This is meant to help simplify menu planning, shopping, and cooking so you can more easily enjoy meals with your family throughout the week!
Tip of the Week
It’s no secret that we are HUGE Disney fans over here! This week’s Corn Dog Recipe is a Disneyland copycat + a favorite, for sure! Some other favorite Disneyland copycat recipes are the Mint Julep, Monte Cristo Sandwich, and the famous Dole Whip.

Benefits of Meal Planning
There’s nothing worse than the dread every time a family members asks, “What’s for dinner??” And your answer is “I have no clue.” Having a meal plan for the week eliminates that completely, which is the number one benefit in my book!
Besides having a game plan in place, there are several other benefits of meal planning, including:
- Cost: When you have a plan set in place, and a specific list of groceries, you eliminate cost wasted on impulse items or produce that never gets used.
- Decrease Waste: No wasted money, and no wasted food! Having a set grocery list will help to avoid both of those issues.
- Variety: Our meal plans specifically include a lot of variety, with Mexican, Italian, Breakfast for Dinner, and so much more! You can expose your family’s palates to all kinds of meals.
- No Indecision: Did you know there’s such thing as “indecision fatigue”? The idea is that when you can’t make a decision on something (like what to make for dinner) it actually makes you mentally fatigued. When dinners are already planned out, though, you avoid indecision completely!
- Health: When you plan for/anticipate making well-rounded meals, you’re much more likely to actually make them rather than defaulting to convenient boxed meals, or unhealthy fast food!
As you can see, there are so many benefits to meal planning!

Monday
Creamy chicken enchiladas
Creamy chicken enchiladas made with chicken, sour cream, cream cheese and more stuffed into a soft flour tortilla. These are the creamiest chicken enchiladas you will ever find!
Even though they’re not included in the sides for this week, we like to serve these enchiladas with some Mexican Rice or Homemade Salsa (or both!). Neither requires very many ingredients, but make sure to add them to your grocery list.
tuesday
Pasta Primavera
A delicious pasta full of vegetables like zucchini, squash, bell peppers, and tomatoes. Even the kids didn’t mind all the veggies in this pasta primavera because it’s one of our go-to pasta dishes.
Serve these with the Olive Garden Breadsticks included in this week’s plan!
wednesday
Sausage breakfast casserole
Sausage Breakfast Casserole is made from eggs, sausage, milk, cheese, and seasonings all layered upon a crescent sheet! It’s the perfect way to start off your morning!
Something light and refreshing goes well with this casserole, including the fruit salad on the menu for this week. Or, try a fruity smoothie, like our Kale Smoothie, Blueberry Smoothie, or Peach Mango Smoothie!
Thursday
homemade corn dogs
A copycat version of the famous hand-dipped corn dogs that you can find at Disneyland! This recipe is beyond simple and makes a delicious corn dog making you never want to buy store bought again!
We love these on their own or with some homemade french fries!
weekend
bruschetta chicken
Baked Bruschetta Chicken is marinated in Italian dressing and topped with cheese. It is simple and delicious chicken recipe.
Both the fruit salad or breadsticks would go well with this chicken, but we also like to roast up some Baked Parmesan Asparagus. They go together perfectly!
Sides of the week
Our Top two choices
This Easy Fruit Salad makes the perfect side dish to any meal! It’s colorful, healthy, delicious, and filled with all your favorite fruits!
We like to use strawberries, blackberries, grapes, kiwis, and pineapple. However, you can always throw in some cubed watermelon as well.
Just like the originals, these copycat Olive Garden Breadsticks are light and airy on the inside, and flavored with butter and garlic salt on the outside. You can never eat just one!
These pair really well with the Pasta Primavera on Tuesday, but any leftovers can be easily reheated later on in the week to accompany the Bruschetta Chicken.
Dessert of the week
No Bake Cookies
Quick, simple and yummy NO BAKE Cookies – one of our favorite cookie recipes! Made with cocoa powder, peanut butter, vanilla, and quick oats – these quick cookies will become a go-to treat.
