Do you love blueberries? We do!! AND we love pancakes so of course we are head over heels for blueberry pancakes!

It took a while to get this recipe just right, but after a little experimenting, we made the BEST blueberry pancakes that the whole family goes nuts over. They take minutes to make (under 30) and are packed with berry flavor.

Since we have breakfast for dinner at least once a week, you better believe we are making pancakes several times a month.

We are so glad that we have this simple variety to add to our “go-to pancake recipes!” Just serve them up with a side of bacon and sausage and enjoy!

Blueberry Pancake Ingredients and Substitutions

  • 1¼ cups all-purpose flour
  • ½ teaspoon salt Reduce if using salted butter.
  • 1 tablespoon baking powder
  • 1¼ teaspoons sugar
  • 1 large egg – room temperature
  • 1 cup milk We like 2% or whole milk, but lower-fat milk can also be used.
  • ½ tablespoon butter, melted We use unsalted butter, but salted butter can also be used.
  • ½ cup fresh blueberries, quartered
  • serve withMaple Syrup, Buttermilk Syrup, powdered sugar, or Whipped Cream & more fresh blueberries

Frozen Blueberries

We got the best results using fresh blueberries, but if frozen is all you have on hand, pour the batter onto the griddle and then drop the blueberries into the batter as the pancake cooks.

How to Make Blueberry Pancakes

  1. BATTER. Whisk flour, salt, baking powder, and sugar together in a large bowl.
    • In a separate bowl, beat egg and milk.
    • Stir the wet ingredients into the dry ingredients. Mix in melted butter and fold in quartered blueberries.
  2. COOK. Pour batter, ¼ cup at a time, onto a hot griddle (about 350°F), greased with cooking spray. Always make 1-2 test pancakes and adjust the temperature if needed. Drop additional blueberries (if desired) to the top of the batter.
    • Flip the pancake when little bubbles appear evenly over the top of the pancake batter and the edges turn golden. 
    • Heat on both sides until golden brown. Adjust the temperature as needed. Serve hot.

Keep Pancakes Warm

If making pancakes for a crowd, keep them warm in an oven set to 200°F or less. Place a baking sheet or two in the oven and as the pancakes finish cooking place them in a single layer on the pans. They can stay warm in the oven for about 30 minutes before drying out.

These quick and simple blueberry pancakes take just minutes to prepare and are filled with fresh blueberries, making them irresistible.

Notes

Frozen blueberries. Pour the batter onto the griddle and then drop the quartered blueberries into the batter as the pancake cooks. Flip and finish cooking.
What causes flat pancakes? Using old or not enough baking powder, adding too much liquid, pressing them with a spatula, and stacking cooked pancakes can produce flat pancakes.

How to store?

Store in an airtight container at room temperature for 1-2 days, in the refrigerator for 2-3 days, or in the freezer for 2-3 months. See How to Freeze Pancakes for tips.
Heat 1-2 pancakes in the microwave for 20 seconds at a time or toast them in the toaster. For large amounts of leftovers, heat them in the oven at 350°F for 5-8 minutes or until warm.
