Why We Love It!
Soup is generally an easy recipe to throw together, and is especially yummy in the fall. And when you add the delicious Mexican flavors and spices, soup is even more yummy!
Here are just a few reasons why we love Mexican soups!
- Easy. And like most other soup recipes, the soup recipes below are very simple.
- Versatile. Just like other soups, many of the Mexican soup recipes can be adjusted to be cooked on the stovetop, crock pot, or instant pot.
- Filled with the best ingredients. So many great foods we love in these soups, the most common ones being tomatoes, beans, veggies, broth, cumin, + more.
- Freezer meal. Soups can also be made ahead of time, and frozen for later (see the individual posts for more recipe tips and tricks).
Thickening Soups
There are several methods used to thicken soup. One of the easiest is to simply mash up some of the ingredients already in the soup, such as beans or potatoes. You can also try:
- Cornstarch slurry: In a separate bowl, add 1 tablespoon of cold water and 1 tablespoon of cornstarch. Mix until smooth, then pour it into the soup. Stir and simmer.
- Flour roux: Scoop out ½ cup of the hot soup and place it into a bowl. Add 2-3 tablespoons of flour, stir until smooth. Pour it into the soup, and simmer.
- Creamy texture: A creamy soup can be made even creamier by adding more cream, cheese, pureed vegetables, a scoop of nut butter, or cream cheese.
TIPS FOR MEXICAN SOUP
These tips can be applied to any of our tasty soup recipes.
- Reduce spice level. Add dairy such as milk, sour cream, or yogurt. Sweeten it with honey or brown sugar. Add starch like rice or potatoes.
- Make it spicier. Add in cayenne pepper, black pepper, chili powder/flakes, or hot sauce.
- Protein. The protein in soup can be eliminated, added, or replaced. Common soup proteins include shredded or ground beef, chicken, turkey, pork, and beans (pinto beans, black beans, etc).
- Fresh herbs can add a bright layer of flavor to the soup. 1 teaspoon of dried herbs is equal to 1 tablespoon of fresh herbs. Lime juice can do this as well.
- Toppings. Try tortilla strips or crushed tortilla chips, shredded cheese, fresh cilantro, green onions, sour cream, lime wedge, or sliced avocado.
