We’ve tested classic bread recipes time and time again, and this is the recipe we keep coming back to. We use it for everything – French Toast, Grilled Cheese, Homemade Croutons – you name it!

The flavor is PERFECTION! But also – most of the ingredients can be found in your pantry, so you can make it any time. It also requires only about 20 minutes of hands-on work! The rest is rising and baking time.

And like most bread recipes, this is great to make ahead and store so you always have fresh bread on hand.

Homemade Bread Ingredients

  • 2¼ teaspoons active dry yeast (1 packet) – see How to Activate Yeast
  • 2¼ cups warm water – The water must be around 105-115°F.
  • ¼ cup sugar plus 1 pinch
  • 1 tablespoon salt
  • 2 tablespoons vegetable oil – or canola oil, or olive oil labeled for baking
  • 5½ – 6½ cups bread flour – or an equal amount of all-purpose flour, or make your own bread flour: add 1 teaspoon of vital wheat gluten to a 1-cup measuring cup. Spoon all-purpose flour to fill the cup the rest of the way and sift.
  • butter for topping (optional)– Other toppings include Homemade Strawberry Jam, Honey Butter, and Cinnamon Butter.

How to Make Homemade Bread

  1. DOUGH. In a large bowl or the bowl of a stand mixer, dissolve active dry yeast in warm water with a pinch of sugar.
    • When the yeast mixture is bubbly and foamy, the remaining sugar, salt, oil, and 4 cups bread flour, and mix with a dough hook until smooth.
    • Add the remaining 1-2 cups of flour, ½ cup at a time, to form a soft, smooth dough. The dough should stick just slightly to your finger when touched, but not be overly sticky.
    • Knead with the dough hook on medium speed for 5-7 minutes, until smooth, then roll into a ball.
  2. RISE. Use olive oil or cooking spray to coat the sides of the bowl. Transfer the dough to the oiled bowl, turn over once to coat the top with oil, and cover with plastic wrap. Let rise for one hour (in a warm spot), or until doubled for the first rise.
  3. SHAPE. When the dough has risen, punch it down gently and divide it in half. On a non-stick baking mat or lightly floured surface, roll each half of the dough into a long rectangle about 8 inches wide.
    • Roll the dough up, starting at the short edge, to form a cylinder that is approximately 8 inches wide. Repeat with the remaining dough.
  4. 2ND RISE. Place the dough, seam side down, into lightly greased loaf pans, and cover with plastic wrap. Let rise for a second time for one hour, or until the dough is ½-1 inch higher than the top of the pan.
  5. BAKE. Preheat the oven to 375°F.
    • Bake for 30-35 minutes or until the loaves are golden brown and sound hollow when tapped.
  6. SERVE. Brush loaves with a little melted butter after baking. Remove to a cooling rack and cool before slicing. Makes 2 loaves of bread.

  • Flour. My #1 tip for any bread recipe is to measure the flour accurately! Too much flour can result in dense bread, and we all know bread should be soft. The dough should be slightly tacky, not dry.
  • Yeast. Be sure to activate the yeast correctly otherwise, the dough will not rise. Make sure it foams when mixed with warm water and sugar. If not, your yeast may be expired and your bread won’t rise properly.
  • Watch the rise time. If you don’t allow it to rise long enough it will be dense. If you proof it for too long, it will fall and become unusable. 
  • For best results use bread flour. It creates a better structure and chewier texture than all-purpose flour, although we’ve used all-purposes in a pinch and it still works.
  • Cool before slicing – As tempting as it is, wait until the bread cools to cut. Slicing too soon can make the inside gummy instead of fluffy.

Bread Recipe

This BEST homemade bread recipe makes the most deliciously fluffy loaf of white bread. It tastes so much better than store-bought!

Ingredients 

  • teaspoons active dry yeast, (1 packet)
  • cups warm water
  • ¼ cup sugar, plus 1 pinch
  • 1 tablespoon salt
  • 2 tablespoons vegetable oil
  • 5½ – 6½ cups bread flour
  • butter for topping, (optional)

Instructions

Recipe Tips.
  • Measure the flour accurately! Too much flour can result in dense bread.
  • Watch the rise time. If you don’t allow it to rise long enough it will be dense. If you proof it for too long, it will fall and become unusable.

Can you use instant yeast instead of active dry yeast?

Yes! You can swap instant yeast/rapid rise yeast for active dry yeast in your recipe. Just use the same amount, and your bread will turn out just as soft and delicious!

How can I help the dough rise faster?

Place the bowl of dough near a warmer area in your home, such as a warm slow cooker, sunny window, on top of a warm oven, or suspended above a bowl of steaming water. 

How to freeze bread dough?

Add an extra teaspoon of yeast and make the dough as directed. Allow the dough to rise the first time, then shape it into loaves and place them directly on a greased baking sheet. Can I use a bread machine?

Of course! It’s super easy, and the machine does all the hard work for you!
– Layer the ingredients the right way! Add them in this order:
Warm water, Sugar, Salt, Oil, Bread flour. Then, make a little well in the flour and place the yeast inside so it doesn’t touch the liquid right away.
-Pick your settings: Use the basic bread setting and choose light or medium crust, depending on what you like best.
-Check the dough: After a few minutes of mixing, peek inside! If it looks too sticky, add a little more flour (one tablespoon at a time). If it’s too dry, add a tiny bit of water. You want the dough to be soft and slightly tacky.
-Let the bread machine do its thing! Once it’s done baking, carefully take out the loaf, let it cool on a wire rack.

    I have asked these questions and seems nobody will answer. Will you tell me why bread falls?

    Also why does bread get crumbly?

