Kristyn’s Pie and Tart Tips

  • Use Cold Ingredients : Keeping your pie dough cold is key to achieving a flaky crust. Chill the dough in the fridge for about an hour before rolling it out.
  • Avoid a Soggy Crust : To prevent a soggy bottom, sprinkle a thin layer of breadcrumbs or crushed cereal over the bottom crust before adding the filling. You can also brush the crust with egg whites.
  • Use a Metal Pie Pan : Metal pans conduct heat better than glass or ceramic, helping your crust cook more evenly and stay crispy.
  • Use Cornstarch for Thickening : If you’re worried about a runny filling, add an extra tablespoon of cornstarch to help thicken it.
  • For fruit pies (apple, peach, etc): store covered at room temperature for 1-2 days, but if wanting to store for longer, cover loosely with foil or plastic wrap and store in the refrigerator for 4-5 days.
  • For custard (pumpkin, pecan) and cream-filled pies: Wrap tightly in plastic wrap and store in the refrigerator for 1-2 days.
  • For tarts: Cover leftover tarts with foil and store in the refrigerator for 1-2 days. If there are berries in the tart, the berries will become mushy but they are still okay to eat.
