These bite-sized mini pizzas are topped with fresh tomatoes and basil and are on the table in only 20 minutes!
A Fav in Mini form
We love pizza here at the Merkley house and have it weekly for Friday night dinner! Most often we whip up some Homemade Pizza Dough and make our favorites from Pepperoni Pizza Recipe to BBQ Chicken Pizza.
One way we like to change it up is to make MINI versions. This bite-size version of a Margherita Pizza and are not only cute but a delicious easy dinner idea or lunch option.
Why we love these:
- Quick. Talk about a quick dinner idea! These pizzas are on the table in under 20 minutes.
- Fun for the kids. These mini versions are fun and easy recipes for kids to help with. They have a blast using the circle cookie cutter to cut circle dough pieces.
- Make it your own. You can of course adjust the toppings and use your favorites, or everyone can make their own mini pizzas!
- Enjoy anytime. These store and freeze well for a quick lunch or would make a great appetizer!
Ingredients
PREP TIME: 10 minutes
COOK TIME: 8 minutes
- 13.8 ounces pizza crust, refrigerated – I used refrigerated pizza dough but a similar amount of Homemade Pizza Dough will work as well.
- 1 cup shredded mozzarella cheese
- 2 tablespoons grated parmesan cheese
Toppings
- 1 cup cherry tomatoes – chopped
- 4 fresh basil leaves – chopped
- 1 teaspoon minced garlic
- 1 tablespoon olive oil
- garlic salt and black pepper – to taste
How to Make Mini Pizzas
- PREP. Preheat oven to 425ยฐF.
- TOPPING. Combine 1 cup chopped cherry tomatoes, 4 chopped basil leaves, 1 teaspoon minced garlic, 1 tablespoon olive oil, and garlic salt and pepper in a small bowl.
- DOUGH. Unroll 13.8 ounces pizza dough on a lightly floured surface and roll into a rectangle. Use a small circle cookie cutter or a glass to cut out 20-round pizza dough. Re-roll scraps, cut out dough, and place on a greased cookie sheet.
- TOP. Sprinkle with cheese and top with tomato mixture.
- BAKE. Bake for 8 to 10 minutes or until the edges of the crusts are golden brown.

Mini Pizzas
Ingredients

Recipe FAQ
What crust can I use for mini pizzas?
- I used refrigerated pizza dough, but other ingredients can be used such as a can of biscuit dough (cut each round in half), and make 16 little pizzas. Some people love using English muffins as a base or mini bagels.
ADditional Toppings?
- Add homemade Pizza Sauce, pepperoni slices, cooked crumbled sausage, Bacon bits, ham and pineapple, olives, bell peppers, mushrooms, and more!
How to store mini pizzas?
- Leftover mini pizzas can be placed in an airtight container and kept in the fridge for 3-4 days. Reheat them in a toaster oven or microwave.
How to Freeze?
- Freeze leftovers or bake several ahead of time and store them in the freezer. Place cooled pizzas in a single layer in a freezer Ziploc and freeze for up to 2 months.
- Reheat in a toaster oven or microwave. For larger batches reheat in the oven set at 400ยฐF until warm throughout.

I used the yellow and red grape tomatoes from Costco because that’s what I had on hand. So delicious!! Next time I think I’ll try them with fresh mozzarella.
