Cookie Dough Ice Cream Cookie Sandwiches

I’m back!!

And it feels good.

It’s been so nice to have taken the month off of blogging to spend more time with my family, work on house projects and do some creating. I’m happy to report that I have several tutorials, printables and recipes done and photographed ready to come to you over the next few months. In fact, with my mom’s help I have 60 recipes in queue and I cannot wait to share them with you!!

I’ve also decided to do some re-organizing on the blog. I will keep you posted about it as they come up.

In the meantime, I want to wish everyone a Happy Ice Cream Sandwich Day!!

Yup, I made Chocolate Chip Cookie Dough Ice Cream Cookie Sandwiches {long title, huh?!} in honor of this holiday.

They turned out fab and the kids love it.

Best of all they are easy and super yummy!

Here is how you can make them too:

Cookie Dough Ice Cream Cookie Sandwiches
  • 1 cup sugar
  • 1 cup brown sugar
  • ½ cup butter
  • ½ cup oil
  • 2 eggs
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1 tsp. vanilla
  • 3 cups flour
  • chocolate chips
  • Cookie Dough Ice Cream
  1. Cream butter, oil and sugars. Add eggs and beat until fluffy.
  2. Add remaining ingredients and mix until well combined. Add chips.
  3. Bake at 350 for 7-8 minutes.
  4. Let cool. Add a scoop of ice cream between the cookies. ENJOY!

I used my Best Chocolate Chip Cookies Recipe for the cookies since I can never go wrong with it!

Added some ice cream and….

VOILA!! Super yummy goodness!! These were especially good since we’re practically melting here in AZ! LOL!

So yummy and perfect to celebrate Ice Cream Sandwich day!
