We Love All Things Potato!!
Potatoes are amazing to have in your pantry. They can take on a variety of flavor profiles and are a great served with a variety of main dishes.
Let me tell you why we love these sides:
- Cooking methods. Potatoes can be roasted, grilled, boiled, baked, slow-cooked, fried (pan or air fryer), and more.
- Cutting methods. They can be mashed, cubed, shredded, sliced, or remain whole.
- Any time of day. They are served as a side, or the main dish, for breakfast, lunch, dinner, appetizers, and snacks.
- Versatile. They pair well with just about everything! Is there a better marriage than meat & potatoes – perhaps cheesy casseroles or savory soups?
- Vitamin-rich. They are packed full of vitamins such as vitamin C, potassium, magnesium, copper, calcium, phosphorus, zinc, and iron.
Potatoes can shine as a main dish or win best supporting character as a side dish. Get your sweet or Idaho spud on with these tasty recipes!
Types of Potatoes
Here are our most commonly used:
- Russet potatoes are probably the most common U.S. potato and are great for baking, roasting, and mashing. The skin is a little tougher and is often peeled away unless you want the extra texture.
- Red potatoes are more waxy and hold their shape well. Their skins are thin and are not usually peeled.
- White potatoes have thinner skin like red potatoes but the inside texture of a russet and are a good choice for mashing, roasting, frying, and boiling.
- Fingerling potatoes have a taste and waxy texture similar to red potatoes. Fingerlings come in a variety of colors, are not typically peeled, and are usually only halved or quartered. They are great for roasting, baking, and frying.
- Yellow/Yukon gold potatoes have a thin skin, natural buttery flavor, and are as common as Russets. They are great for frying, roasting, boiling, and mashing.
Potato Prepping Tips
- Soaking potatoes. Usually used with Russet potatoes to remove the starch when frying and roasting. Cut, then rinse or soak in water for 30 minutes, or overnight. Drain and pat dry.
- Do not soak potatoes when the starch will help create a creamier dish, like in scalloped potatoes and casseroles.
- To peel or not to peel. In general, starchy potatoes like Russets are peeled, unless you want a crisp skin. Waxier potatoes like red potatoes don’t need to be peeled.
- Side dish serving suggestions:
- mashed potatoes: ½ pound of raw potatoes per person
- baked potatoes: 1 medium-large potato per person
- potato dish: 6-8 ounces per person
- fries: ½-1 medium potato per person

Mashed potatoes are a must at our Thanksgiving table. I will be trying the funeral potatoes at another time though.
They all look delicious but I will be having traditional mashed potatoes and gravy for Thanksgiving this year. I may also have the sweet potato casserole, I think it would be a nice switch from our regular kind!
I make mashed potatoes throughout the year so I want to make something special for Thanksgiving. My pick of the four options is the Funeral Potatoes. Somehow, throughout my decades of cooking, I’ve never made this dish — but I plan to change that this Thanksgiving. Thank you for the opportunity of your giveaway! 🙂

Funeral Potatoes have been a tradition for several years
We’ll be making mashed potatoes for thanksgiving – always mashed, to go with the gravy. Every other time of the year we make funeral potatoes (cheesy taters) though!
