just breakfast, and it’s a very satisfying leftover for dinner, too.
We love this for Christmas breakfast and a week night dinner!
Can’t use dough as I need it to be gluten free leave out the croutons and Cresent rolls just eggs sausage and cheese and bacon
Thanks for sharing a way to make this a gluten free option. 🙂
Great, recipe, but does take a bit longer if wish to doctor it up a bit 😀great !!!!!
So glad to hear you enjoyed it!! Thanks!
Hi! I would like to use turkey sausage. Have you tried and is it good?
You totally could! I haven’t tried it with Turkey sausage so I’m not sure how it would taste, but you could definitely make that swap!
Easy and super ultra mega delicious. And I logged it in my fitness pal. If it’s cut into 12 squares, each serving has 260 calories, 12 g protein, 25% calcium, and 42% vitamin A. (Of course I ate 3 servings cuz it’s so good). Great way to start the day
Could I sub biscuits for crescent rolls? Its what I have on hand. I think it would turn out ok!
Yes – I think it would work. Just make sure the biscuit dough isn’t too thick. You can stretch it out to be a little thinner like the crescent roll dough if you need to.
Looks delicious! Could I substitute ham for the sausage?
Sure thing! I have done that before and it’s delicious! 🙂
A very easy and delicious recioe
Thank you for saying that 🙂
I LOVE this casserole recipe! I used 11 eggs in order to serve more people. I accidentally left out the italian seasoning. It was the best casserole I have ever tasted! Thanks, I will recommend to everyone!
Awe, thank you so much for sharing that!! That makes me so happy!
I made this today for brunch and it was delicious.
I added some bacon too. Thanks for the great recipe.
Yum! Thanks for sharing that!
This has been our go-to family breakfast during quarantine. I’ve made it at least once a week since finding it in April! Simple and delicious!
Yay!! That makes me so happy! Thank you!!
Looks so yummy I had to do this today and love it
I am glad you did!! Thank you so much!
Holy Honey Hush!!! This recipe should be regulated by the FDA as a controlled substance because you CANNOT stop eating it!!! Just made it and I swear I alone could eat the whole dish!!! This JUST became a Christmas Eve Morning tradition!!!!
LOL!! That is too funny! Glad you liked it that much! Thank you!
Delish sausage casserole recipe.
This is a family favorite for breakfast or dinner.
Quick and easy, the family love it
Easy and yummy recipe!
This is my all time favorite breakfast casserole! It’s a crowd pleaser!
Excellent and so easy. Fix now pop in the oven later
That’s why I love it! Thank you!
This is so simple to throw together. My 84 yo Dad usually goes out to breakfast every day. With cases rising after Thanksgiving, he is staying at home. I made this and he is raving about it. One pan put into individual containers feeds him for a week with some leftovers for the freezer. I can’t stress how easy this is to make. We add tons of veggies to it as well.
I am so happy he likes it! Veggies are a great option!! Thank you!
So delicious, easy, and quick. Thanks for a great recipe!
Thank you so much for saying that!!
Love this , I use either plain light bread or Texas toast and have never ever had a piece left and I always have to make two casserole dishes at the same time , think I will be trying the crescents next time . I had never thought about that . Well time to go make some happy belly’s!!
Yay for happy belly’s!! Thank you so much for saying that!!
Such a great, simple recipe! I Used eight eggs instead of five, and cooked for 20 minutes. Even my picky child loves it, and he does like anything! Perfect for families on a budget.
It totally is!! So happy your picky eater even liked it! Thank you for sharing that!
So delish and amazingly simple. I made this for my daughter, her husband and two growing boys. I didn’t think the recipe called for enough eggs so I increased the quantity to eight instead of five. It turned out perfectly. And, ITALian seasoning for breakfast? No. I omitted it. I Plan to make it again this weekend for overnight guests. Thank you for publishing this!!
You are welcome! Thanks for sharing this recipe 🙂
Can I fix this breakfast casserole and freeze on December 12th then bake it on the 20th?? I’m trying to bake things before my kids come home on December 19th….
I personally have not tried freeing this. You can make ahead & stick in the fridge covered, then bake. That could work for freezing, but I have not tried.
Am i suPposed to let it sit before i cut into it? If so, For How long?
I mean you don’t have to, but I usually let it sit for at least 5-10 min, to cool.
Going to make this for breakfast.
I hope you like it!
Mine CAME out “juicy” (too Runny) as well. I wrapped it up in aluminum foil and placed it back in oven For 5minutes. That did the trick.
I am glad that helped 🙂 Thank you for letting me know!
This thing is amazing! I usually dice up a small onion and sautee it with the sausage. I also use 9 eggs – which I know is a far cry from the 5 listed in the ingredients – It’s just what my husband and I like best. So I double the milk and add extra seasoning. We make it on a Sunday and then heat up pieces for breakfast through the week. THANK YOU SO MUCH FOR CREATING THIS!
That sounds perfect! Thanks for sharing that! And, I am glad to share 🙂
Fast to make….delicious to eat
Thank you for sharing that!
Delicious! I made a couple adjustments. I added sauteed spinach, onion, mushroom and garlic to make it more hearty as a dinner entree. I also used sausage crumbles from the bag since i had That on hand. Will definitely make again! Thank you!
Sounds delicious! Thanks for sharing what you did 🙂
love it!
I am happy you do! Thank you!
Can I use biscuits instead of crescent rolls
I haven’t used biscuits, but you could certainly give it a try! Baking time may be slightly different since the biscuits would be much thicker. You’ll have to let us know how it turns out if you use the biscuits. 🙂
Simply Marvelous I added sauteed onions and bell peppers and another egg. I baked croissant first for 5 minutes before topping. When done I topped with finely chopped cilantro family didn’t leave any I had 1 bite. And it was good!! Thanks I will be making again
That sounds perfect!! Thank you for sharing what you did. Glad you liked it!
My was juicy. what did i do wrong
Hmmm…that’s a good question. I haven’t had that issue. Maybe it needed more time in the oven.
What size crescent rolls work best?
It’s the crescent sheet, so they are pretty similar 🙂
This is an excellent receipt and my family loves it.
I am so happy to hear that!! Thank you for letting me know!
So delicious and Quick and easy! Will DEFINITELY be making this again!
So excited to try this one! It looks so yummy
This looks sooo good and I love the idea of using crescent rolls! Can’t wait to try it out on the HUBS.
Absolutely delicious! I kept recipe as is!
I am so glad you liked it!! Thank you so much!
Can you add hashbrowns to it
For sure!! That would be a great addition!
