This crockpot hashbrown casserole is a STAPLE at our house, and especially for holidays.

What we love about the slow cooker is the set-it-and-forget-it mindset. That’s one reason why we love this crock pot version of our classic Cheesy Hashbrown Casserole (very similar to Funeral Potatoes)!

Not only is this slow cooker dish SO cheesy and delicious, but it’s the perfect Thanksgiving Side Dish or Easter Side Dish since it frees up valuable oven space!

Add this cheesy slow cooker hash brown casserole to your holiday dinner menu or regular side dish rotation. You won’t be sorry, and your family will love you even more for it!

Crockpot Hashbrown Casserole Ingredients

  • Cream of chicken soup (1 can, 10.75 ounces): Adds creamy texture and savory flavor. Or use cream of mushroom soup, or a cream soup substitute
  • Sour cream (8 ounces, light): Makes the casserole smooth and rich. Can also use plain Greek yogurt.
  • Frozen hash browns (16 ounces, shredded): The hearty base of the dish. Or use an equal amount of frozen diced potatoes or fresh potatoes
  • Diced ham (8 ounces): Adds saltiness and protein. Or use crumbled sausage, or top with cooked crumbled bacon.
  • Sharp cheddar cheese (8 ounces, cubed): Melts into creamy, cheesy bites throughout. Or use Colby jack cheese or a combination of the two. Increase the amount for extra cheesy hash browns. 
  • Onions (¼ cup, chopped): Add a little bite and flavor depth. Mix in diced bell peppers, if desired too.
  • Black pepper (¼ teaspoon): Balances the flavors and adds mild spice. For added flavor, use garlic powder, onion powder, paprika, or red chili flakes.
  • Cornflakes (1 cup): Provide the classic crispy topping. If you don’t have cornflakes, use crushed crackers or Panko for some crunch.
  • Butter (2 tablespoons, melted): Helps brown the topping and adds flavor.

How to Make Hashbrown Casserole in the Crock Pot

PREP. Spray a slow cooker with cooking spray.

Hashbrowns, cheese, and ham mixed and spread in a crockpot.

COMBINE. In a large bowl, combine chicken soup, sour cream, frozen hash browns, ham, cheese, onions, and black pepper. Stir.

COOK. Pour into the slow cooker and cook for 2 hours and 30 minutes.

TOPPING. In a small bowl, mix cornflakes and melted butter. Toss to combine and pour over the casserole.

Cover and cook for an additional 30 minutes.

  • Sometimes we like to use fresh potatoes. Peel and shred 4 Russet potatoes. Add them to a pot of water, and bring to a boil. Turn the burner off and let them sit for 5 minutes. Drain and add to the crockpot.
  • Add veggies such as savory sautéed bell peppers, garlic, and mushrooms, while milder options are spinach, blanched broccoli or cauliflower, or corn.

Bake in the Oven

  1. Thaw hashbrowns and mix. Bake in the oven at 375°F for 30 minutes.
  2. Add the cornflake topping and bake for another 10-15 minutes.

Ingredients 

  • 1 (10.75-ounce) can cream of chicken soup, (we used 98% fat free)
  • 8 ounces sour cream, light
  • 16 ounces hash brown potatoes, shredded and frozen
  • 8 ounces ham, diced
  • 8 ounces sharp cheddar cheese, cubed
  • ¼ cup onions, chopped
  • ¼ teaspoon black pepper
  • 1 cup Cornflakes
  • 2 tablespoon butter, melted

Instructions 

  • Spray a slow cooker with cooking spray.
  • In a large bowl combine chicken soup, sour cream, hash browns, ham, cheese, onions, and black pepper. Stir to combine.
  • Pour into slow cooker and cook on LOW for 2 hours and 30 minutes.
  • In a small bowl, mix Corn Flake cereal and butter. Toss to combine and pour over casserole, in slow cooker.
  • Cover and cook an additional 30 minutes.

    I haven’t tried this specific recipe, but I have made crockpot hashbrown casserole for a church potluck. the nice thing is that it can be made the night before and then started in the morning before church and ready to eat when the potluck starts. Always delicious, also, when made in the oven.