      Assuming you used the exact ingredients, here are some common reasons for these issues:
      -A common reason bread dough falls is over-proofing. Once dough collapses from being over-proofed, it won’t rise sufficiently again, so it’s generally best to start over.
      -Baked bread can fall if it was not kneaded well enough (lacking structure), or if the center was not baked all the way through (meaning the internal structure wasn’t set).
      -Bread often becomes crumbly due to: Too much flour added during kneading and shaping, making the dough too stiff.
      Using dough that has been over-proofed and already fallen. Overbaking, which dries out the bread. Simply becoming stale.

    So easy and so good! Also, much cheaper than buying a mediocre loaf from the store. I reckon this dough cost me less than a dollar to make for 2 loaves.

    Couple notes:
    -I’m high altitude and in a dry environment- it turned out great!
    – I added the extra tsp of yeast since I froze half the dough for later.
    – I had to add a little extra flour to what was called for to get it to be tacky but not sticky to the touch.
    -I used instant dry yeast; after kneading, I shaped it into a ball and let it rest for 10 minutes, then put in the loaf pan and proved for 60 minutes. My kitchen was cold (64F), and it lifted its lid during baking, so next time I’ll either put it someplace warmer, or prove it 90-120 minutes, but it still turned out really well.

    I made this for the first time and it was great! The second time I made it, my plastic wrap stuck to the dough and right before I was going to remove it and cook it, the dough fell.
    Is that going to hurt the loaf!? I was super bummed, cooking it anyway. How can I perfect that.

      You can spray one side of the plastic wrap with a light coating of cooking spray or lightly brush with olive oil. Place the plastic wrap, oil side down, over the dough. The oil will help keep the dough from sticking.

    This is a very lousy recipe. It stayed overly sticky. Never pulled away from the bowl. Added more flour. Was still sticky. I finally gave up and just put it in the bowl to rise. I have a feeling that this will make twice as many loaves and it will be very dense and flat. DO NOT make this bread.

      Yeah, you can use instant yeast. If you do, you don’t have to proof it, but I mix it with warm water anyway before mixing it in to be sure it distributes.

      Yes, you should be able to! You may have to add a little more liquid since gluten free bread tends to absorb more moisture than regular, but I’d try it as the recipe states and see how it turns out. You’ll have to let us know!

    Hi! Not to be dramatic, but I’m writing this comment because this is probably one of the best days of my life. I’ve been baking since 6-7 years at least and every time I would try bread, I would fail miserably. The recipes with rave reviews online all seemed intimidating for a beginner. This particular recipe is concise, elaborate and straight forward. I followed it using a blend of whole wheat and AP flour – because of which I only needed to add about five and a quarter cups of flour and it resulted in a truly perfect good looking loaf. No flat soggy centers, no heavy bricks that could hurt someone lol. Just pure deliciousness. Thank you!!

    I use melted butter or olive oil instead of veg. oil, also I add 100g of sourdough discard in addition to the yeast. This recipe is great! Sometimes I use bread pans and sometimes I use my baguette pans and both turn out delicious!

    I started learning to make yeast breads out of necessity while living overseas and have kept it up since we returned to the States to stay. I am wanting to try some different recipes than the ones I have been using.

    Would using half water and half milk instead of all water be possible or do you feel that would significantly change the texture of the bread? Also, could I substitute butter for the oil without significantly changing the texture? For reference, I do plan to use all-purpose flour instead of bread flour, as recently it seems using bread flour makes the bread pretty chewy. Maybe it is the brand of bread flour I have been using (Gold Medal)? I know that making changes can mean a different texture, so I wanted to run these past you for your advice.

    This has been my go to recipe since I’ve found it, nothing beats the taste of this bread. I have been adding Weber’s garlic Parmesan spice to it to make garlic bread and it is an incredible way to make restaurant worthy garlic bread without butter. It’s worth hunting this spice down for sure.

In the video it shows the adding of the sugar and salt with the yeast, then let it sit… Then oil, and flour. Which yields better results?

    I’ve made this several times now and it’s always been amazing. Just one question though, every time I’ve made this the heel of the bread has a spiral in it from where it was rolled up when putting it in the loaf pan. It doesn’t affect the taste obviously but does that mean I’m not rolling it thin enough, or maybe too thin?

      After rolling the loaf, you can try pulling the dough down on the sides and “tucking” the rolled-looking edges underneath the loaf. That should help it not have those spiral edges.

      Could be! I typically just use cooking spray. You might try moving your oven rack up one notch too. Maybe the bottoms just got a little more cooked than the rest. All ovens seem to cook just a little differently. So glad to hear you love the bread!

    I enjoyed this recipe for bread. I have tried many different recipes but this one seems to be the best one. I did do a couple things differently . Instead of using oil, I used 2 tablespoons of unsalted butter. ( Because butter makes everything good) 🙂 I brushed milk on the tops of the dough before cooking. To proof the dough, I heated the oven up for about 3-5 minutes. I just turned the oven on 350F for a few minutes. Just to make the oven warm. Then turned it off. Putting the dough in a warm oven only help proof faster.
    I only had 1 bread pan so I did some dinner rolls (8 of them). They were delicious as well. Thank you for the recipe. Bread making takes practice, you have to make sure you don’t over knead it or over/under proof it, and don’t add to much flour. Practice practice practice. Don’t give up.

Found this recipe, I always put half of the loaf in a regular bread loaf pan the other in a 9 x 13 pan so I get a bigger loaf, which isn’t as pretty but tastes just as great.       I’m so glad to hear you’re giving bread making a try! So, when baking, different elevations/temperatures/weather/etc. can affect the exact amount of flour needed. So it could range from 5.5-6.5 cups of flour. Here’s my best tip to know how much to add: The dough should stick just slightly to your finger when touched, but not be overly sticky. If using a stand mixer, the dough will pull away from the side of the bowl too. So once you hit 5.5 cups, just slowly add more flour (as needed) about a 1/2 cup at a time. Hope that helps! Good luck with the bread!

