Not only is it delicious, but the whole family loves it, especially around the holidays. You could even change things up and use leftover stuffing and turkey!

Not only is this dinner super tasty – it’s easy! It’s prepped in about 15 minutes with just a few simple ingredients.

Chicken and Stuffing Casserole Ingredients and Substitutions

Stuffing

  • 1½ cups low sodium chicken broth – or chicken stock or vegetable broth
  • ¼ cup butter – We used unsalted butter.
  • 1 (6-ounce) package Stove-Top stuffing mix

Filling

  • 1 (10.75-ounce) can cream of chicken soup – or try our homemade cream soup recipe
  • 1 cup sour cream – or plain Greek yogurt
  • 1 (10.5-ounce) can cream of mushroom soup – or Cream of Celery soup
  • 1 whole cooked rotisserie chicken, shredded (about 3 cups)  Instead of using a shredded rotisserie chicken, use leftover Thanksgiving turkey, ham cubes, or even browned ground beef. 
  • 1 (12-ounce) bag frozen mixed vegetables, thawed or 3 ounces each of frozen carrots, green beans, corn, and peas.

How to Make Chicken and Stuffing Casserole

  1. PREP. Preheat the oven to 375°F. Spray a 9×13 casserole dish with cooking spray.
  2. STUFFING. Add the chicken broth and butter to a medium saucepan, and bring the mixture to a boil. Stir in the stuffing mix, remove from heat, and cover. Let stand for five minutes, then fluff with a fork.
  3. MIX. In a large bowl, mix the cream of chicken soup, sour cream, and cream of mushroom soup. Add the rotisserie chicken and mixed vegetables, and stir to combine.
  4. BAKE. Pour the creamy chicken mixture into the prepared baking dish, spreading evenly. Top with the stuffing in an even layer.
    • Bake for 1 hour (uncovered), until the stuffing is lightly browned and the filling is bubbling. Salt and black pepper to taste.
  • Make your own medley using any combination of frozen veggies like carrots, green beans, corn, peas, or broccoli florets.
  • We always keep pre-cooked chicken in the freezer to use when a recipe needs shredded chicken.
  • Fluff the stuffing thoroughly with a fork so it is lighter and more evenly distributed on top
  • We often double the recipe and save one in the freezer to bake later for an easy weeknight dinner!

Chicken and Stuffing Casserole

Savory and filling chicken and stuffing casserole is perfect for feeding a family and only takes 15 minutes of prep time!!

Ingredients 

Stuffing

  • cups low sodium chicken broth

Make ahead of time?

Assemble the casserole the day before, cover it, and keep it in the fridge. Due to the extra chill from the fridge, you will need to add about 10 minutes to the baking time.

    You’ve really gotten my attention with this one. I make a lot of things from scratch. Stuffing is not one of them. The flavor in a packaged stuffing is so much better and I love it. It’s also what my mom used! This looks like another winner, and goes straight to my “must try” list.

    This chicken and stuffing mix is so delicious I make it once per week for my husband and I. Since its just the two of us we eat it as left overs for a couple of days. It doesn’t dry out and taste just as good as the day I made it. For those saying the stuffing was hard to spread add a little chicken broth to it before spreading on top of the chicken mixture.

    Top with stuffing? How? I made the stuffing exactly as directed by this recipe and it definitely would not spread on top. It was a big lump that I fluffed up with a fork and you cannot spread it over an unstable bottom made of soup. Total waste of time and money.

      I added a small amount of chicken broth to the stuffing to make it easier to spread. I just sprinkle small tablespoons of the stuffing all over the top till its completely covered, its not that hard.

      Perhaps “dollop” would be more accurate than “spread” but the idea is to cover the chicken mixture with prepared stuffing.

    This is the ultimate comfort food. I like to use 2 boxes of stuffing for the topping & cream of chicken soup (I like mushroom but for this recipe the chicken is just soooo good). I’d tried other versions of this recipe, was a little worried about 2 cans of soup and so much sour cream, but it was by far the best version I’ve tried. Also I usually add a little garlic/onion powder to the mixture.

      Did you see it said the serving is only 8 grams 😂 that’s totally plausible. However that’s like one bite with this recipe. I feel like this is the worst variation I’ve ever seen on this recipe. Using already cooked stuffing on top? Using rotisserie chicken plus cream of chicken? I only use sour cream mixed with the cream of mushroom with some frozen broccoli added in and it’s delicious and heavy enough.

      I’m not sure a doubled recipe would fit in a 9×13? If you could fit it, you would probably need to increase the baking time to make sure it is all warmed through.

    Delicious! The 2nd time I made it I used a pound of boneless chicken breast cut into chunks and replaced one of the cans of condensed soup with 1 cup of chicken bone broth. Also I replaced the water for the stuffing with bone broth. This brought out the chicken flavor even more and reduced the salt and calories.

    I just made this and it was delicious, my only problem was that it was super runny. I had to double the recipe but I still baked it in a 9×13 size pan. I’m now wondering if that’s why it was runny? My family LOVED it. Any suggestions would be greatly appreciated.

    This was a good start to a recipe. We have tried it with both the combination of cream of chicken and cream of mushroom as well as just cream of chicken. We prefer the later.

    We did find that it lacked seasoning. But it is still delicious. We’ll make it again.

      I’m sure the sodium levels are much higher. But then I know that going into a recipe made with can soup. I used slightly steamed broccoli in place of the mixed vegetables since that’s what I had on hand. I added a sprinkling of garlic and onion powder for extra flavor. It’s in the oven baking so I can’t wait for that hour to be up.

    I have a question. I am looking to prep this ahead of time to freeze and have it ready to bake at a later date. (within the next 2 months) For best results do I need to cook/bake everything first, especially the chicken, or should I combine all ingredients raw/frozen then cover, and bake only once when I’m ready to make the meal to eat?

    I appreciate the help on this! We are about to move but there will be some time when we have limited kitchen supplies and I would like to have some easy homemade freezer meals prepped and ready for my family! Thanks in advance!

      You will want to make the casserole the same as the recipe states… so you will use cooked chicken and thawed veggies. Then you can freeze the whole thing. The day you want to eat it, just put it in the fridge the night before to thaw. Then cook as directed in the recipe… maybe a few minutes more to make sure it is heated through.

    I am still new to this channel I can’t believe it I finally found a place where I know I could probably cook something really good everything looks so good and I’m going to the chicken casserole with the stove top stuffing and the donuts I can’t wait to do the other stuff seriously I finally found a place where I can understand the menu the ingredients and the visuals are to die for it thank you very much I’m so glad I stumbled upon you I’m so happy right now

    My mom made a similar recipe when I was a child. Love the addition of the sour cream. Use this recipe to use up leftover turkey from Thanksgiving. So easy and yummy!!
