We make these Christmas pancakes for breakfast ALL December long!

In fact, we even make them for dinner!! The kids just LOVE these Funfetti-style pancakes so much that they try to have them as often as they can. They are even willing to help make them. Their favorite part is the strawberry Santa hat – adorable AND delicious!

Quick and tasty and on the table in 15 minutes, it’s no wonder we have these on repeat during the holidays. Just one more reason to stock up on festive sprinkles!

Christmas Pancakes Ingredients and Substitutions

  • 2¼ cups all-purpose flour How to Measure Flour
  • ¼ cup sugar
  • 4 teaspoons baking powder
  • ¼ teaspoon salt
  • 2 cups milk
  • ⅓ cup vegetable oil canola oil or baking olive oil
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • ¼ cup Christmas sprinkles, plus more for topping – We used Christmas-colored Jimmies.
  • whipped cream – store-bought Cool Whip or Homemade Whipped Cream
  • 12 strawberries, tops cut off
  • optionalMaple Syrup or Buttermilk Syrup

How to Make Christmas Pancakes

  1. BATTER. In a medium mixing bowl 2¼ cups flour, ¼ cup sugar, 4 teaspoons baking powder, and ¼ teaspoon salt. Mix until completely combined.
    • Add the 2 cups milk, ⅓ cup vegetable oil, 1 egg, and 1 teaspoon vanilla to the dry ingredients and mix. Stir in the Christmas-colored sprinkles.
  2. COOK. On a hot, greased griddle, ladle the pancake batter into 4-inch pancakes. Once the cakes begin to bubble, it’s time to flip. Pancakes are done once each side is golden brown. (Make about 12-14 pancakes.)
    • Keep pancakes warm by covering them with a kitchen towel, placing them in a chafing dish, or in the oven at around 200°F for up to 20 minutes.
  3. TOPPINGS. Add a dollop of Homemade Whipped Cream on top followed by an upside down strawberry to be the Santa hat with a little more whipped cream on top.

Christmas Pancakes

Christmas pancakes add a festive twist to a breakfast classic, with colorful sprinkles and a strawberry Santa hat they're a guaranteed hit!

Instructions 

  • In a medium mixing bowl, mix flour, sugar, baking powder, and salt until combined. Add the milk, vegetable oil, egg, and vanilla. Whisk until smooth. Stir in the sprinkles.
  • On a hot, greased griddle, ladle the batter into 4-inch pancakes. Once the cakes begin to bubble, it's time to flip. Pancakes are done once each side is golden brown.
  • Keep pancakes warm by covering them with a kitchen towel, placing them in a chafing dish, or in the oven at around 200°F for up to 20 minutes.
  • Add a dollop of whipped cream to the center of the pancakes, add a strabwerry cut side down, and top with a dot of whipped cream.