        Did you use bread flour? Bread flour typically yields a chewier texture. If you didn’t care for that, you can make it with all-purpose flour too.

      Yes! I add the water, yeast and all the sugar and let it rest for 5 minutes to activate the yeast. Then add the remaining ingredients and set my machine to the dough setting. When all done, divide and bake as desired! Works perfect, especially when I am busy with the kiddos!

      I don’t have a stand mixer either for the first four cups I used my hand mixer and for the rest of the flower I put latex gloves on which helped a lot and the rest of the flower I did with a nice strong spoon did it slowly but it came out beautiful I don’t have a bread maker either… For the bread maker machines I do know that if you make cut the recipe in half if you don’t have a 2 lb or a two loaf bread maker and then you could take it out and still cook it in the oven . Hope this helps.

    In South Africa, Ouma Brood (“Granny Bread”) is a heritage bread widely loved throughout the country. Of course, as with most things, the commercial versions resemble yet don’t equal the authentic, freshly home-made-with-love version that I recall from my childhood. This recipe is the closest I’ve encountered so far and boy, have I baked dozens (and then some)! To honour the size of a traditional Ouma Brood, I baked a single, large loaf of bread at the recommended pre-heated temperature for 45 minutes.

    Thank you for a wonderful recipe that transported me on a trip down memory lane. I followed the recipe without substitute or adjustment and only required 5½ cups of flour for a soft, pliable dough which turned out phenomenally well. I do recommend readers to brush the top with butter – it results in a deliciously chewy crust which compliments the sweetness of the crumb so very well. True to tradition, we had ours fresh from the oven with butter, home-made apricot jam and sweet tea. It remains a fact that the simplest, most humble of dishes remain the noblest of treats!

      Hi Ann I think she means that the amount of flour depends on the weather. When I make bread if’s raining I use more flour and hot days I use less. Start with 4 cups and slowly add 1/2 cup at a time until it’s slightly sticky.

    I just tried this with coconut sugar instead of white sugar and it turned out great. I mixed this by hand instead of using a mixer so the dough may not be smooth but still tastes good and is soft.

      You throw a pinch of sugar in right after you put the yeast into the warm water. After the water turns foamy, then you add the 1/4 cup along with the other ingredients. 😊

      Great question! So to get your yeast to bubble and foam, you will add it with warm water and a pinch of sugar then let rest. Once it has bubbled and foamed up, then you add the 1/4 cup of sugar and follow the rest of the recipe. Hopefully that makes sense! 🙂

    Was an absolute hit for my family, we could barely wait for it to cool down! I do have one question, my bread came out quite dense. I personally like it this way but if I was to bake this for others, it may be a little too dense. How could I avoid this? I am a new baker so I have no idea! Too much kneading? There could be a few different reasons why your loaf was a bit dense… usually dense bread is a result of not enough kneading or not letting it proof (rise) long enough. Sometimes it can be due to using too much flour or using old/dead yeast. Luckily this recipe is pretty forgiving and tastes good even if it is a bit more dense. 😉 Just keep baking and trying again and again and you’ll get that fluffy loaf in no time!

    Unfortunately Lil I have to hold you accountable for not adding a good Irish stew recepie as a prerequisit to accompany these fine loafs.. I followed the recepie to a T with one exception . I used only 6 cups of A.P. flour. The dough was sticky so I simply tapped my palms in flour and kneaded. Rolled it and after 45 mins of proofing in the pan, did 33 mins in the oven. Although the Mrs. never complains about my homemade pasta and cheese cakes she turned to me after 2 bites and said ” throw out the other bread recepies and make sure ya keep this one. Even in our senior years she still wears the pants most of the time. .I know Im safe as she never reads these recepies . Thks again and thanks for the great recepie.suggest you may want to add a blurp about using the yeast and the time it takes along with temo of water for those who rarely bake bread .

      You bet! Bread freezes really great too, so you can always put that second loaf in a freezer bag. Then when you’re ready to eat it, let it rest on the counter for a couple hours until it comes to room temp and it’ll taste fresh as can be!

    Hi there, I am just curious about the elevation where you live. I am at 6,000 feet, so it would be nice to know if I should make any adjustments for the elevation here before baking this bread. Thanks!

      The elevation here is about 1200 feet, so you’d for sure be considered “high altitude”. I’d say the biggest thing is to watch the rise time of your dough. It may rise faster the higher you are. Also, watch the amount of flour you use. It may not be exactly 5 1/2 – 6 1/2 cups. Just until the bread pulls away from the bowl. You don’t want to put too much flour in your bread or else it will result in a dense/heavy loaf. You could do a little research on google too about baking bread in high altitudes too if you want any other tips or ideas.

    I made these while the province was being looted in Kwa-Zulu Natal In South Africa. There was no retail services for a week in Gauteng & KZN and people were going hungry. I always prefer to buy bread but being forced to provide, I tried this amazing recipe that was fail proof and passed it on for the comfort of home made bread in their devastated homes.     Not every baker had success but I did. Only 1 loaf pan so 1 loaf & a round bun. Only mine was very dark as it rose very close to element. but was devine.

    Just tried today as my 1st bread baking experience. The crust turned out nice and crunchy like baguette as I really like. But the middle part is still not entirely cooked though I baked for about 35 minutes in 200°C. What could be the possible reasons so that I can improve in my next attempt please?

      Way to try your hand at baking bread! So a few things could have been the case… 1) Making sure the oven is fully preheated. 2) Maybe the oven was a set too hot so the outside baked but the inside didn’t finish fully. 3) Also, I always wait until the bread is cool to cut into it because sometimes the inside appears doughy, but it hasn’t had time to let the steam dissipate. So fully cooling the bread may help as well. An undercooked loaf can be fixed if you return it to the oven too. Place the loaf back in a preheated oven at 350° F for 10-20 minutes. You can tent the bread loosely with foil to prevent it from browning further, if you’re worried about the outside being too done. Best of luck with the next round of bread making!!

