Kristyn’s Cake Tips

  • Cake Flour: Many recipes will specify using cake flour, but often it’s a matter of preference. Cake flour will give a lighter, more airy cake whereas all purpose flour will be a bit denser in comparison.
  • Greasing or lining a pan: Greasing a pan properly, or lining the pan with parchment paper is crucial for getting the cake to release. If you want an even more reliable result, use parchment paper to line the bottom, and grease the sides with spray or shortening/butter dusted with flour.
  • Unfrosted: it is best stored either in an air-tight container or tightly wrapped in plastic wrap and then placed in a large resealable plastic freezer bag on the kitchen counter for up to 3-4 days or for up to a week if stored in the refrigerator.
  • Frosted: store covered with a cake keeper or bowl over it, at room temperature, for 3-4 days. It can also be stored in the refrigerator for up to 7 days.
