We love to make Biscuit Egg Casserole and Cheesy Breakfast Pie, but of all the breakfast casserole recipes we have, this Baked Eggs recipe is the easiest of them all!

EASY + BAKED

I love quick and easy breakfast ideas for my hungry growing kiddos! I love a good egg casserole—they’re generally super simple to throw together. They might have to cook for a while, but the actual prep is a breeze!

When I came across this Oven Bake Egg recipe, I knew it was a keeper. Because it’s baked, the eggs come out perfectly cooked every time, and the consistency is extra cheesy and fluffy!

Baked Eggs are also called shirred eggs which just refers to eggs baked in a flat-bottomed dish. They can be baked in anything from smaller ramekins to larger casserole dishes. The egg base can easily be added to create many different flavor and texture variations. 

Baked eggs are similar to frittatas except for a frittata is more of an egg custard and a quiche is a frittata with a pie crust shell.

How to bake eggs in the oven

This Baked Eggs Recipe makes a perfectly delicious breakfast or brunch dish! It’s prepped in minutes and feeds a crowd.

Lots of company coming over? Throw these eggs in the oven and you’ve got breakfast! Pair with some Hash Browns or Sweet Potato Hash, Pancakes, or toast & jam, add a nice Fruit Salad, and breakfast is served!

PREP. Preheat oven to 350°F.  Brush the melted butter onto a 9×13 casserole dish and set aside.

WHISK. Add eggs to a large bowl and whisk together. Whisk in cheeses, flour, and salt and pour into the baking dish.

BAKE. Bake for 55-60 minutes.

Serve it warm with other favorite breakfast foods! Save this recipe for the holidays and weekends.

Recipe tips

Bake time. I bake this egg dish at 350°F for about 55 minutes. If you live at a higher altitude than the Arizona desert, it may need a bit longer.

If your oven runs hot or you use a larger dish, the baking time may need to be reduced. Check on it after about 30-40 minutes.

Test for doneness. The casserole is done when it puffs up and springs back when pressed. Another way to test for doneness is to insert a thermometer into the eggs. They should reach about 160°F.

Toppings. Each person can further flavor their eggs by adding their favorite toppings such as sour cream, chives, Salsa, Guacamole, or hot sauce.

Variations

Take this Oven Baked Eggs recipe to the next level. Try some tasty variations with different flavors.

  • For a MEXICAN VERSION: Add green chiles, chopped peppers, and Mexican cheese.
  • For a GREEK VERSION: Throw in chopped spinach, chopped tomatoes, mozzarella cheese, and feta cheese.
  • For an ITALIAN VERSION: Toss in a few Roma tomatoes, mozzarella cheese, Italian seasoning, and chopped sausage into the egg batter. Sprinkle the top with parmesan cheese.

Change this up to your liking – the possibilities are endless! Some other favorite additions include cooked crumbled bacon, fresh herbs, or veggies like mushrooms, onions, and bell peppers.

Storing Info

Make ahead of time. Easily meal prep this recipe! Whip up the egg mixture the night before and keep it covered in the fridge. Allow it to sit at room temperature while the oven preheats, then bake. 

STORE leftover Baked Eggs in an airtight container(s) in the fridge for up to 3 days. Reheat it for a minute or so in the microwave and serve!

FREEZE a fully baked casserole. Allow it to cool completely then wrap the pan with plastic wrap and again with foil. It will keep in the freezer for up to 2 months. 

Reheat. Remove the plastic and cover the casserole with foil. Bake the frozen casserole at 350°F for about 45 minutes. Remove the foil and bake until warm throughout, about another 30 minutes.

  • 2 cups cheddar cheese shredded
  • 1 16 oz. container cottage cheese

    I made this for Christmas morning breakfast, and the time was too much! I would cook it 30 minutes instead of close to an hour next time. It was all dried out and over baked. The flavor was great but it was dried out. I hope this helps!