        You can just take the recipe and cut it all in half. The full recipe yields 2 loaves. So one loaf would be:
        1 1/8 tsp yeast
        1 1/8 cups water
        1/8 cup sugar
        1/2 tbsp salt
        1 tbsp oil
        2 3/4 – 3 1/4 cups bread flour

        Another option is to freeze the extra loaf. Make the recipe as called for and after the loaves cool, you can put it in a bread bag and store in the freezer. Pull out and thaw when you’re ready to eat and it tastes fresh as can be!!

Milk changes bread recipes by producing a softer loaf, due to the milk fat content, which can also give the bread a richer flavor. Bread made with milk also browns more easily (lactose or milk sugar will caramelize as it bakes). So just a few things to note. Hope it turns out yummy!!

Here are a few things to consider when swapping out to whole wheat flour… whole wheat absorbs more liquid than white flour and produces a stiffer dough, which makes it harder to rise. So, I’d suggest for every cup of whole wheat flour substituted, increase the liquid in the recipe by 2 teaspoons. Then once you’ve mixed up the dough but before kneading, let it rest for 30 minutes. That gives the flour the time it needs to fully absorb the liquid which results in a softer dough. Then it should rise just as high as dough made with white flour. If you are using white whole wheat flour, then you should be able to do a straight substitution. Either way, you’ll have to let us know how it turns out with the whole wheat!

    I have made this three times now. Only the second time I was not happy because I over proofed the dough. So it sank. This recipe is definitely a keeper. My daughter loves the bread. Its so soft and yummy. Two questions though- can I replace the flour with 100% whole wheat bread flour? Currently I have made with APF. Also, instead of sugar can I use honey? Would it be the same amount? Any changes because of hone and whole wheat flour?

      You are so welcome! Yes, you can totally use whole wheat flour, but for the honey, I have not tried. I am sure you could, though I do not know if it would be equal measures. I suggest getting on google & then you can read the suggestions & decide what amount you want to use.

      How to STORE homemade bread? Let the bread cool completely and place in Ziploc bag or wrap in foil. The homemade bread should last 2 to 3 days stored at room temp. How to FREEZE homemade bread? If you’re wanting to save the bread for later, it freezes beautifully! I like to slice the loaf all the way through, place it in a plastic bread bag, and freeze it as soon as it has cooled completely. To THAW it, just pop the loaf in the fridge for a few hours. I love that I can pull out a few slices as needed for toast, or pull out a full loaf for soup night or when I’m making sandwiches for school lunches.

    Hi! I’m super excited to make this recipe, but I don’t have two metal baking pans the same size as your picture. I have two Pyrex baking dishes that are 8.5 X 4.5 X 2.5 that I could use. Or, I have a 13 X 4 Pullman loaf pan. Which would you recommend? I don’t know which will work better with the volume of dough this recipe makes. Any thoughts would be so helpful. Thanks!!

    We love this bread and make it often.

    Butttt I do have issues with the middle of the bread separating and leaving gaps at times. Do you know what can cause this? I’ve tried to read online and there were 3-4 possibilities. I tried to do a process of elimination for those possibilities, but it still happens. Any suggestions of what could cause the bread rolls to separate in the middle?

    Great bread! The second bread recipe I’ve ever tried (first in the new bread pan I got) and it was good! Very moist and dense (me and my family ate too much). Never need to buy store bought white bread again!
    However, I ran out of regular flour half way through, so for the last 2 cups I used coconut flour instead and it worked fine. Next time, I’m going to try to make a batch all coconut flour so my dad (who’s on a mostly gluten-free diet) can eat it better. If you try this with coconut flour, make sure to add more salt or less sugar (or both), because the coconut makes it a little too sweet for me.

    This is a really good, basic white bread! It’s nothing exciting flavor wise, but it is delicious and the texture is light and fluffy. I ended up needing to add 7-7.5 cups of flour, which might be because it’s a very snowy, wet day here in Idaho. I also had to bake it closer to 45 minutes. I used instant yeast and mixed it right in with the dry ingredients before adding the water and oil. I’m planning to freeze one loaf to use later. I’ll definitely make this again!

    My kids absolutely love This Bread! I actually have not made it On purpose bc they eat too much of it. Everyone who I have made it for loves it too. Also, the riae of the bread also depends how high your containers are. I bought two that are higher and two that are lower. The lower one uiels smaller breads and the higher ones yields higher/larger breads. All of them are yummy

    I found a recipe calculator for calories on the net, and this recipe yields 24 slices for bread for me (12 each loaf) which equals 135 calories each slice. Hope this helps some people that are counting calories like I do.

    So, I have always struggled making bread.. something doesn’t work right every time.
    Decided to give this one a go, and I never leave comments.
    But my, ohmy, did this ever turn out AMAZING!
    I don’t have a kitchen aid so I just used my hand mixer with the dough attachment and added in total 5 cups flour.
    I only have one bread pan so I divided it in half and did one in a bread pan and the other in a pie plate and ended up with the nicest round loaf. The bread is so soft and chewy!
    I am currently about to write this in my notebook of keeper recipes. Thanks so much for this easy to follow delicious bread

    I’ve always used scalded milk in my bread recipes in the past. i was a bit skeptical about just using water. but it turned out perfectly. of course, i tweaked it by adding a mixture of cinnamon, sugar and chopped pecans when i rolled up one of the balls of dough. and made the other one normal. it’s fabulous!

      The total rise time is 2 hours. Not sure if this is after the 2nd rise. Did it at least double in size the first time, before punching down? As it bakes, it will get higher.

