  • Cooking Safety: Always cook to the proper final temperature. Ground beef – 160°F (71.1°C), All other beef cuts – 145°F (62.8°C) with at least a 3-5 minute rest time before carving or eating
  • Doneness: For personal preference, you can cook to higher temperatures for different levels of doneness:
    • Medium-Rare: 130-135°F (54-57°C)
    • Medium: 135-145°F (57-63°C)
    • Medium-Well: 145-155°F (63-68°C)
    • Well-Done: 160°F (71.1°C) and above
  • Browning for extra flavor: Except for ground beef you can skip the browning of red meats if you want to. Browning can help give an extra layer of texture and flavor by sealing in some of the natural juices, but the dish can be made without it.
  • For more even cooking: For cuts of beef (not including ground beef) leaving the meat out on the counter for 15-30 minutes before you cook will allow the temperature to normalize through the entire cut, This way it cooks more evenly because it is not having to cook extra through the outer parts to heat a cold center.
