A Thanksgiving Leftover Sandwich!

We love Thanksgiving leftovers almost as much as the main meal! A turkey cranberry sandwich is a favorite way to use them up for a second dinner (when we’re finally hungry again) or the next day.

In one fell swoop, we incorporate the Turkey, Cranberry Sauce, and Stuffing into a new, delicious Thanksgiving leftover sandwich! The kids have so much fun layering it all and even adding a few additions (like cheese and Gravy to the mix!)

The combination of flavors makes it taste like a HOLIDAY in your mouth.

Ingredients

  • 12 slices Eckrich Oven Roasted Turkey Breast or sliced leftover Roast Turkey
  • butter – salted or unsalted butter
  • 4 artisan buns – or Easy Yeast Rolls, Sourdough Bread, Wheat Bread, or croissants
  • 4 tablespoons olive oil mayonnaise
  • lettuce– or baby spinach
  • 1 cup stuffing – Try this Homemade Stuffing recipe.
  • 1 cup cranberry sauce store-bought or homemade Fresh Cranberry Sauce
  • optional toppings – cucumber slices, tomato slices, red onions, cream cheese spread, Swiss, Pepper jack, American, Mozzarella, or Provolone cheese.

How to Make a Turkey Cranberry Sandwich

  1. Toast 4 buns by buttering them and browning them in a skillet for a few minutes.
  2. For each sandwich, add 1 tablespoon mayo, 4 slices of Eckrich deli turkey meat, ¼ cup cranberry sauce, lettuce, and ¼ cup stuffing. Layer as desired and enjoy.

    It’s a Thanksgiving meal all in one sandwich!! Love it!! I’m not usually one for those flavors to be combined, but it seems to work in this sandwich!