    Hi, I’m making your bread for the first time. It’s currently in the pan for the second rise, but I’m wondering, what size loaf pan should I use? I have both 8.5 and 9 inch pans. i assume it’s the 8.5 inch pan since at the rolling stage, you say the rectangle should be approximately 8 inches long. Can you advise? I will let you know how it turns out once it’s baked. I’m going to try 8.5 inch for now and see what happens, but if you could let me know, I will make a note of it for next time! thank you so much!     I love this recipe, it’s so easy to follow and turns out great. My kids no longer want store bought bread! Just one question – sometimes I get big air bubbles, and sometimes I don’t – what am i doing differently? Do I need to make sure all the air bubbles are gone when i roll it out after the first rise?     I’ve tried two other recipes, multiple times. They each used yeast, milk, egg, oil…in some combination. The crumb was large and crumbly, and could only be used for grilled sandwiches – but still fell apart.

      If you’re wanting to save the bread for later, it freezes beautifully! I like to slice the loaf all the way through, place it in a plastic bread bag, and freeze it as soon as it has cooled completely.

    I followed your recipe to the T’ with just one issue…..I found the bread to be waaaay too SALTY. I kept double checking to see if I made a mistake in the measuring of the ingredients, but it called for 1 tbsp of salt. I think that is way too much salt and the bread was too salty for me to eat. i will remake the bread BUT with way less salt than this recipe called for.

      I don’t usually let the dough sit overnight, but you can always freeze it, once baked & thaw it & use for toast & we like to stick in the microwave with some butter.

    This would have been great if the loaves had not stuck to the plastic wrap after rising in the loaf pans. Reckon I shoud greased it or something? Collapsed the loaves. Still baking them, but irritated they are flat on top. First time, epic fail.

    The loaves came out just like the photos. I had small lOaf pans so used three. I stopped at 30 min and they were perfect. IT is a delicious White bread. It was soft. Holes were small and CONSISTENT. Wow i can actually bake a great loaf of breAd.

    Thank you for the recipe. However, the 1 tbsp of salt made it too salty. I would use 1 tsp next time. also, i find that proofing the yeast in 1/4 cup of lukewarm water and 1 tsp of sugar works better, and then add the rest of the water afterward. i use a little honey instead of all of the sugar, as a personal preference, and sometimes molasses as well if it is on hand. I also put some egg yolk or milk on the top before baking as a personal preference. Everything else came out fine.

      Using Kosher salt keeps it from being so salty. It’s a milder salt (in my opinion). That’s what I used, and it does not taste too salty at all.

    I’ve made this bread a least a million times since finding the recipe last year. I just realized today that it calls for bread flour lol! AP has worked great (obviously haha) Hs’ing tried it many different ways (part wheat, etc) I’ve got to say that my family prefers it with 1/4 to 1/2 cup ground flax. I add it when I’m adding the additional flour after the first 4 cups. I think it makes me feel better about how much of this bread inhale. It’s delicious!!! Thank you so much! This made this weird quarantine doable today hehe

    I make this recipe every monday and we use it throughout the week. I was wondering tho, after day 3 the bread tends to be hard and though to eat unless toasted. Is there any tips for this or is it just the life span of it bc it is fresh? We eat the first loaf in one day and then use the second all week. ?

      It doesn’t stay soft for too long, unfortunately. I keep in a gallon size zip-lock, sealed tight for as long as I can. Oh, we can easily go through the loaf in one day 🙂 I am so glad you liked it as much as we do!

    I’ve made this several times now and it always turns out great. I Use half ap and half whole whEat flour plus add in flax, brewers yeast, and wheat germ to up the health Factor. I eat one loaf and freeze the second and they’re both great.

    Am i the only one who cannot get this RECIPE right to save my life. Ive attempted to make it twice now. I dont know what im doing wrong but i cannot get the doe consistency right. It just sticks to my hands and everything else. Like caramel! I keep adding more and more flour. The first time i think i Got up to like 8.5 cups of flour and it was still Sticky but i stopped cause i thought i was Just crazy and over thinking it. This time i ran out of flour at 7.5 and still cannot pick it up without it sticking and melting into mY hands. Whats the probLem!? It seems like 2 1/4 cups of water is just way to mUch. Or i literally am crazy

      I’m not really sure what’s going on. It shouldn’t be that sticky & yes, that’s a lot of flour. Did the water bubble with the yeast? I’m trying to think of what would make it that sticky.

    I have tried so many bread recipes and this is by far my favorite for white bread. It is not only crazy soft and fluffy but also chewy!! Chewy being the key word here. It makes the best sandwiches, paninis, french toast- you name it. Sometimes my kids just sit and eat the whole loaf if I am not watching. I am so thankful that I found this recipe! Not to mention that it is very simple and easy to follow. You don’t have to be an avid bread maker for it to turn out amazing.

    I read a previous question about the yeast and water but it didn’t quite match MY Question. Warm water. Do you have a specific temperature? Total amateur Baker here and I have always had a hard time with yeast and water temp. 110°? Luke warm? Microwave the water? Lol I have tried it all.

    This recipe was so easy to follow. my first loaf didn’t turn out the best, but that is my fault. I didn’t coat the cling wrap with cooking spray first and it stuck during my second rise. The loaf turned out very dense, but still tasty. I froze the second loaf while it was still dough, and just cooked it up last night, but as an added twist, I rolled it out and put a cinnamon butter mixture to make a cinnamon swirl loaf. going to heat it up this morning as a breakfast treat, while I make a second batch of dough.
    Going forward, I plan on making my own bread, since store bought bread contains soy, and my husband has an intolerance to soy that we just recently discovered. and he loves fresh baked bread…who DOESN’T’ right?

      Oh, no, I am sorry. There are a few reasons bread will sink…too much moisture, allowing to rise to long, inaccurate measure of dry-goods, there could be more. I am sorry, I wish I knew what exactly happened to yours. Did any if these happen?

