Sausage Breakfast Casserole Ingredients and Substitutions

  • 1 pound sausage or flavors of pork, chicken, or turkey sausage. You can also replace the sausage with cubes of ham or cooked crumbled bacon.
  • 1 (8-ounce) package crescent sheet
  • 5 large eggs
  • ¼ cup milk
  • 1 teaspoon Italian seasoning – Omit the Italian seasoning and replace it with a spice of your choice. Add heat with red pepper flakes
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup shredded cheddar cheese or Colby Jack, Pepper Jack, or a cheese blend. Freshly shredded cheese melts better than prepackaged cheese.
  • optional veggies – Saute and mix in vegetables like red bell pepper, mushrooms, broccoli florets, spinach, or jalapenos.
  • optional toppingsHomemade Salsa, cooked bacon, sour cream, or green onions, Sausage Gravy

How to Make Sausage Breakfast Casserole

  1. PREP. Preheat oven to 400°F.
  2. SAUSAGE. Brown 1 pound sausage in a large skillet over medium heat, breaking it up as it cooks. Drain excess grease.
  3. CRESCENTS ROLLS. Unroll the 8-ounce crescent sheet and spread it onto the bottom of a greased 9×13 casserole dish. Evenly spread cooked sausage over the dough.
  4. EGGS. In a large bowl, whisk 5 eggs, ¼ cup milk, 1 teaspoon Italian seasoning, ½ teaspoon salt, and ¼ teaspoon pepper. Pour the egg mixture over the top of your casserole, and sprinkle 1 cup of shredded cheddar cheese on top.
  5. BAKE. Bake for 15-20 minutes until the eggs are set and the crust is golden.

Sausage Breakfast Casserole

This savory sausage breakfast casserole is flaky, filling, and delicious! It's also ready in under 30 minutes!!

Ingredients 

  • 1 pound sausage
  • 1 package crescent sheet

Instructions 

  • Preheat oven to 400°F.

    Very good recipe with great flavors and easy to make. And while I love crescent rolls (who doesn’t ) can’t be a regular in my diet since we try to do low carb when it is just my hubs and I. Maybe I will try omitting the rolls and see about a modification since all the other ingredients go so well together.

    I belong to our community Garden Club and we have monthly meeting. Each meeting we have volunteers to provide breakfast items. This was my turn and I had no idea what I was going to make. I saw the Sausage Breakfast Casserole and thought it would be a perfect choice to make.

    I recently made this casserole a few days ago because I had friends drop in for a quick stop over on their way back to Kansas. This recipe is so quick and easy for breakfast or a brunch. I made it the night before and popped it in the oven the next morning and we sat around the table visiting instead of up trying to fix a meal before they had to leave.
    Prep is quick and most of the items I have on hand so can make at any time.
    There are so many variations that you can make with this recipe. I like ham mushrooms and onion with Colby jack cheese. My family likes the original recipe with sausage so we trade off which one to make. So everyone is happy and enjoys breakfast or brunch.

      Yes, you can split the recipe in half. The baking time may reduce a bit. I’d start checking it around 10 minutes and go from there. You’ll know it is done when the eggs are set and the crust is golden.

    Can this be made in a crockpot? If so, what’s the suggested cook time and would you change any steps of the recipe?

      Yes, I suppose you could! I’d say cook on high for about 3 hours or low for 4-6 hours. I think all of the steps would remain the same, you would just put it in the slow cooker rather than a casserole dish. You’ll have to let us know how it turns out if you make it in the slow cooker!

    This was Delicious! Made as written and will make again. In the notes you say to store in fridge up to 4 days. Underneath its stated that you can store in the fridge up to 2 months. I know you meant freezer. thought maybe you’d want to fix that

    I just got through making this breakfast casserole, and will definitely add this to my favorites! Not only was it easy, but has lots of flavor!
    I added peppers and onions to the sausage when I cooked it. I also used half of low fat cheddar cheese and half of regular cheddar. I also used half and half milk instead of regular skim milk.

    I haven’t made this yet, but I wondered if you or anyone on here has ever tried adding some gravy to this casserole and if so, did it come out ok? I used to get these little frozen individual breakfast pizza’s that had gravy, sausage, cheese, and egg that were so good, but I can’t ever find them anymore, so I’ve been on the hunt for a recipe that might be similar.. the gravy really made the whole dish so good.. any ideas would be great!       Oh darn! You could try using a pie crust or even using refrigerated biscuits. Both would give you a little different flavor and texture, but may still work? If you use biscuits, I’d say flatten them out either with your hands or a rolling pin so they aren’t so thick. Best of luck in the hunt for crescent rolls!

    I typically use a different recipe but was intrigued by yours with the use of the cresent sheet, so I combined them. I just realized that in your recipe it calls for 5 eggs, my normal one, 8 eggs. Should I remove some of the egg mixture? Wondering if it’ll still cook up nicely with the crescent sheet with that much egg.

      Yes – I think it would work. Just make sure the biscuit dough isn’t too thick. You can stretch it out to be a little thinner like the crescent roll dough if you need to.

    This is so simple to throw together. My 84 yo Dad usually goes out to breakfast every day. With cases rising after Thanksgiving, he is staying at home. I made this and he is raving about it. One pan put into individual containers feeds him for a week with some leftovers for the freezer. I can’t stress how easy this is to make. We add tons of veggies to it as well.

    Love this , I use either plain light bread or Texas toast and have never ever had a piece left and I always have to make two casserole dishes at the same time , think I will be trying the crescents next time . I had never thought about that . Well time to go make some happy belly’s!!

    So delish and amazingly simple. I made this for my daughter, her husband and two growing boys. I didn’t think the recipe called for enough eggs so I increased the quantity to eight instead of five. It turned out perfectly. And, ITALian seasoning for breakfast? No. I omitted it. I Plan to make it again this weekend for overnight guests. Thank you for publishing this!!

        I personally have not tried freeing this. You can make ahead & stick in the fridge covered, then bake. That could work for freezing, but I have not tried.

    Mine CAME out “juicy” (too Runny) as well. I wrapped it up in aluminum foil and placed it back in oven For 5minutes. That did the trick.

    This thing is amazing! I usually dice up a small onion and sautee it with the sausage. I also use 9 eggs – which I know is a far cry from the 5 listed in the ingredients – It’s just what my husband and I like best. So I double the milk and add extra seasoning. We make it on a Sunday and then heat up pieces for breakfast through the week. THANK YOU SO MUCH FOR CREATING THIS!

    Delicious! I made a couple adjustments. I added sauteed spinach, onion, mushroom and garlic to make it more hearty as a dinner entree. I also used sausage crumbles from the bag since i had That on hand. Will definitely make again! Thank you!

        I haven’t used biscuits, but you could certainly give it a try! Baking time may be slightly different since the biscuits would be much thicker. You’ll have to let us know how it turns out if you use the biscuits. 🙂

    Simply Marvelous I added sauteed onions and bell peppers and another egg. I baked croissant first for 5 minutes before topping. When done I topped with finely chopped cilantro family didn’t leave any I had 1 bite. And it was good!! Thanks I will be making again