    If I could give this 10 stars I would. What an easy bread recipe. I have made buns before but not bread. Followed the recipe to a t and it is so good.     The bread came out fluffy. The taste was spot on. The texture was too chewy though. Any idea why? What can I do to prevent it from being too chewy next time? By the way, I don’t have a stand mixer so I made it by hand. Baked for 30 minutes. It was perfectly baked.

    I found your recipe via pinterest and the time listed was a total time of 45 minutes. I clicked wanting to know how in the world you make a loaf of bread in 45 minutes because that sounds like the recipe I want.
    I realized you have rising time for 2 hours but did not include this time in the total, which is rather misleading and quite important in my opinion.

    Other than that Your recipe sounds delicious and I’m going to give it a try when I have a bit more time.
    Do you happen to have a recipe for quick bread for people SHORt hours in the day?

    I am on my 3rd batch of this wonderful bread! My yeast was not getting bubbly or foamy, but I didn’t have any measuring spoons so I guessed t the amount of sugar. After I read the other comments I added more sugar for my yeast to feed off of and it did the trick . My first batch I was in Southern California and didn’t want to die of heat , so I made them in my toaster oven. They came out really good , except the top got too dark cause the dough had risen so high ( wonders happen when you have the right tools) but never the less they came out so good. Thank you for this recipe I am now living in Rosarito Mexico making your bread down here my neighbor came over to see what smelled so good, so I had to give her a loaf when it was done. She said her and her husband had some for dinner and toasted it with homemade jam is morning.

    Love this recipe, we stop buying bread ????, my kids love it. Tip, I burn the yeast because the water was too hot, so instead of getting rid of the dough I made bread stick with 1/2 and then mix another 1/2 batch form scracth and mix it with the drough that didn’t raised and it work out perfectly

    Have you ever tried to punch the dough down twice and do a double rise before putting it in the pan for a final rise? My 90 year old mother who baked her own bread for 70 years said she did it that way. She also started her yeast in a cup of water with the pinch of sugar, put all the dry ingredients into the bowl mixed them up then added the water and then the foaming yeast. She said this kept the salt from being concentrated with the yeast and possibly killing it. I mix my dough this way and have had good results, starting with half the flower and adding more as I stir. I stir by hand with a wooden spoon. I will try the double rise on my next batch.

    I made the bread and followed to a t. Looked amazing when baked but when i sliced it it basically unraveled. Air pockets between my layers from rolling. What could have caused this? Not rolling tightly? Or didnt pat down enough? Tasted amazing but didn’t slice well. I definately want to try it again. Can you not roll it and just put it in pan?

      Oh, I’m sorry it did. I am trying to think why it would have done that?? You do need to form the dough into a cylinder type shape, so it can fit into your bread pans. There could have been air pockets. Did you knead it real well? I hope it doesn’t do that again 🙂

    WOW! This bread is the BOMB! Even with a few of changes I made due to what I had on hand and our personal taste. I used 1/4 cup of ground flax for part of the flour, and reduced the sugar to 3 Tblsp. I didn’t have anything but quick rise yeast, so I upped that amount to a heaping tablespoon and it rose beautifully – TWICE! Since I don’t have a stand mixer, I just kneaded it for about 15 minutes. It was still a teeny tad tacky but I left it that way…and so glad I did. It was just the right amount of moist, soft and had a beautiful crumb. Hubs and I went thru a whole loaf in one day. This is now my go-to recipe. Thank you for posting this great, versatile recipe!

    After the second rise, the saran wrap got stuck to my dough and unfortunately the dough deflated a bit. The top of the bread ended up being pretty flat and not having the pretty round shape yours did. I’m not sure if it’s because I did not put enough flour (I used between 5.5 and 6 cups) or if I should have sprayed the plastic wrap with non-stick spray before putting it on the dough. However I decided to the dough anyway and the bread seems otherwise great! Super tasty and smelled amazing while in the oven. I will for sure try the recipe again once we finish this batch. 🙂

    This is an awesome recipe! Honestly when read I “flour” in the recipe I assumed bread flour, so that’s what I used and it turned out great. I read online that the only real difference is bread flour has a higher protein content. It made 2 fluffy and soft, yet dense loaves that my family loves. I am able to make slices for school lunches, even peanut butter and marshmallow fluff won’t tear the bread while spreading! The only other things I changed was while preparing the yeast I did a swirl once around the bowl with honey, instead of the pinch of sugar, and I used olive oil instead of vegetable. I’ll definitely be making this bread for years to come!

      I like to start by adding half of the flour at first, then add 1/2 cup at a time, until the right consistency. You can’t take out flour, but you could always add more. And, you could just use vegetable oil, though I’m sure any is fine 🙂 Good luck!

    I tried this recipe for the first time today, and it was the best bread I ever made. The author took the time to post step by step directions, and tips, that made all the difference. I added four cups of flour, and then began adding more flour in small handfuls as I kneaded the dough…. Keep adding flour until the dough just barely sticks to the surface you are kneading on. The consistency of the dough is of prime importance. If you like a lighter fluffier bread then add a bit more flour. I prefer mine a bit more moist and dense so I used around 5 3/4 cups in total. Just follow the authors directions and you can not go wrong!

    My bread wasn’t as light as your picture…heavier in texture. It was still super soft, but just much heavier. When I sliced it, the bread height wasn’t as high as typical sandwich bread either, and your picture looks like it should be about the same size. If mine had turned out that height, it would’ve taken FOREVER to get done in the center due to it’s heaviness. I followed the recipe completely. Any thoughts or suggestions?     I used to make homemade breads & noodles by hand(no machines) growing up on the ranch. Live in Nebraska. Only got 4cups total into the bread. When I finished my kneading for the 1st rise it was smooth but not so much tacky anymore…ALMOST like I put in too much flour? Smooth & a little dry(not tacky)but not where it’s dry cracking or clump separating.

    I saw Laura was the ONLY one so far that I saw who didn’t get past 4cups total but didn’t see how it turned out.

    Ever made it w/only 4c flour? Should I just make 1 loaf depending on the 1st rise?

    I have a metal, glass & stone pans for loaves…wonder if I should make it in my large stone pan as one loaf. Thoughts?

    I came across this recipe and wanting to try it. I had been very hesitant to try because i always have a hard time getting the dough to rise and come out looking like an actual loaf of bread. Decided to try this with a small trick my mother in law told me about. When getting the dough to rise just put it on a heating pad on low.     It looks like a really nice recipe and my dough is rising in the pans at the moment.
    What I’ve been asking myself, still I’m.not from US: how much is one cup of flour? I found recommendations between 100 and 150 grams?
    The dough is really sticky, when you knead it by hand, do you do so in a bowl? Or on a floured surface? Does it stick to your hands or is it dry and floury on the outside?
    And when you roll out the dough, do you flour the surface? Or oil it? Or just put it there without any preparation?
    How thick is your dough rolled out?

    Sorry for the many questions since I’m new to baking. And sorry for my may a little off english, not my first language, but I’m trying.

    I’m so looking forward to my first come out in a few hours 🙂

      1 cup of flour is about 140 grams. The dough shouldn’t be too sticky, where you can’t roll it into a ball. It should be tacky, but not sticky. You can knead it in a bowl or on a slightly floured surface. It’s about 1/4 in thick-1/2 in. It doesn’t have to be exact. I hope I answered all your questions.         Most of it I did right instinctively.
        One loaf didn’t come out ao well. I had two different sizes of pans and divided the two ao it fit both parts. But in the larger one it started to fall down again before it could reach the edge of teh pan. Baked it anyway, was a bit flat, but definitely delicious!
        I’ll try again and work it out perfectly with my german measurement and ingredients 🙂
        I do have indeed one question left. Why do you use dry yeast (actually in all the recipes I found?) it works so much better with fresh yeast!

I hate to be that person, but literally every post here except mine, received an answer 🙁 I posted back in February and others received a response on the same day, so I thought I’d check back today and still no response 🙁 I love the texture of the bread in the image and how the recipe is simple. But I’d like a little input on the amount of flour. The conversion charts vary from brand to brand and just from basic usage.

    This is a really good recipe! I do love the simplicity of it and so does my family! Thanks for sharing, but I do have a question! For the flour measurement do you know how much you’re using per cup of flour? I use KA flour and 1 cup is 120grams, but the dough still seems a bit wet at time. I feel as though in may not be using enough flour at times. Any input would be greatly appreciate!

      I’m sorry I didn’t respond. I try to answer all comments, so I might have missed this, but I am sorry. I’m not sure how to answer your question. I’m not familiar with KA flour and I don’t measure by grams, so I guess I would need to figure out how many grams are in a cup. I looked on google and it’s 120 grams per cup of all-purpose flour, which is the same as the KA flour. Did you use all 6 1/2 cups? Depending on where you live, the humidity, etc, effects cooking/baking. It took me a couple of times to get it right, so keep trying & add a little more flour next time, adding 1/2 cup at a time.         Ohh yes, humidity. I didn’t realize that. My area is very humid 🙁 When making the bread, I did use all 6 1/2 cups per the 120g from King Arthur, but the dough was really sticky. Not similar to your images at all. So I ended up adding a whole other cup, so I used a total of 7 1/2 cups. The dough was still sticky, but the bread came out great! The two loaves were gone in two days.

        I’ll continue to play around with it, but thanks for a great recipe and thanks so much for responding and looking into my question! It is greatly appreciated!

    I didn’t realize that it could take up to 10 minutes for the yeast to activate. I threw away the first two batches because I thought I messed up. Luckily, I texted my mom, figured it out, and baked 2 fabulous loaves of bread that didn’t last 24 hours!! It was such a hit, I just baked 4 more!! Thanks for the recipe!!

    OMG this bread is amazing!!! I’ve made bread before and they were just ok and the family didn’t eat it much. With this recipe, within 5hrs a full loaf was gone. Everyone one including my very picky husband gobbled it down. I did one classic plain white bread, first to go and delicious right after coming out of the oven warm with butter, the second I put a bunch of cinnamon and sugar after rolling then rolled up and baked like the first, it is equally good and if I added a frosting would taste just like a cinnamon bun. SOOOOOO good, I will for sure be making more tomorrow. Thanks for sharing, oh and mine stuck to the pan so will be using parchment paper next time.

    Just an interesting fact about active dried yeast. I live in South Africa and the only kind of dried yeast available here is rapid or as we call it instant yeast. To be honest I don’t like the rapid yeast as it somehow does not taste the same as active dried yeast. On 4 previous occasions I was privilege to visit the USA and of course I stocked up on active dried yeast every time. Once I got home I put it in the freezer and I am happy to say the yeast has more or less no expiry date then. All I do when I want to use yeast, take the specified amount from the bottle ( Red Star ) , put it back in the freezer and has yet to have a failure It will last a good few years. Kind Regards Elza.

    So my husband tried a bread recipe yesterday and the bread came out quite heavy and the outside was a bit crunchy. It was nice and soft on the inside. Today though, I decided to make bread while he was at work to see how a different recipe would work out. Presently the bread is in the oven baking and I will update after its done. Recipe was fairly easy to follow, I however used lukewarm water instead of warm water. It got frothy in an instant! Only difference I’ve noticed is that my dough isn’t as smooth as yours in the pan. I used a bottle of wine to roll the dough, can’t find the rolling pin! Lol!

    I modified the recipe and made a batch of 12 onion buns and 2 loaves. For the onion buns i added celery salt, poppy seeds, and minced garlic before adding the flour, let it rise, made caramelized onions and added it on the last rise. TURNED OUT AMAZING. The buns are extremely fluffy and have great texture. Waiting for the bread to cool so I can slice it:) Thank you so much for sharing your recipe.

        The first loaf came out very light in color. I tried to broil it a little to add some color, and the loaf caught on fire. After some mild panicking and waving air at the smoke alarm, I scraped off the black stuff on top, and it’s quite delicious! The second one is in the oven now. I left the dough in the freezer so it didn’t over-prove, so hopefully that works. 🙂

I will incorporate cinnamon, raisins and brown sugar to make a cinnamon-raisin brown sugar swirl bread. I find that brown sugar offers much more flavor and moisture to the bread.     This is a great bread recipe. I am a lazy baker and I used the dough cycle on my bread machine to get through the first rise.(following machine recommendations of water, oil, sugar salt then flour and finally yeast) It would not have worked to bake it in my machine as it is too big a loaf and almost overflowed my machine. But that isn’t a problem as I prefer to bake in the oven.

        SO what i do is a little different from this recipe, altered for the ALTITUDE we live at (6,100 ft) on the western slope.

        I use 2 cups of water, between 105-115 deg F. I dissolve the 1/4 cup of sugar into the warm water. I then add in my yeast, 2 tsp. Currently I’m using Fleischmann’s Bread machine Instant yeast. I’ve also used Kroger packet yeast. I like them both, but the jar of instant yeast works a little better in my opinion. The key for me was the temperature and sugar. without checking the water temp with a thermometer my yeast was falling and my dough wouldn’t rise. My yeast DOESN’T seem to get very “foamy” no matter what i do/try. but if it doesn’t fall then i get good loaves.

        I have to use much more flour than called for, about 5 1/2 cups. I add 4 cups and then slowly add more until i get the dough CONSISTENCY. Very little kneading, maybe 2 minutes. I have tried bread flour and regular white bleached flour- white flour worked just as well so i now use solely that. I use a colorado company, Blue Bird Flour (kroger carries it in the baking section).

    Thanks for sharing! This is now my go-to bread recipe, and I’ve probably made it once a week for the last two months now! It turns out perfect every time. I’ve also made garlic bread and cinnamon raisin bread using this recipe as the base, and both have been excellent. I’ll slice them and pop them in the freezer, then reheat in the toaster. I’ve started making one plain loaf and one flavored loaf each time. I have a batch rising right now, and may try to make dinner rolls from it today.

      I used Red Star Yeast. Make sure your water is warm and give it a pinch of sugar to feed on. If it’s still not foaming, it’s not good yeast.

    I have a question, when go to dissolve the packet of yeast do I add it to the full 2 1/4 cup of warm water? I know that might seem like a goofy question since it’s clearly posted above, I was just asking because when I just tried it….it wasn’t very bubbly (a few bubbles but not a lot) I didn’t know if I added all the water too soon because on the back of the package it says dissolve in 1/4 cup of warm water. Just want to make sure I’m going it right. Thank you.

      Yes, dissolve the yeast in the warm water with a pinch of sugar and let it bubble for 10 minutes. Just make sure you have fresh yeast (dry active yeast). Hope that helps and let me know if you have more problems. Good luck!

        It is right. The yeast normally bubbles & you know it is active. If it doesn’t do anything, then you know to try again or get new yeast. I hope this helps. Try getting new yeast & make sure it is warm & that it bubbles.

      i had problems using the full amount of water you wanted, so i Just used the 1/4 C. recommended to let the yeast rise and then when mixed in the other 2 cups of water as i mixed in some of the flour (i added the flour cup by cup) and the bread turned out great!

We just moved out to the country about 6 months ago and one of our neighbors (who lives about 5 miles away lol) is a sweet older couple and she made us some homemade bread and rolls as a “Welcome to the country” gift and my kids and husband loved it!!         I didn’t have enough all purpose so the first time I made this bread, it was 4 c all purpose and 2 c whole wheat. My husband said to always include the wheat because it was so good! You could start there and keep experimenting with taking out more all purpose.

I was wondering…After the bread has cooled and a few slices have been eaten, what is the best way to store the bread for a couple days besides putting it in the refrigerator? For example, some folks wrap it in a tea towel or put it in a storage bag etc.etc… Any tips? Thanks!!

      I personally haven’t put the dough in the freezer. My mom always taught me not to, so I’m not sure what to recommend. Has anyone put it in the freezer?

        Freeze it after the first rise. Gently punch it down then freeze. Let it thaw in the pan on the counter. When it has thawed and rises then bake.

        Great recipe!! I personally don’t care for volume measures for flour since the difference between packed and unpacked can be so significant. In case anyone else wants to use mass, I used 27 ounces of all purpose flour and it came OUt perfect (I like my bread slightly dense and this was). I would add 23 ounces right off the bat, then add in the last four ounces slowly to make sure the consistency is right.

      I would suggest baking the bread and then freezing it. With the exception of pizza dough, I haven’t had a lot of success with freezing dough. If you do want to do it, I would do it after the first rise.

        I put the loaf in the pan and put the pan the freezer just long enough for it to be solid and not rise anymore. Then I pop it out into a zip lock bag. When I take it out it fits in the pan and I don’t have to fight with it. I just let it thaw and rise and pop it in the oven.

        I agree with this. Actually what I do is bake the two loaves and cut one into slice for toast and freeze that one, because it’s so much easier to pull out a few slices to toast than to thaw a whole bread. Then we consume the fresh loaf throughout the week I bake it for fresh sandwiches etc.

        Oh I’m so glad you enjoy the recipe! And others too. The bread should bake fine in either a fan forced (convection) oven or a traditional oven, depending on what you have. Sometimes oven temps or baking times need to be adjusted slightly, but either type of oven should work. 🙂
